1 Lb Rigatoni Pasta
1 Lb Ground Beef
26 oz Marinara Sauce
Grated Parmesan Cheese

Steps:

  • Begin by cooking the pasta as instructed on the package.
  • While the pasta is cooking in a large skillet, cook and brown the meat. Once the meat has been browned, drain and return to the skillet. Next, pour in the marinara sauce and let this simmer for 5-10 minutes.
  • Once the pasta has fully cooked, drain and return to the stock pot. Mix the beef mixture into the pasta.
  • Pour this isn't a 9x13 casserole dish or into the serving pan you will be using for the meal. Spread it out evenly then top with the grated Parmesan.

4 tablespoons olive oil
1 cup diced onion
1 teaspoon salt, plus more to taste
2 cloves garlic, crushed (or more to taste)
1 pinch red pepper flakes
1 (28 ounce) can San Marzano (Italian) tomatoes, blended smooth
½ cup water (to rinse out can of tomatoes)
1 (8 ounce) package uncooked rigatoni pasta
½ cup fresh basil leaves, thinly sliced
4 tablespoons cold butter, cubed
1 cup grated Parmigiano-Reggiano cheese, plus more for serving

Steps:

  • Heat olive oil in saucepan over medium-high heat. Add onions, salt. Cook until no longer white and starting to turn translucent, about 5 minutes. Stir in garlic; cook about 1 minute. Add chili flakes and blended tomato sauce. Bring to a simmer; adjust heat to medium to medium-low. Simmer gently, stirring occasionally, for 45 to 60 minutes. Reduce heat to low.
  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes (5 minutes from doneness).
  • Add about 2/3 of the basil to the sauce. Stir in butter. When butter melts, add cheese in 3 increments.
  • Drain pasta; transfer to sauce. Stir until rigatoni are evenly coated with sauce. Serve sprinkled with the remaining basil and a dusting of grated cheese.

3/4 cup diced white onion
1 teaspoon salt
1 teaspoon minced garlic
1 pinch red pepper flakes
28 ounces Italian tomatoes ((blended until smooth))
8 ounces uncooked rigatoni pasta
1/2 cup fresh basil leaves ((snipped))
4 tablespoons salted butter ((cubed))
1 cup freshly grated Parmesan cheese ((plus additional for topping))

Steps:

  • Heat the oil in a saucepan over medium heat. Add onions and salt. Stir until the onions are translucent (about 5 minutes).
  • Add the garlic. Cook and stir for an additional 1 minute.
  • Add the red pepper flakes and blended Italian tomatoes.
  • Bring the mixture to a simmer, then turn the heat to medium-low. Simmer for 45 minutes, stirring often as the sauce cooks to prevent scorching.
  • While the sauce is cooking, boil the rigatoni according to package directions, but pull it off the heat once it starts to soften (after about 8 minutes). It will cook the rest of the way in the sauce.
  • Add about 1/3 cup of the freshly snipped basil to the tomato sauce. Then stir in the butter.
  • Add the cheese, 1/4 cup at at time, to the tomato sauce, stirring between each addition and giving it time to melt.
  • Drain the pasta and add it to the tomato sauce. Stir well to coat the rigatoni.
  • Serve with a sprinkling of fresh basil and parmesan cheese.

And because we really want to make it that easy, we're serving them with some guaranteed crowd-pleasers: al dente rigatoni, a thick and hearty tomato sauce, and a sprinkling of Parmesan cheese.

4 ounce Tuscan Kale
2 box Crushed Tomatoes
20 ounce Ground Beef

12 ounce Rigatoni Pasta
½ cup Parmesan Cheese

Steps:

