RISOTTO PATTIES OVER GREENS



Risotto Patties over Greens image

Traditional risotto -- Arborio rice slowly thickened with repeated additions of flavored stock -- is formed into patties, quickly browned, and served over a bed of dressed baby greens.

3 1/2 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
1 small onion, finely chopped
1 cup Arborio rice
4 scallions, thinly sliced crosswise
1 cup fresh or frozen peas
1/2 cup coarsely chopped fresh dill, plus 6 sprigs for garnish
1/2 teaspoon freshly ground black pepper
1 tablespoon white-wine vinegar
1 tablespoon freshly squeezed lemon juice
1 tablespoon olive oil
1/4 teaspoon salt
1 tablespoon finely chopped mint leaves
6 ounces mixed baby greens
Olive-oil cooking spray

Steps:

  • Place stock in a medium saucepan, and bring to a boil. Reduce heat; let simmer. Line a baking sheet with parchment; set aside.
  • Coat a large straight-sided saute pan with cooking spray; place over medium heat. Add onion, and saute until translucent, about 5 minutes. Add rice, and saute stirring, until the edges of the grains are translucent, about 1 minute. Add scallions, and cook, stirring, until bright green, about 1 minute.
  • Raise heat to medium high; add 1/2 cup simmering stock to rice, and cook, stirring constantly, until nearly all of the liquid has been absorbed. Continue adding liquid, 1/2 cup at a time, and cook, stirring constantly, allowing each addition to be absorbed before adding the next. With the last addition of stock, add peas; continue cooking until rice is creamy but grains are still firm in the centers, about 4 minutes. Remove from heat. Stir in dill and 1/4 teaspoon pepper.
  • Transfer risotto to a bowl, and let cool 30 minutes, stirring occasionally. Form into six patties, each 3 inches in diameter. Place patties on a prepared baking sheet, and cover with plastic wrap. Refrigerate 30 minutes.
  • Heat a nonstick skillet over medium-high heat. Add patties, and cook until browned, about 5 minutes. Turn patties, and cook until brown and hot, about 5 minutes more.
  • Combine vinegar, lemon juice, olive oil, salt, remaining 1/4 teaspoon pepper, and mint in a medium bowl; whisk to combine. Add greens; toss. Divide greens among six plates; top with rice patties. Garnish with dill; serve.

3 cups leftover risotto from Roasted Garlic and Mushroom Risotto recipe
2 large eggs
1/2 cup frozen corn, thawed
1/2 cup fresh bread crumbs
1/4 cup grated Parmesan
Kosher salt and freshly ground black pepper
1/4 cup canola oil

Steps:

  • In a large bowl add the leftover risotto, eggs, corn, bread crumbs, and Parmesan and season with salt and pepper, to taste. Mix to combine well. Form into 12 balls about the size of a walnut, then flatten into patties and arrange on a baking sheet.
  • Heat the oil in a large nonstick skillet over medium heat. Add the patties and cook until they are golden brown, about 3 to 4 minutes per side. Remove the patties from the oil to a baking sheet lined with a brown bag or paper towels to drain the excess oil. Transfer to a serving tray and serve hot.

CHIVE RISOTTO CAKES

1 cup uncooked Arborio rice
1/2 cup Greek yogurt
2 extra-large eggs
3 tablespoons minced fresh chives
1 1/2 cups grated Italian fontina cheese (5 ounces)
1/2 teaspoon freshly ground black pepper
3/4 cup panko (Japanese dried bread flakes)
Good olive oil

Steps:

