MANGO CHICKEN
This Mango Chicken recipe is a delicious baked chicken made with sweet and spicy chunky mango sauce.

Steps:
- Dice one of the mangoes and onion. Peel the other mango and grate the meat on a fine grater.
- Preheat a medium sauce pot over medium heat and add some oil. Saute onion until softened and add garlic and diced mango.
- Cook for about a minute and add grated mango puree, chicken broth, lime juice, lime zest, ginger, salt, and red pepper flakes.
- Cook over for 5-7 minutes over medium heat. Stir in cilantro and take it off the heat.
- Break down the whole chicken into 10 pieces - 4 quarters of breasts, 2 drums, 2 thighs, and 2 wings. Season each piece with salt and pepper.
- Preheat the oven to 375°.
- Preheat a large skillet or an oven-safe cooking pan over medium-high heat and add some oil.
- Sear chicken for a couple of minutes on both sides, until browned.
- Spread mango sauce all over the chicken, gently shake the pan to help spread it around, and transfer the pan into the oven.
- Bake for 40-45 minutes.

ROASTED MANGO CHICKEN RECIPE
Steps:
- In a small bowl combine garlic, ginger, turmeric, salt and 1 tablespoon of vegetable oil. Mix together and rub all over chicken thighs. Set aside to marinate for 30 minutes and make the mango sauce.
- In a blender add the mango, Sriracha sauce and lemon juice. Purée to smooth and set aside.
- Preheat over to 350°F. In an oven proof skillet (I use my cast iron) add the remaining tablespoon of vegetable oil and over medium high heat brown the chicken on both sides. Season with salt and brush with a quarter of the mango sauce.
- Bake for 35 to 40 minutes until golden brown and chicken is cooked through. If it gets too brown before it's done, cover with aluminum foil and return to the oven. Baste with mango sauce once before removing from oven to caramelize on top. Serve with remaining mango sauce, chopped cilantro on top and side dish of choice.

- Preheat the oven to 425 degrees F.
- Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
- Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.
MANGO CHICKEN
Mango chicken is marinated in a fresh mango, lime, ginger, garlic sauce delivers bold sweet-spicy flavors and moist succulent chicken. Grill it, roast it or cook it on the stove top (oven finish). All instructions are included.

- Combine the marinade ingredients in a blender: mango, lime juice, oil, soy sauce, brown sugar, garlic, ginger, crushed red pepper flakes, and cilantro. Blend until smooth. Should yield about 1 ¼ cups.
- Reserve ¼ cup of the marinade for later.
- Place the chicken thighs in a gallon plastic bag or container. Pour in the remaining marinade (1 cup) and coat the chicken. Seal and marinate in the refrigerator for 4 hours minimum and up to 12 hours.
- Preheat oven to 400 degrees F.
- Heat grill pan or cast iron skillet on medium high heat on the stove top. Spray the grill pan lightly with non-stick cooking spray.
- Remove the chicken from the marinade (and discard the mariade from the container). Place chicken skin side down. Sear for 5 minutes.
- Flip over with tongs and sear for 5 more minutes.
- Brush the remaining 1/4 cup of marinade onto the top to the chicken.
- Place the pan in the oven and cook for 10-15 minutes until the internal temperature reaches 165 degrees.
- Allow to rest 5 minutes before serving.
- Preheat gas grill to high. When the grill is hot brush it well and run a paper towel quartered with some vegetable oil on it over the grates to oil them. NOTE: I use the grill brush to push the paper towel over the grates.
- Place chicken thighs, skin side down on heated grill for two minutes to sear them. Turn off half of the grill and move thighs to this side, skin side up, for indirect cooking.
- Close the grill and cook until the internal temperature of the chicken thighs reaches 165 degrees. Baste with the 1/4 cup marinade (top of the thighs only) during grilling. The thighs do not need to be flipped during cooking. Estimated grilling times: For smaller chicken thighs approximately 25-30 minutes, larger thighs can take 45-50 minutes. Juices should run clear and there should be no pink but the flesh will be moist and juicy.
- Remove the chicken thighs and allow them to rest 10 minutes before serving.
- Preheat the oven to 350 degrees. Place a cooking rack in a baking sheet and spray with non-stick spray. Quick clean up tip: Line the baking sheet with foil and discard when done cooking.
- Place on the prepared rack skin side down. Bake in the oven for 30 minutes.Turn the chicken thighs over, baste with the remaining 1/4 cup of marinade and bake another 30 minutes until the internal temperature reaches 165 degrees F on an instant read thermometer.Allow to rest 5 minutes before serving.

- CHICKEN: Mix all ingredients except chicken in a bowl. Add chicken and marinate for about two hours. Cook in preheated 375 degrees F oven for 45 minutes. Top with Mango Salsa Sauce.
- MANGO SALSA: Combine all ingredients in a bowl and stir well. Let sit for half an hour before serving on top of chicken.

Steps:
- Preheat oven to 500 degrees.
- Rub chicken with butter and sprinkle with salt.
- Put all other ingredients in a food processor until it has a chunky.
- Place chicken breast-side down in a pan.
- Pour mango marinade over the chicken.
- Put the chicken in the oven.
- Flip chicken breast side up after 20 minutes and baste with marinade.
- After 30 minutes of chicken being in oven, turn oven down to 350.
- Baste chicken every 15 minutes until done.
- Remove and enjoy.
