PAPRIKA ROAST LEG OF LAMB WITH MINT SAUCE

1 cup fresh parsley
1 clove garlic
1 teaspoon dijon mustard
1 teaspoon capers
Juice of 1/2 lemon
1/2 teaspoon sugar
1/4 teaspoon red pepper flakes
Kosher salt
1/2 cup extra-virgin olive oil
For the lamb:
3/4 cup extra-virgin olive oil Juice of 2 lemons
10 cloves garlic, grated
3 tablespoons smoked paprika
3 tablespoons ground cumin
2 teaspoons dried oregano
1 teaspoon red pepper flakes
Kosher salt and freshly ground pepper
1 6-to-8-pound bone-in leg of lamb, hip bone removed
For the mint sauce:
1 cup fresh mint

Steps:

  • Marinate the lamb: Combine the olive oil, lemon juice, garlic, paprika, cumin, oregano, red pepper flakes, 2 teaspoons salt and several grinds of black pepper in a medium bowl; whisk until smooth. Place the lamb on a rimmed baking sheet or in a roasting pan; poke about 10 slits into each side with the tip of a paring knife. Rub the marinade all over the lamb, massaging it into the meat and slits. Cover and refrigerate overnight.
  • Remove the lamb from the refrigerator and bring to room temperature about 1 hour before roasting. Preheat the oven to 350 degrees F and set a rack in a roasting pan. Wipe any excess marinade off the lamb and season all over with salt and pepper; transfer to the rack. Roast until a thermometer inserted into the thickest part registers 130 degrees F to 135 degrees F, about 1 hour 50 minutes. Remove from the oven, transfer to a cutting board and let rest 30 to 45 minutes before carving.
  • Meanwhile, make the mint sauce: Combine the mint, parsley, garlic, mustard, capers, lemon juice, sugar, red pepper flakes and 1/4 teaspoon salt in a blender and puree until smooth. With the machine running, slowly drizzle in the olive oil and blend until smooth. Transfer to a bowl. Carve the lamb and serve with the sauce.

The lamb that we buy today hardly requires a typical English mint sauce (the puckery flavor was originally designed to cut through the stronger taste of mutton), but the combination is by now a traditional and still-welcome one. 3 8-chop racks of lamb, trimmed
6 tablespoons Dijon mustard
3 cups fresh white breadcrumbs
6 tablespoons chopped fresh mint
Fresh mint sprigs
Mint Sauce
1 cup plus 2 tablespoons chopped fresh mint
1/2 cup canned beef broth
1/3 cup minced shallots
6 tablespoons red wine vinegar
1/4 cup sugar
2 teaspoons cornstarch

Steps:

  • To make lamb:
  • Preheat oven to 450°F. Sprinkle lamb with salt and pepper. Spread 1 tablespoon mustard on each side of each lamb rack. Mix breadcrumbs and mint in medium bowl. Press breadcrumb mixture onto lamb, coating completely.
  • Arrange lamb, meat side up, on large baking sheet with rim. Roast lamb 10 minutes. Reduce oven temperature to 350°F. Roast until thermometer inserted into lamb registers 130°F. for medium-rare, about 20 minutes longer.
  • Transfer lamb to work surface. Tent with foil; let stand 5 minutes. Cut lamb racks between bones into chops. Arrange chops on plates. Garnish with mint sprigs; pass Mint Sauce separately.
  • To make sauce:
  • Combine 1 cup mint, broth, shallots, vinegar and sugar in heavy small non-aluminum saucepan. Stir over medium heat until sugar dissolves. Simmer 2 minutes. Remove from heat. Cover and let stand 2 hours.
  • Strain sauce into large glass measuring cup. Place cornstarch in same saucepan. Gradually whisk in sauce. Bring to simmer over medium heat, stirring constantly. Stir until sauce thickens slightly and turns translucent, about 2 minutes. Remove from heat. Cool to room temperature. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.) Stir in remaining 2 tablespoon mint. Season to taste with salt and pepper. Makes about 1 cup.

