A comforting one-dish chicken casserole recipe with shredded chicken in a rich and creamy sauce topped with buttery Ritz crackers.

1 (10.5 oz) can cream of chicken soup with herbs
1 cup sour cream
1 Tbsp Italian seasoning
3 cups cooked chicken, shredded or diced
2 sleeves Ritz crackers, crushed
1 stick butter, melted

Steps:

  • Preheat oven to 350 F and coat a 2 quart (or 8 in. baking dish) with non-stick cooking spray.
  • In a large bowl, stir to combine cream of chicken soup, sour cream, and Italian seasoning. Stir in chicken. Transfer to the casserole dish.
  • Sprinkle with crushed Ritz crackers and drizzle with melted butter.
  • Bake uncovered for 25-30 mins, until crackers are golden and center is hot and bubbly.

2 teaspoons melted butter
1/3 cup crushed Ritz cracker
1/2 cup cheddar cheese
1 tablespoon fresh parsley
2 tablespoons butter
1/2 teaspoon caraway seed
1/2 tablespoon salt
1 tablespoon chopped onion
2 large ripe tomatoes

Steps:

  • cut each tomato into 10 wedges.
  • in a small bowl mix together 2 tablespoons melted butter, crackers cheese and parsely and set aside.
  • in a two quart casserole add rest if butter, caraay seed.
  • salt pepper and onion.
  • add cheese mixture and bake on 300 for thrity minutes.

Any sort of cracker will work here if you adjust the sugar and salt slightly (like for the cereal crunch recipes), but Ritz crackers are the epitome of rich and amazing in my cracker repertoire.

Yield Makes about 275 g (2 cups)

Number Of Ingredients 5

110 g Ritz crackers (1 sleeve)
100 g sugar (1/2 cup)
20 g milk powder (1/4 cup)
2 g kosher salt (1/2 teaspoon)
100 g butter, melted (7 tablespoons)

Steps:

  • Follow the procedure for the cornflake crunch, substituting the crackers for the cornflakes.
  • Ritz crunch is used in the Celery Root Ganache dessert (page 214).
