Ingredients

1 wedge roasted orange
1 ounce sweet red vermouth
1 1/4 ounces Campari
1 1/4 ounces Lini Lambrusco Bianco, or other sparkling white wine
Orange peel for garnish

Steps:

Place the orange in a mixing glass and add vermouth. Muddle the two so that the charred bits are released into the vermouth.
Add Campari and ice, and stir.
Strain into a chilled rocks glass that is filled with ice and top with sparkling wine. Do not stir as this will dissipate the bubbles. Garnish with orange peel.

1 ounce sweet vermouth
1/2 ounce bitter orange liqueur, such as Aperol
1/2 ounce simple syrup
1/4 ounce lemon juice
Dash bitters
Ice

Steps:

Char a whole orange on the grill and set aside to cool down.
Combine the gin, vermouth, liqueur, simple syrup, lemon juice and bitters in a mixing glass over ice. Add a slice of the charred orange and shake. Pour into a rocks glass and drink up!

3/4 cup red aperitivo, such as Campari or Aperol
1/2 cup sweet vermouth, such as Carpano Antica
1/4 cup fresh lemon juice
Ice, for serving
1 bottle (750 milliliters) prosecco brut or other dry sparkling white wine, chilled
Chilled club soda, orange slices, and rosemary sprigs, for serving (optional)

Steps:

In a pitcher or punch bowl, combine Campari, vermouth, and lemon juice; refrigerate until ready to serve (or combine in an airtight container and refrigerate up to 3 days).
Just before serving, add ice to pitcher, top with prosecco, and stir once. Pour into ice-filled glasses, top each with a splash of soda, and garnish each with a citrus slice and rosemary sprig; serve immediately.

Steps:

In a highball glass pour the Campari and sweet vermouth, add cubed ice and gently add in the prosecco - pouring it down a bar or long spoon that's been placed in the glass will stop the bubbles roaming over the edge of the glass. Stir contents of the glass together, top up further and garnish with the orange slice.
