ROAST RED WINE LAMB WITH ITALIAN BEANS
Good roast lamb is hard to beat, Lesley Waters's recipe gives it new flavour

- Using a sharp knife, cut small slashes all over the lamb, then push a slice of garlic into each. Put half the thyme, 3 tbsp olive oil, wine, lemon zest and a good grinding of black pepper into a large freezer bag. Addthe lamb, tie the bag tightly and refrigerate for at least 4 hrs, preferably overnight.
- Heat oven to 220C/fan 200C/gas 7. Put the rest of the thyme into the bottom of a roasting tin then lift the lamb out of the marinade and sit on top of the thyme. Roast for 20 mins, then toss onions into the pan, drizzle with a little oil, then turn the oven down to 190C/fan 170C/gas 5. Roast for 15 mins/450g for medium. Meanwhile, strain the marinade into a pan, add most of the stock and boil until reduced by two thirds (this will take about 20 mins). Set aside. Gravy can be made ahead or the day before if necessary, as long as the meat has marinated for 4 hrs.
- Once the lamb is ready, take out and rest on a board, wrapped in a tent of foil to keep warm. Set the onions aside in a bowl. Put the roasting tin onto a low heat and add the balsamic vinegar to the tin with a splash more stock and scrape all the meaty bits from the bottom. Tip into the jug with the gravy.
- For the beans, add 2 tbsp oil to the roasting tin. Add the rosemary and tomatoes, and fry for 1 min until the rosemary smells aromatic. Tip in the beans, the red onions and the final splash of stock, then warm through. Season, then stir in the parsley just before serving. Serve on a platter, topped with the lamb.

ROASTED RACK OF LAMB WITH WHITE BEAN PUREE AND RED WINE REDUCTION
This is a dish that my wife made for us on Valentine's Day one year. It was the best lamb that I've ever tasted. I added the red wine reduction for even more awesomeness! I serve with roasted Brussels sprouts.

- Heat olive oil for red wine reduction in a large saucepan over medium heat. Add onion and celery; saute until slightly brown, 8 to 10 minutes. Add Cabernet, tomatoes, apple, vinegar, butter, and garlic; simmer until sauce has reduced and is thick enough to coat the back of a spoon, 15 to 30 minutes. Strain and keep warm.
- At the same time, combine beans, butter, and garlic for bean puree in a small saucepan over medium heat. Cook for about 25 minutes, then puree with an immersion blender, adding white whine to thin if needed.
- Preheat the oven to 450 degrees F (230 degrees C).
- Combine bread crumbs, 2 tablespoons olive oil, garlic, rosemary, mustard, 1 teaspoon salt, and 1/4 teaspoon pepper in the bowl of a food processor; pulse gently until blended.
- Heat remaining 1 tablespoon oil in an oven-proof skillet over high heat. Season lamb with salt and pepper and sear racks on both sides until browned, about 3 minutes per side. Coat racks liberally with bread crumb mixture.
- Transfer to the preheated oven and cook until an instant-read thermometer inserted into the center reads at least 145 degrees F (68 degrees C), 12 to 15 minutes. Allow racks to rest before cutting into 2-rib servings.
- Place ribs in the center of serving plates. Drizzle reduction sauce on and around the ribs and spoon the bean puree into slight mounds on 3 sides outside the reduction.

- Preheat oven to 400°F.
- Unroll roast; trim fat.
- Spread minced rosemary, 1/4 teaspoon salt, and garlic into folds of the roast.
- Reroll roast; secure at 3-inch intervals with heavy string.
- Sprinkle with 1/4 teaspoon salt and pepper.
- Drizzle with oil.
- Secure rosemary sprigs under strings on roast.
- Place roast on the rack of a broiler pan or roasting pan; insert meat thermometer into thickest portion of roast.
- Bake at 400° for 1 hour.
- Increase oven temperature to 425° (do not remove roast from oven).
- Bake an additional 20 minutes or until thermometer registers 140° (medium-rare) to 155° (medium).
- Place roast on a platter; cover with foil.
- Let stand 10 minutes for roast to reabsorb juices.
- (Temperature of roast will increase 5° upon standing.)
- Remove string and rosemary sprigs before slicing.
- Remove rack from pan.
- Combine 1/2 cup wine and cornstarch; set aside.
- Add 1/2 cup wine to drippings in pan; scrape pan to loosen browned bits.
- Combine drippings mixture and 1 cup wine in a saucepan; bring to a boil.
- Cook 5 minutes.
- Add 1/4 teaspoon salt and cornstarch mixture; return to a boil.
- Cook 1 minute or until thick, stirring constantly.
- Serve with lamb.
