- In a Dutch oven, brown roast on all sides in oil; drain. Add the potatoes, carrots and onion. In a large bowl, combine the flour, water, tomato sauce, bouillon, salt and pepper until smooth. Pour over the roast and vegetables. , Cover and bake at 325° for 2-1/2 to 3 hours or until the meat is tender.

ROAST BEEF AND SWISS SANDWICH
No need for fresh buns or bread with this beefy sandwich. A Bisquick® batter bakes around the beef and cheese filling for a scrumptious hot sandwich.

- Heat oven to 350°F. Grease bottom and sides of 8-inch square (2-quart) glass baking dish with shortening.
- In medium bowl, stir Bisquick mix, milk, mustard and egg until blended. Pour half of batter into baking dish. Top evenly with half of the roast beef and 1/2 cup of the cheese. Top with remaining roast beef. Pour remaining batter over roast beef.
- Bake uncovered 45 to 50 minutes or until golden brown and center is set. Sprinkle with remaining 1/2 cup cheese and the pepper. Let stand 5 minutes before serving.

- In a small bowl, combine the mustard, melted butter, onion powder, and Worcestershire sauce. Set aside.
- Cut rolls in half and place bottom of each roll into a 9 x 13 baking pan.
- Top each bottom roll with a slice of roast beef and a slice of cheese.
- Place top roll on top of meat/cheese to create a sandwich.
- Pour mustard mixture evenly on top of the sandwiches.
- Sprinkle poppy seeds on top of sandwiches.
- Cover pan loosely with foil and bake in preheated oven, 350, for about 12-15 minutes.
- Remove pan from oven and serve hot!

- Thinly slice your roast beef and toss in the thickened braising liquid. I just warmed the sliced roast beef in the original Dutch oven over medium heat; stirring frequently.
- Line a baking sheet with aluminum foil and preheat your broiler.
- Toast two pieces of bread and spread a thin layer of horseradish on one side. Place the toasted bread horseradish side up on your baking sheet.
- Layer sliced roast beef onto horseradish to your desired height.
- Place a slice of Swiss cheese on top of each open-faced sandwich and place under the broiler until the cheese is melted.
- While the sandwich is broiling, toast two more slices of bread and spread a thin layer of coarse grained mustard on one side of each.
- Remove sandwiches from the oven and top with second slice of bread, cut in half, and serve immediately.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.
FRENCH ONION ROAST BEEF PULL-APART SANDWICHES
Roast beef, Swiss cheese and richly caramelized onions are stuffed into a whole loaf of rye bread in this delicious recipe. Bake until nicely toasted and melty and serve with a creamy homemade Thousand Island dressing for a bold punch.

- Make the dressing: Mix the mayonnaise, pickles, ketchup, horseradish, dill, onion powder and hot sauce in a small bowl; season with salt. Cover and refrigerate.
- Make the sandwiches: Preheat the oven to 425˚ F. Line a baking sheet with parchment paper. Melt the butter in a large skillet over medium heat. Pour 4 tablespoons of the butter into a small bowl and set aside. Add the onions and thyme to the skillet with the remaining butter and cook, stirring occasionally, until deep golden, 12 to 15 minutes.
- Add the sherry to the skillet; cook until evaporated. Add the beef broth and Worcestershire sauce and return to a simmer. Cook until the liquid is reduced by half and the onions are caramelized, 2 to 3 minutes. Season with salt and pepper.
- Trim the ends off the bread loaf. Cut the bread on an angle into 12 slices, leaving the bottom of the loaf intact. (You can position chopsticks along the long sides of the bread to keep from cutting all the way through the loaf.) Transfer to the baking sheet.
- Brush the reserved melted butter between the bread slices and all over the loaf. Set aside about one-third of the onions. Fill every other slice of the loaf with the remaining onions, starting with the first slice. Fold the roast beef and tuck into the onion-filled slices, along with the cheese. Top the loaf with the reserved onions and any onion juices.
- Bake until the cheese is browned and bubbly, about 20 minutes. Pull apart or slice into individual sandwiches. Serve with the dressing.
ROAST BEEF AND SWISS TORTILLA ROLL-UPS

This was my favorite growing up. I was amazed when I was older and asked my mom for the recipe how EASY it is! A small amount of prep. time, a day in the slow cooker, and you'll be amazed! - Heat beef broth over low heat; keep warm.
- Melt butter in a small frying pan.
- Fry onion rings and optional bell pepper in butter until tender and slightly browned.
- Remove vegetables from the pan; keep warm.
- Add meat to the pan and heat throughly. (If there are any browned spots from the meat and vegetables left in the pan, you can deglaze the pan with a little bit of red wine and then add it to the broth for a tasty addition).
