Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat olive oil in a large skillet over medium heat until the oil shimmers; meanwhile, beat the egg whites until frothy in a bowl, and place the bread crumbs in a separate flat bowl. Dip the chicken breasts into the egg white, dredge in crumbs, and brown on both sides in the hot oil until golden, 3 to 5 minutes per side. Place the chicken breasts into the baking dish.
- In a small bowl, mix about 3 tablespoons of evaporated milk with the cornstarch until smooth. Pour the rest of the evaporated milk into a saucepan, and mix in Parmesan cheese, parsley, and black pepper. Over medium-low heat, bring the milk mixture just to a bare simmer, and whisk in the cornstarch mixture; let cook until thickened, about 1 minute. Pour the sauce over the chicken breasts; sprinkle top with mozzarella cheese.
- Bake in the preheated oven until the sauce is bubbly and the cheese has melted, about 25 minutes. An instant-read thermometer inserted into the center of a chicken breast should read 160 degrees F (70 degrees C).

BLING POPS

Steps:
- Spray six 1.5-ounce ring pop molds lightly with cooking spray.
- Add the isomalt sugar to a small saucepan and melt over medium-high heat, stirring with a silicone spatula occasionally, until 350 degrees F, about 4 minutes. Pour into a heatproof glass measuring cup. Stir in the flavoring oil and stir gently to cool. Add the sprinkles when it lowers to 280 degrees F, after about 2 minutes.
- Fill each ring pop mold just short of the top with the mixture and cover with the ring pop stick and cap. If your lid doesn't snap on, it's ok; the stick will still set. Insert the handles carefully so you don't burn yourself. Let sit until hardened all the way through, about 45 minutes.
- To unmold, bring a small saucepan of water to a simmer. Dip the mold part of each ring pop in the water for a few seconds to loosen and break the seal, then remove the mold.
RICE KRISPY POPS
Great for kids but make extras for the adults because they will love them too. This was based on "Soft and Chewy Rice Krispies Treats" by wyojess with my thanks.

Steps:
- I used the following: Wilton round cookie-pop tray, cookie-pop sticks, assorted color icing and metallic ties all of which can be found in the cake decorating section of a party store or craft store. Saran type wrap was used to wrap the pops.
- Spray cookie tray lightly with Pam.
- Melt margarine in heavy pan over medium heat.
- Add marshmallows and stir continuously until smooth.
- Add vanilla.
- Add nonpareils and stir.
- Turn heat off but leaving pot on burner add the cereal. and stir until evenly mixed.
- Put some in mold, add stick and put some more on top and with damp hands press lightly.
- Have fun decorating, let dry and over pop with plastic wrap and fasten with ties to secure the wrap. I put them in a basket filled with Styrofoam that I decorated.
MINT CHOCOLATE SNOWMAN RITZ POPS RECIPE BY TASTY
Here's what you need: ritz cracker, white chocolate chip, mint extract, shredded coconut, coconut oil, orange gel frosting, black gel frosting, lollipop stick

- Microwave the chocolate chips for 30 seconds. Stir and microwave for an additional 30 seconds. Stir again. Chips should be fully melted.
- Top one cracker with melted chocolate and shredded coconut. Place lollipop stick on cracker and top with more white chocolate and a second cracker, making a sandwich. Repeat as many times as desired and freeze the pops until the the chocolate is hard.
- Melt more chocolate and add some mint extract (about ½ tsp per pound of chocolate) and coconut oil (about 1 Tbsp. per pound of chocolate).
- Dip pops in chocolate and swirl until completely coated.
- Carefully cut holes in the Ritz box to hold your lollipops. Freeze until hard.
- Use the orange and black frosting to decorate your lollipops.
- Enjoy!

- Cook noodles according to package directions; drain. Meanwhile, in a large bowl, combine the soup, milk, sour cream, poultry seasoning, salt and pepper until blended. Stir in the noodles and chicken. , Transfer to a greased 1-1/2-qt. baking dish. Combine cracker crumbs and butter; sprinkle over the top. Bake, uncovered, at 350° for 30-35 minutes or until bubbly and golden brown.

RITZY'S MUSHROOM CHICKEN NOODLE SOUP
A simple but delicious soup for a light lunch or anytime! I came up with this recipe while trying to use what I had on hand to make a good soup for sick hubby. It was a winner at our house.

Steps:
- Heat butter in medium sized stock pot over medium-low heat. Saute onions in butter until tender, about 20 mins, stirring occasionally.
- In a medium sized mixing bowl, toss chicken chunks with 1 tsp lite salt, white pepper, poultry seasoning.
- Put olive oil in with onions, and add seasoned chicken to tender onions. Cook chicken about 5 minutes over medium heat.
- Add mushrooms and parsley to chicken/onions and saute for about 5-7 mins, til mushrooms are becoming tender.
- Add chicken stock, worcestershire sauce, and stir. Bring to a boil.
- Add water. You may add as much or little liquid as you desire.
- Bring to a nice boil, then reduce heat and simmer for ten minutes.
- Taste broth -- season to suit your taste with lite salt as needed.
- Add egg noodles.
- Continue simmering over low heat for 15 or 20 minutes
- Allow to cool for 10 minutes, and serve with toppings of your choice or with no toppings.
- I topped our soup in the individual bowls with about 5 garlic-cheese croutons with about one T of shredded mozzarella on top of that. Yum!
