RICH DELIGHTS
This recipe is delicious and crispy. Candied fruit, nuts, and sweetened condensed milk. Truly good for Christmas, etc.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
- In a medium bowl combine coconut, crushed coconut cookies, candied fruit, dates and pecans. Mix well.
- To the sweetened condensed milk add the coconut extract and the food coloring; stir well to mix. Pour into coconut mixture; stir well.
- Drop by heaping tablespoonfuls onto prepared baking sheet.
- Bake in preheated oven for 12 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to waxed paper to cool completely.

STRIPED DELIGHT
This is my favorite dessert. I got this recipe from my mother-in-law. It has just the right amount of sweetness. The crust gives this the perfect crunch. This is a guaranteed hit at a dinner/party or just at home. This recipe can be easily doubled or halved. Everyone will want seconds so be sure to make copies of this recipe or you may end up making it for all future dinners. Enjoy!

Steps:
- For Crust: combine graham cracker crumbs, sugar and butter.
- Press firmly into bottom of 13-by-9-inch pan.
- Chill 15 minutes.
- For Filling: Beat cream cheese, sugar and 2 tablespoons milk until smooth.
- Fold in 1 1/2 cups thawed whipped topping.
- Spread mixture over prepared crust.
- Prepare instant pudding and pie filling mixes as directed on package, using 3 1/2 cups milk.
- Pour over cream cheese layer.
- Chill several hours or overnight.
- Before serving, spread 1 1/2 cups thawed whipped topping over pudding.
- Note: A layer of chopped fruit that complements the pudding flavor can be placed on top of the crust before adding the cream cheese mixture.

- Heat oven to 375°F. In 2-quart saucepan, melt 1/4 cup butter over medium heat. Add brown sugar; cook 3 minutes, stirring constantly. Reduce heat to low. Add pecans, walnuts, cinnamon, salt, honey and maple syrup; mix well. Cook 3 minutes, stirring occasionally. Remove from heat; stir in maple flavor. Cool 15 minutes.
- Sprinkle 3 teaspoons of the flour over work surface. If using crescent rolls: Unroll dough onto floured surface; press perforations to seal. Sprinkle with remaining 2 teaspoons flour. Roll to form 18x12-inch rectangle. If using dough sheet: Unroll dough onto floured surface. Sprinkle with remaining 2 teaspoons flour. Roll to form 18x12-inch rectangle.
- Carefully spoon and spread pecan mixture evenly over 1 long side of dough in 4-inch-wide strip, spreading to within 1/2 inch of edges. Starting with topped side, carefully roll up dough. (There may be small breaks in dough.)
- Spoon 1 tablespoon of the melted butter diagonally on ungreased large cookie sheet. Place filled roll, seam side down, over butter on cookie sheet. Pinch ends to seal. Gently flatten dough until 3 inches wide. Brush top and sides with remaining tablespoon melted butter. Sprinkle with cinnamon-sugar.