  • Wash and dry all produce. Bring a large pot of salted water to a boil. Peel, halve, and finely chop onion. Thinly slice garlic. Pick basil leaves from stems; discard stems. Remove stems from kale and discard; stack, then roll up leaves and thinly slice crosswise into shreds. Chop shreds into fine pieces. TIP: Use a food processor to chop kale, if you like.
  • Heat a large drizzle of olive oil in a large, tall-sided panover mediumhigh heat. Add onion and cook, tossing occasionally, until softened, about 5 minutes. Add garlic and cook, tossing, until fragrant, about 2 minutes. Stir tomatoes into pan. Reduce heat to medium-low and simmer until slightly thickened, about 5 minutes.
  • In a medium bowl, mix together beef, meatball spice, panko, kale, salt, and pepper (we used ½ tsp kosher salt). Shape mixture into 1½-inch balls (you should have about 12).
  • Carefully lower meatballs into sauce in pan. Increase heat to medium, cover, and cook 5 minutes. Uncover, carefully turn meatballs over, and continue simmering until cooked through, 5-7 minutes.
  • Once water is boiling, add rigatoni to pot. Cook, stirring occasionally, until al dente, 10-12 minutes. Carefully scoop out and reserve ½ cup pasta cooking water, then drain.
  • If sauce seems thick, stir in a splash or two of pasta cooking water. Divide rigatoni between plates. Spoon meatballs and sauce on top. Sprinkle with Parmesan, scatter with basil leaves, and serve.

2 Tbs. extra-virgin olive oil
1 clove garlic, chopped
1 12-oz. jar roasted red peppers, drained and thinly sliced (about 1 cup)
2 tsp. chopped fresh thyme
1/4 tsp. crushed red pepper flakes
3/4 cup homemade or low-salt canned chicken broth
1 Tbs. sherry vinegar
2 Tbs. heavy cream
1 cup freshly grated Parmigiano-Reggiano
Freshly ground black pepper
3/4 lb. dried rigatoni or penne rigate

Steps:

  • Bring a large pot of well-salted water to a boil.
  • Heat the oil and garlic in a 10-inch straight-sided sauté pan over medium heat until the garlic sizzles steadily for about 1 minute and just starts to brown around the edges. Add the roasted red peppers, thyme, and red pepper flakes and cook, stirring, for a couple of minutes to heat through. Add the chicken broth and sherry vinegar. Raise the heat to medium high and bring to a boil. Remove from the heat, let cool for a couple of minutes, and then transfer to a blender or food processor and purée.
  • Return the puréed pepper mixture to the sauté pan. Stir in the cream and 3/4 cup of the Parmigiano and bring to a boil. Remove from the heat and season with salt and pepper to taste.
  • Meanwhile, cook the rigatoni in the boiling salted water, stirring occasionally, until it's just tender to the tooth (see the package for cooking time). Drain and add the pasta to the sauté pan. Cook over medium heat for 1 to 2 minutes, tossing and stirring, to blend the flavors and slightly thicken the sauce. Season with salt and pepper to taste.
  • Serve immediately, sprinkled with the remaining cheese and a few grinds of black pepper.

6 oil-packed anchovy fillets
4 garlic cloves, smashed
¾ cup extra-virgin olive oil
½ cup raw walnuts
3 Tbsp. double concentrated tomato paste
2 red Fresno chiles, halved lengthwise, seeds removed

3 Tbsp. fresh lemon juice
½ tsp. kosher salt, plus more
1 lb. rigatoni
2 Tbsp. unsalted butter, cut into pieces

Steps:

  • Cook anchovies, garlic, oil, and walnuts in a small saucepan over medium heat, stirring often, until nuts are deep golden and garlic is just turning golden, about 5 minutes. Add tomato paste and cook, stirring often, until it turns a shade darker, about 2 minutes. Let cool 5 minutes.
  • Scrape walnut mixture, including the oil, into a food processor and add chiles, Parmesan, lemon juice, and ½ tsp. salt; pulse until a thick paste forms. Scrape pesto into a large bowl.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta, reserving 1½ cups pasta cooking liquid.
  • Add butter, then pasta and ½ cup pasta cooking liquid to pesto. Using tongs, toss vigorously, adding more pasta cooking liquid as needed, until pasta is glossy and well coated with sauce. Taste and season with more salt if needed.
  • Do Ahead: Pesto can be made 5 days ahead. Cover and chill.

Freshly ground black pepper
1 cup green olives, smashed, pits removed
2 Tbsp. double-concentrated tomato paste

Steps:

  • Heat oil in a medium Dutch oven or other heavy pot over medium-high. Cook onion and garlic, stirring occasionally, until onion is slightly softened, about 4 minutes.