6 new zealand lamb racks
1 cup Dijon mustard
3 cups breadcrumbs
1/4 lb butter, melted
10 cups beef stock (rich homemade stock is important to the rich flavor of the sauce, using canned stock will affect the)
2 cups Burgundy wine
2 tablespoons brandy
1/2 teaspoon shallot, minced
1 tablespoon peppercorn, coarsely crushed (the Blue Lion uses a mixture, black, white, green, szechaun, pink, etc.)
1/2 tablespoon fresh rosemary, chopped
salt
2 cups heavy cream
1/2 cup water
3/4 cup sugar
2 tablespoons green creme de menthe
1 1/2 cups of fresh mint, chopped
3 fresh jalapenos, seeded and chopped
1/4 cup cold water
1 teaspoon gelatin

Steps:

  • To prepare mint sauce, combine water, sugar, and creme de menthe in a saucepan, and heat to dissolve sugar.
  • Add fresh mint and jalapenos, and bring to a boil.
  • In a seperate saucepan, mix gelatin with cold water, and heat to dissolve gelatin.
  • Combine mint mixture with gelatin mixture, and mix thoroughly.
  • Refrigerate mixture overnight to set.
  • Have your butcher French Trim the lamb (take the fat caps off the racks and scrape the silverskin from the bones).
  • Preheat oven to 350°F.
  • Brush each rack with dijon mustard, and roll in bread crumbs to coat top and bottom.
  • Arrange on a baking sheet and sprinkle with melted butter.
  • Bake until medium rare (20-30 minutes).
  • To make peppercorn sauce, boil beef stock until reduced to 1 cup.
  • In a seperate saucepan, combine wine, brandy, shallots, and boil mixture until reduced by half.
  • Add reduced beef stock to mixture; continue to boil until only 1 cup is left of the mixture.
  • Season sauce with rosemary and salt.
  • Add cream and cook over medium heat until thick.
  • Stir mint sauce before serving.
  • Slice racks into chops and serve on a bed of peppercorn cream sauce, with jalapeno mint sauce served to the side for a dipping sauce.

2 frenched racks of lamb (each about 1 1/2 pounds)
1 medium shallot
3 tablespoons drained green peppercorns in brine
1/2 stick (1/4 cup) unsalted butter
3/4 cup dry red wine

Steps:

  • Preheat oven to 450°F.
  • In a roasting pan season lamb with salt and arrange rib sides down. Roast lamb in middle of oven until a thermometer inserted 2 inches into center of a rack registers 130°F., about 25 minutes, for medium-rare.
  • While lamb is roasting, mince shallot and with flat side of a large knife crush peppercorns. In a small saucepan cook shallot in 1 tablespoon butter over moderate heat, stirring occasionally, until softened. Add peppercorns and wine and simmer until liquid is reduced to about 1/3 cup.
  • Transfer lamb to a cutting board and let stand 10 minutes. Skim fat from roasting pan and add red-wine mixture to pan, stirring and scraping up any browned bits. In saucepan simmer sauce until reduced to about 1/4 cup. Whisk in remaining 3 tablespoons butter until incorporated and season sauce with salt if necessary.
  • Cut lamb into individual chops and pour sauce over them.

6 medium shallots
4 tablespoons unsalted butter, chilled (1/2 stick)
1 1/4 cups madeira wine
1 tablespoon green peppercorns in brine, drained, coarsely chopped
2 1/2 lbs racks of lamb, trimmed

Steps:

  • Finely chop 2 medium shallots. Melt 1 tablespoon unsalted butter in heavy small saucepan over medium heat. Add chopped shallots and sauté until tender, about 3 minutes. Add Madeira and green peppercorns. Boil uncovered until mixture is reduced to 2/3 cup, about 12 minutes. Remove sauce from heat.
  • Arrange trimmed racks of lamb on rimmed baking sheet. Cut remaining 4 medium shallots in half and push through garlic press. Coat lamb with pressed shallots. Sprinkle with salt and pepper. (Can be prepared 8 hours ahead. Cover sauce and lamb separately and refrigerate.).
  • Preheat oven to 400°F Roast lamb 25 minutes. Increase heat to 500°F and continue to roast until lamb browns and meat thermometer inserted into center of lamb registers 130°F, about 5 minutes longer. Let stand 5 minutes.
  • Bring peppercorn sauce to simmer. Whisk in remaining 3 tablespoons butter. Season to taste with salt and pepper. Cut lamb between ribs into chops. Arrange lamb chops on plates. Spoon peppercorn sauce around lamb and serve immediately.
  • Variation:.
  • This sauce would also work with thick pork chops (with bones); make sure they reach an internal temperature of 150ºF for food safety.
  • Do-Ahead:.
  • Note that the sauce and lamb can be prepared eight hours ahead. The lamb needs to roast for just 30 minutes before serving.
