Roasted Butternut Squash With Brown Butter Vinaigrette image

This roasted butternut squash is every bit as caramelized as you'd want it to be, without the prep work that's usually involved. First, it's cooked without being peeled: The skin is a crisp counterpart to the jammy interior. (If you do want to get rid of the peel, it tears away easily after roasting.) Then, it's dressed with a vinaigrette made with brown butter, vinegar and dried chile. Mint is added for freshness and flaky salt for crunch, and you could also throw on some cheese - Parmesan, Gruyère, ricotta - for more richness. Serve the squash over sturdy salad greens, or add nuts or pepitas to the browning butter for more texture.

1 large butternut squash (3 to 4 pounds)
3 tablespoons extra-virgin olive oil
Kosher salt and black pepper
3 tablespoons unsalted butter
1 teaspoon apple cider vinegar, plus more as needed
1/4 teaspoon red-pepper flakes, plus more as needed
1/2 cup fresh mint leaves (optional)
Flaky salt

Steps:

  • Arrange a rack at the bottom of the oven and heat to 425 degrees. Slice the squash 1/2-inch-thick crosswise. (No need to peel.) Cut slices in half, if desired, to make half moons. Remove the seeds from the squash with a spoon and discard.
  • On a rimmed baking sheet, toss the squash with the olive oil, and season with salt and pepper. Spread in an even layer and roast on the bottom rack until browned, 20 to 25 minutes. Flip and roast until tender, another 5 to 10 minutes.
  • After you flip the squash, make the brown butter: Melt the butter in a small saucepan over medium. Cook, swirling occasionally, until the foam subsides, the milk solids turn golden-brown and it smells nutty, 3 to 4 minutes. Remove from heat and add the vinegar and red-pepper flakes. Season with salt and pepper and set aside on the stovetop until the squash is ready. (The heat from the oven keeps the butter from hardening.)
  • Dip a piece of squash into the vinaigrette, try it, and adjust vinegar, salt and red-pepper flakes to taste. Spoon the vinaigrette over the squash and top with mint leaves, if using, and flaky salt.

1 ambercup squash, cut into 1-inch cubes; (peeled or unpeeled)
2 tbsp. ghee or Paleo cooking fat;
1 tbsp. fresh sage, chopped;
2 tbsp. extra-virgin olive oil;
Sea salt and freshly ground black pepper to taste;

Steps:

  • Preheat your oven to 400 F. Coat a baking sheet with olive oil. In a large bowl, combine the squash, 1 tbsp. olive oil and salt and pepper to taste. Place the squash on the baking sheet and roast for about 30 to 35 minutes, tossing occasionally, until tender. While the squash is baking, heat a small skillet over a medium heat. Add the ghee or cooking fat and whisk. Once the fat is melted, add the sage. Continue to whisk until the fat begins to turn brown (about 5 minutes), and then remove from the heat Transfer the squash to a large bowl. Toss it gently with the sage mixture and serve.

This just might be my current favorite squash. Great texture with no stringy-ness, sweet mild flavor, and gorgeous color. I made it the other night as part of my "I will try all the winter squashes" kick I am on recently, and needed a place to remember this easy recipe.

1 medium ambercup squash
2 tablespoons olive oil
sea salt (to taste)
fresh ground black pepper (to taste)

Steps:

  • Preheat oven to 350*F.
  • Wash outside of squash. Cut in half and scoop seeds out.
  • Cut in 1-2"slices so you end up with crescent shaped pieces.
  • Place the squash in a bowl and toss with the oil.
  • Line a rimmed baking sheet with foil. Lay the squash on a cut side evenly spaced on the baking sheet. Sprinkle with salt & pepper to taste.
  • Bake for 40 minutes, or until a fork easily pierces the flesh. Serve. The skin of the squash can be eaten.

3 pounds butternut squash (or other variety), washed, and peeled with a vegetable peeler
6 ounces unsalted butter
2 tablespoons dark brown sugar
3 tablespoons molasses
Kosher salt and freshly ground black pepper
1 teaspoon ground ginger
1 (1 to 2-inch) knob fresh ginger, peeled and finely grated
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 fresh orange

Steps:

  • Preheat oven to 400 degrees F.
  • Put the squash on a flat surface, then split in half lengthwise and scrape out the seeds. Cut each piece in half, lengthwise, to form 4 wedges. Arrange in a single layer on 1 or 2 baking sheets.
  • In a small saucepan, over medium heat, add the butter. Wait until the butter starts to turn a light brown color. Remove from the heat and immediately pour half of the butter over the squash sections. Reserve the rest of the butter. Sprinkle the squash with the brown sugar and molasses and season with salt and pepper, to taste. Finish by sprinkling the ground (dry) ginger, fresh grated ginger, cinnamon and the ground cloves. Squeeze the orange juice over the squash. Fill the bottom of the baking sheet(s) with about 1-inch of water to create steam while the squash bakes in the oven. Cover the baking sheets with aluminum foil and seal the edges tightly.
  • Put the tray in the center of the oven and bake, undisturbed, for 30 to 45 minutes. To check for doneness, pierce 1 squash section with the tip of a small knife. The knife should slide in and out easily. When the squash is tender, remove the pan from the oven and carefully peel back the foil. Drizzle with the remaining butter and set aside to cool. Transfer to a serving platter and serve.

2 medium spaghetti squash (about 2 1/2 pounds each), halved crosswise and seeded

4 tablespoons ricotta cheese

Steps:

  • Heat oven to 400 degrees with rack in center. With a serrated knife, remove stems so squash will stand upright. Sprinkle squash with salt and pepper and place cut side down on a parchment lined baking sheet. Bake until translucent and flesh pulls away from skin, 30 to 40 minutes. Let cool 5 minutes.
  • Using a fork, separate flesh into strands, reserving squash shells. Transfer strands to a large bowl.
  • Melt butter in a large skillet over medium heat. Cook until milk solids are dark golden brown, 2 to 3 minutes. Add squash, 2 tablespoons parsley, and salt and pepper to taste. Toss gently with tongs or a fork, to coat with butter. Cook until heated through, about 2 minutes. Spoon 1 tablespoon of ricotta cheese into each reserved squash shell. Divide squash mixture into each squash shell. Sprinkle with remaining 1 tablespoon parsley. Serve immediately.
