FAVORITE BEEF BURRITOS
Easy, tasty & filling weeknight meal!

Steps:
- In a 12" skillet set over medium-high heat add ground beef and yellow onion.
- Cook the meat until it's no longer pink and the onions are translucent. Drain any fat.
- Add in the taco seasoning and prepare according to the packet directions.
- When the meat is fully cooked stir in the cilantro and remove from the heat.
- Lay out the flour tortillas and spread a layer of refried beans into the middle of each tortilla.
- Top each tortilla with an equal amount of the meat mixture and shredded cheese.
- Roll up each tortilla burrito-style and enjoy warm.
- Optional: Heat a non-stick skillet over medium heat. Add burrito seam side down and cook 2-3 minutes or until slightly browned. Flip over and repeat with the other side.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the chili, salsa and green chilies. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Spoon about 1/2 cupful beef mixture off center on each tortilla. Top each with a slice of cheese; roll up. Serve with taco sauce and lettuce if desired.

ROADRUNNER BURRITO OR TACO FILLING

- * "Great for a weekend lunch and so much better than the frozen ones." 1. In a medium microwavable bowl, break up 1/2 pound lean ground beef. Lay a piece of waxed paper over the top. 2. Microwave at 100% power (700 watts) for 2 minutes. Stir and break up pieces of meat. Cover with waxed paper again. Microwave at 100% power 1/2 to 1 minute longer or until beef loses most of its pink color. Drain well. 3. Add to the cooked beef, 1 can (15 oz.) chili beans in chili sauce, 1 teaspoon dried oregano leaves and 1/2 teaspoon garlic salt.Stir until combined.Lay a piece of waxed paper over the top.4. Microwave at 100% power for 1 minute. Stir and cover with waxed paper again. Microwave at 100% power 1 to 1 1/2 minutes longer or until mixture is hot.5. Use as a filling for burritos or tacos,using warm tortillas. Serve with any of the following toppings:Shredded cheeseChopped tomatoesSmall chunks avocadoShredded lettuceTo Warm And Soften Tortillas: Take a clean terry cloth dish towel and run water over it until wet. Squeeze out as much water as you can. Place 4 corn or flour tortillas incenter of towel and cover with ends of towel. Microwave at 100% power for 1 minute or until warm and soft.

- 1. Place ground beef in a medium microwavable bowl, breaking meat into small pieces. Place a piece of waxed paper over the top.2. Microwave at 100% power (700 watts) for 2 minutes. Stir and break up pieces of meat. Cover with waxed paper again. Microwave at 100% power 1/2 to 1 minute longer or until beef loses most of its pink color. Pour off any liquid.3. To the cooked beef, add chili beans with sauce, oregano leaves, and garlic salt. Stir until combined. Place a piece of waxed paper over the top.4. Microwave at 100% power for 1 minute. Stir and cover with waxed paper again. Microwave at 100% power 1 to 1 1/2 minutes longer or until mixture is hot. Remove from microwave oven with hot pads.5. Warm tortillas (see below). Spoon filling down center of each tortilla and roll up. If you wish, add additional ingredients, such as shredded cheese, chopped tomatoes, small chunks of avocado, and shredded lettuce. Serve immediately.To Warm and Soften Flour Tortillas: Dampen a clean terry cloth dish towel until wet. Squeeze out as much water as you can. Place 4 flour tortillas in center of towel and cover with ends of towel. Microwave at 100% power (700 watts) for 1 minute or until warm and soft.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir beef, onion, and green chiles in the hot skillet until beef is browned and crumbly, 5 to 7 minutes; drain and discard grease. Add water, chili powder, salt, red pepper flakes, cumin, and garlic powder; bring to a boil. Reduce heat to medium-low and simmer. Stir refried beans into beef mixture and cook until heated through, about 5 minutes.
- Mix cream of mushroom soup and sour cream together in a bowl.
- Fill each tortilla with beef mixture and roll tortilla around filling. Arrange burritos in the prepared baking dish; top with sour cream mixture.
- Bake in the preheated oven for 20 minutes. Cover burritos with Cheddar-Monterey Jack cheese blend. Bake until cheese is melted, about 10 minutes more.