  • Bring a large (4-quart) pot of water to a boil over medium-low heat and add 1/2 tablespoon salt and the Arborio rice. Cook, stirring occasionally, for 20 minutes. The grains of rice will be quite soft. Drain the rice in a sieve and run under cold water until cool. Drain well.
  • Meanwhile, whisk together the yogurt, eggs, chives, fontina, 1 1/4 teaspoons of salt, and the pepper in a medium bowl. Add the cooled rice and mix well. Cover with plastic wrap and refrigerate for 2 hours or overnight, until firm.
  • When ready to cook, preheat the oven to 250 degrees F.
  • Spread the panko in a shallow dish. Heat 3 tablespoons of olive oil in a large skillet over medium-low heat. Form balls of the rice mixture using a standard (2 1/4-inch) ice-cream scoop or a large spoon. Pat the balls into patties 3 inches in diameter and 3/4-inch thick. Place 4 to 6 patties in the panko, turning once to coat. Place the patties in the hot oil and cook, turning once, for about 3 minutes on each side until the risotto cakes are crisp and nicely browned. Place on a sheet pan lined with parchment paper and keep warm in the oven for up to 30 minutes. Continue cooking in batches, adding oil as necessary, until all the cakes are fried. Arrange on a serving platter and serve hot.

EGGS OVER (EASY) LOBSTER RISOTTO PATTIES

Leftover lobster risotto, chilled
Butter
4 eggs
Salt and freshly ground black pepper

Steps:

  • Form 4 balls, about ½-cup each, of chilled leftover risotto into any shape you choose: triangles, squares, circles.
  • In a large heavy skillet over medium-high heat melt enough butter to coat the pan. Sear the risotto cakes until golden brown. Flip and sear the second side. (If needed, use a splatter guard.) Transfer patties to a paper towel-lined plate.
  • Wipe the skillet clean and place over medium-low heat. Crack the eggs gently into a bowl. Add enough butter to coat the skillet. Add one egg at a time to the pan and cook until the whites are opaque. Season with salt and pepper and serve over the risotto patties.

LEFTOVER RISOTTO CAKES



Leftover Risotto Cakes image

I was going through my America's Test Kitch Family cookbook and came across this. I realized I had leftover rissoto in my fridge and thought I would try it. It turned out great and I would have never thought to use my leftovers this way! Instead of using oil I prefer to use a butter or olive oil flavored pan spray, which I think is healthier than oil. If you use that, spray the pan with several sprays to ensure enough coating for great browning. Also, I had quite a bit rice leftover, about 2/ 1/4 Cups of rice, so I had to adjust the ingredients some. This recipe should make 2. When I made it I came out with 6 medium sized rice cakes, so you may want to double the recipe if needed. You could also bake these rather than frying. Enjoy!!

1 cup leftover rissoto cooked rice, chilled
1/2 cup shredded parmesan cheese or 1/2 cup mozzarella cheese
1 large egg
1/2 cup Italian style breadcrumbs
salt and pepper
vegetable oil

Steps:

  • Heat a large skillet pan with the oil or pan spray like I use.
  • In a bowl, stir the egg well. In another bowl, combine the breadcrumbs and the salt and pepper.
  • Form round balls from the rice. make a pit in the center of the rice cake and fill it with the shredded cheese. Smooth out the top to keep the cheese inside.
  • Dip the rice cake into the egg first and then into the breadcrumbs. Lay them into the heated pan and sautee for about 3 minutes and flip. Cook on the other side until golden brown.
  • Garnish with lemon wedges.

PAN-FRIED RISOTTO CAKES

2 tablespoons butter
2 tablespoons olive oil, plus more for frying
1 medium onion, diced fine
2 cups butternut squash, about 2/3 pound, cut in 1/2-inch dice
Salt and pepper
1 cup Carnaroli or Arborio rice
1 tablespoon chopped fresh sage
1/4 cup dry white wine
4 to 5 cups vegetable broth
1 ounce grated Parmesan, plus more for garnish
4 ounces grated Fontina
Zest and juice of 1 lemon
2 tablespoons finely sliced chives, plus more for garnish
1 cup all-purpose flour
2 large eggs, lightly beaten

Steps:

