TRADITIONAL RUSSIAN PIROZHKI
I'm Russian, and this recipe has been handed down from my grandma. They taste delicious, and are a great comfort food (or any other food).

Steps:
- Place 1/2 cup milk in a cup or small bowl. Stir in sugar and sprinkle yeast over the top. Set aside until foamy, about 10 minutes. Pour the remaining milk into a large bowl.
- Add the melted butter, egg, salt and 1 cup of flour to the large bowl with the milk. Stir in the yeast mixture. Mix in flour 1 cup at a time until dough pulls away from the sides of the bowl and doesn't stick to your hands. Cover the bowl loosely and set in a warm place to rise for about 1 hour. Dough should almost triple in size.
- While you wait for the dough to rise, melt the remaining butter in a large skillet over medium heat. Add cabbage and cook, stirring frequently, until cabbage has wilted. Mix in the eggs and season with salt and pepper. Continue to cook, stirring occasionally until cabbage is tender. Set this aside for the filling.
- Place the risen dough onto a floured surface and gently form into a long snake about 2 inches wide. Cut into 1 inch pieces and roll each piece into a ball. Flatten the balls by hand until they are 4 to 5 inches across. Place a spoonful of the cabbage filling in the center and fold in half to enclose. Pinch the edges together to seal in the filling.
- Preheat the oven to 400 degrees F (200 degrees C). Line one or two baking sheets with aluminum foil. Place the pirozhki onto the baking sheet, leaving room between them for them to grow.
- Bake for 20 minutes in the preheated oven, or until golden brown.

Steps:
- Heat a large skillet over medium-high heat; cook and stir ground beef and onion until beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in cabbage and season with 1 teaspoon salt. Continue to cook and stir until cabbage is tender, about 20 more minutes. Set mixture aside to cool.
- Mix warm water and butter in a large bowl. Combine dry milk powder, sugar, 1 1/2 teaspoons salt, and yeast in another bowl; stir into butter mixture. Add egg and gradually stir in flour, 1/2 cup at a time, until dough is smooth.
- Roll dough out to 1/4-inch thick on a lightly floured surface; cut into 4-inch squares. Scoop beef mixture into each dough square. Bring corners of a dough square together at the top and pinch corners together to seal. Place on a baking sheet, seam side down. Repeat with remaining beef mixture and dough. Cover rolls with a damp cloth and allow to rise for 20 minutes.
- Preheat oven to 375 degrees F (190 degrees C).
- Bake in preheated oven until golden brown, about 20 minutes.

RIZ GRAS - FAT RICE (BURKINA FASO)
This recipe was featured on week 42 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Burkina Faso is my 42nd stop. Unless otherwise noted, my Travel by Stove recipes are taken from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients. This rice dish is called "fat rice" because of the amount of oil used. You can probably get away with cutting back on it.

- Put the habaneros, garlic, tomatoes and onion into a food processor and pulse until you get a nice paste. Then heat the oil over medium heat and add the paste to the pan. Cook for 8 minutes, then remove from the fire and set aside.
- Use a little bit of water (about 1/2 to 1 cup) to rinse out your food processor, then put the water in a separate pot along with the meat. Bring the meat and water to a boil, then reduce heat. Simmer for 15 minutes.
- Add the meat to the pan containing the paste. Add the tomato paste, water and Maggi (or stock) cube. Stir.
- Wash the rice until the water runs clear. Then add it to the pot and bring to a boil. Reduce heat, cover and let simmer for 15 minutes. Check it, then cook for another 10 minutes or until the water has been absorbed.
- Garnish with thin slices of onion.

SAVORY BABKA WITH RICOTTA AND HERBS
This cheese-filled bread has the same soft, rich dough of a traditional babka, but instead of being filled with cinnamon or chocolate, it has an herb-speckled, garlic-scented ricotta swirled throughout. Some optional chopped ham or olives give the bread an even saltier tang, but you can leave it out for something milder. Leftover babka makes excellent toast or - if you want to take it to another level of gooeyness - grilled cheese sandwiches.

