1 head of cauliflower (about 2 lbs)
3 tablespoons olive oil or avocado oil
2 tablespoons Homemade Ranch Dry Seasoning - recipe below (or store-bought if you are dirty keto)
1 tablespoon garlic (minced)
1 tablespoon dill (dried)
1 teaspoon oregano (dried)
2 teaspoons pink salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper (optional for extra spice)
6 slices bacon (precooked and crispy)
1/2 cup mozzarella cheese (shredded)
1/4 cup cheddar cheese (shredded (or pepper jack for extra spice))
2 tablespoons fresh parsley for topping (chopped)
1/4 cup sour cream
3 tablespoons mayo
1 tablespoon water
1 tablespoon sriracha
1/2 cup dry buttermilk powder
1 tablespoon parsley
2 teaspoons dill weed
1 teaspoon chives
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon sea salt or pink salt
1/2 teaspoon ground black pepper

Steps:

  • Preheat the oven to 450 degrees.
  • Toss the cauliflower florets in the olive oil until all florets are coated.
  • Add the homemade ranch seasoning, garlic, dill, oregano, salt, black pepper, and crushed red pepper if using.
  • Mix all the florets until the seasonings are well coated on each piece.
  • Roast until the florets and golden and tender. This will take about 18 to 20 minutes.
  • Take the florets out of the oven and sprinkle with mozzarella, cheddar shredded cheese, and crumbled bacon bits.
  • Bake for 3 to 5 more minutes or just enough time for the cheese to melt.
  • While the cauliflower florets are roasting, make the sauce to drizzle over the top.
  • In a small bowl combine the sour cream, mayo, and water. Feel free to add more water to get the consistency you want.
  • Add the mixture to a plastic squeeze condiment bottle so you can easily drizzle it over the roasted cauliflower (or use a spoon).
  • When the cauliflower is done roasting, drizzle the sour cream mayo sauce over the dish and then drizzle it with sriracha sauce.
  • Top with chopped parsley and serve warm.
  • Enjoy!

1 head cauliflower (about 4 cups), stems removed and sliced
2 tablespoons olive oil
2 tablespoons dry ranch seasoning
1/4 cup cheddar cheese
2 slices bacon, cooked and chopped
Green onions for garnish (optional)

Steps:

  • Preheat the oven to 425 degrees F.
  • Remove the stems from the cauliflower and slice so you have as many flat edges as possible. Add the cauliflower to a mixing bowl and toss with the olive oil and ranch seasoning. Reserve the cheddar and bacon for later.
  • Line a baking sheet with parchement paper and place the cauliflower in a single layer, do not over crowd your pan.
  • Roast 20 minutes. Remove from the oven and sprinkle with cheddar and bacon.
  • Roast an additional 5-10 minutes until it reaches your desired crispness.

Steps:

  • Preheat the oven to 450°F. Spray a small rimmed baking sheet with cooking spray.
  • Combine the cauliflower, oil and salt in a large bowl; toss to coat well. Spread the cauliflower in a single layer on a baking sheet. Roast, stirring once or twice, until the cauliflower is just tender, about 20 minutes.
  • Meanwhile, in a nonstick skillet set over medium-high heat, stir the dressing with the broth, and bring to a simmer. Add the roasted cauliflower, tossing gently to coat well. Transfer to a serving bowl and sprinkle with bacon and parsley, if using. Serve warm.