  • Put butter and 2 tablespoons olive oil in a wide heavy-bottom saucepan or deep skillet over medium-high heat. Add onion and cook until softened and lightly colored, about 5 minutes. Add squash and season generously with salt and pepper. Cook, stirring occasionally, until squash is cooked but not soft, about 5 minutes. Add rice and sage and stir to combine, then add wine and cook for 1 minute more.
  • Add 2 cups vegetable broth and bring to a brisk simmer. Cook until liquid is nearly evaporated, about 5 minutes. Continue adding broth 1 cup at a time and cook in the same fashion until rice is just done and all liquid is absorbed (it should take 4 to 5 cups broth), about 10 minutes. Turn off heat and stir in Parmesan, Fontina and lemon zest and juice. Taste and adjust seasoning (rice should be well seasoned). Stir in chives, then spread mixture on a baking sheet or platter to cool. Cool for at least 2 hours (or refrigerate overnight, covered).
  • With a spoon, divide mixture into 12 pieces. Shape each piece into an oval patty. Roll patties lightly in flour to coat. Pour olive oil to a depth of 1/2 inch into a cast-iron skillet and place over medium heat. Dip floured rice patties briefly into beaten egg, then fry gently on both sides until browned. Drain on paper towels. Serve hot, sprinkled with more Parmesan and chives if desired.

4 1/2 cups chicken stock
1/4 cup unsalted butter
1 medium onion, chopped
1 1/2 cups arborio rice
1 cup white wine
1/2 cup parmesan cheese
1/2 cup scallion, chopped
2 tablespoons olive oil
1/2 cup all-purpose flour

Steps:

  • In a large saucepan, bring the chicken stock to a simmer. In a medium saucepan, melt butter over medium heat. Add the onion and saute for 5 minutes or until soft. Add the rice and stir until coated.
  • Increase the heat to medium-high. Add the wine. Cook, stirring constantly for 4 minutes or until wine is absorbed. Add about 1 cup chicken stock (enough to just cover the rice) and cook, stirring constantly, until the stock is absorbed. Continue adding stock, 1 cup at a time, stirring until it is absorbed before adding more. The rice is done when it is just cooked through and lightly bound with creamy liquid, about 15 minutes.
  • Remove risotto from heat and stir in Parmesan cheese and scallion. Spread risotto evenly in a greased sheet pan and refrigerate until very firm, at least 4 hours or overnight.
  • In a large saute pan, heat the olive oil over medium heat. Form risotto cakes by shaping handfuls of risotto into 3 x 1/2 inch disks. Dredge the cakes in flour to coat. Saute cakes in hot oil until golden.

4 -5 cups vegetable stock
1 onion, finely chopped
2 cloves garlic, finely chopped
275 g button mushrooms, sliced
100 g shiitake mushrooms, sliced
90 g butter
1/2 cup arborio rice or 1/2 cup short-grain rice
3 tablespoons parmesan cheese, grated
salt and pepper, ground
to taste flour
to taste olive oil (for frying)
500 g tomatoes, peeled and seeded
1 clove garlic, chopped finely
1 tablespoon fresh basil leaf, roughly torn
2 tablespoons virgin olive oil
to taste salt
to taste fresh pepper

Steps:

  • Bring stock to the boil in a saucepan and leave to simmer gently.
  • In another pan, cook chopped onion and garlic with the mushrooms in 60g butter until softened.
  • Add the rice, stirring with a wooden spoon for a few minutes, than add about 1/2 cup of simmering stock.
  • Season.
  • Cook the mixture, stirring, until the rice has absorbed the stock, then stir in another 1/2 cup of stock.
  • Continue this way until the rice is tender and all the stock is used, about 20 minutes.
  • Remove the pan from the heat and stir in the remaining butter and Parmesan.
  • Cool the mixture, then shape into 4 - 6 round shape patties.
  • They will become quite firm.
  • Dust with flour and fry in olive oil in a large frying pan on both sides for about 5 minutes each side, until golden.
  • Serve with fresh tomato sauce and whatever vegetables takes your fancy.
  • Chop the tomatoes into small chunks.
  • Place in a large bowl, add garlic, basil and oil.
  • Just before using, put into a saucepan and cook for about 5 minutes.