- In a small saucepan on the stovetop, or in a bowl in the microwave, warm the milk until lukewarm, but not hot (about 110 degrees). Add yeast and pinch of sugar, and let sit for 5 to 10 minutes until slightly foamy.
- In the bowl of an electric mixer fitted with the dough hook, a food processor, or using a large bowl and a wooden spoon, mix the flour and salt. Beat or process in the yeast mixture and eggs until the dough comes together in a soft mass, about 2 minutes. It's OK if a little flour remains on the bottom of the bowl.
- Add half the butter and beat until the dough is smooth and elastic, about 3 minutes, scraping down the sides of the bowl with a spatula as needed. Beat in the rest of the butter and continue to beat until dough is stretchy, another 5 to 7 minutes. At this point, all the flour should be worked into the dough. If not, add a teaspoon or two of water, and beat for another minute or so.
- Butter a clean bowl. Form the dough into a ball and roll it around in the bowl so all sides are buttered. Cover the bowl with a plate or dish towel, and let the dough rise in a warm, draft-free place, like the inside of a turned-off oven with the oven light on, until it puffs and rises, anywhere from 1 1/2 to 3 hours. It may not double in bulk, but it should rise.
- Press the dough down with your hands to expel the air, cover the bowl again and refrigerate overnight. (In a pinch, you could chill the dough for 4 hours, but it won't develop as much flavor.)
- Prepare the filling: In a medium bowl, mix all the ingredients until smooth. Taste and add more salt and black pepper, if needed. (If you used ham or olives, you probably won't need more salt.) Filling can be prepared up to 2 hours ahead and refrigerated.
- Butter a 9-inch loaf pan, then line with parchment paper, leaving 2 inches of overhang for pulling the babka out later.
- Put the dough on a floured surface and roll it into a 9-by-17-inch rectangle. Spread the filling evenly onto the dough, going all the way to the edge. Starting with a long side, roll into a tightly coiled log. Bring one end of the log to meet the other, then twist the dough, pinching together the ends to seal.
- Place dough into the prepared pan. Cover loosely with a clean kitchen towel and let rise in a warm place for 1 to 1 1/2 hours, until puffy. (It won't quite double.)
- Heat oven to 375 degrees. Brush the top of the babka with more softened butter and sprinkle with Parmesan. Bake until the top is deeply golden brown, 35 to 45 minutes. The babka should sound hollow if you tap it on the bottom once it's unmolded. An instant-read thermometer inserted in the center will read 185 degrees. Transfer to a wire rack. Babka is best served still a little warm.
FROZEN BREAKFAST BURRITOS RECIPE BY TASTY
Here's what you need: bacon, sausage, baby red potato, red bell pepper, yellow onion, salt, pepper, eggs, shredded cheese, green onion, flour tortilla, parchment paper

- In a large skillet over medium heat, cook bacon (in batches if necessary) until crispy. Remove the bacon to a paper towel lined plate - leave to cool.
- In the same skillet - using leftover bacon grease (drain some if necessary) add the potatoes and season with salt and pepper. Once lightly browned add in peppers and onion. Cook until potatoes have browned and the peppers and onions have softened. Remove from pan and place in bowl to cool.
- In the same saucepan, cook sausage until browned and cooked through. Remove to a paper towel lined bowl.
- Reduce heat to medium/low and pour beaten eggs into the skillet. Fold and stir eggs occasionally until cooked but still soft and moist. Remove from pan.
- While cooked ingredients are cooling slightly, gather flour tortillas, shredded cheese and sliced green onions (optional) and set them out on your table/workspace.
- To assemble the burritos, lay out a tortilla and start with a base of eggs followed by desired toppings and finish with cheese.
- To wrap, fold in both sides and then fold the bottom up and over all the ingredients. Roll up tightly.
- NOTE: If you find the tortillas are tearing, heat them up - a few at a time - for 20 seconds in the microwave before assembling.
- Wrap up in parchment paper. Place the parchment-wrapped burritos in a 1 gallon freezer bag and place in the freezer to store for up to one month.
- To Reheat: Remove the frozen burrito from the freezer. Unwrap from parchment paper and wrap the frozen burrito up in a damp paper towel. Place on a microwave safe plate and microwave for 3 minutes.
- Remove from microwave and rest for one minute before unwrapping. Remove the paper towel, serve with hot sauce, salsa, or sour cream!
