3 ripe but firm Anjou pears
Freshly squeezed lemon juice (3 lemons)
3 ounces coarsely crumbled sharp blue cheese such as Stilton
1/4 cup dried cranberries
1/4 cup walnut halves, toasted and chopped
1/2 cup apple cider
3 tablespoons port
1/3 cup light brown sugar, lightly packed
1/4 cup good olive oil
6 ounces baby arugula
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Peel the pears and slice them lengthwise into halves. With a small sharp paring knife and a melon baller, remove the core and seeds from each pear, leaving a round well for the filling. Trim a small slice away from the rounded sides of each pear half so that they will sit in the baking dish without wobbling. Toss the pears with some lemon juice to prevent them from turning brown. Arrange them, core side up, in a baking dish large enough to hold the pears snugly.
  • Gently toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation.
  • In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature.
  • Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula among 6 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt, and serve warm.

6 slices prosciutto, very thin and trimmed of excess fat
1/2 medium bartlett pears (very ripe and sweet is best) or 1/2 medium Anjou pear, cored and cut into 6 wedges (very ripe and sweet is best)
1/2 cup blue cheese, crumbled
2 tablespoons light cream
1/2 teaspoon thyme, finely chopped
fresh ground black pepper

Steps:

  • Preheat the oven to 450 degrees. Line a baking sheet with aluminum foil.
  • Lay the prosciutto slices side by side on a work surface. Place a pear wedge near the end of each one and roll up. Transfer the wrapped pear wedges to the baking sheet. At this point you can lightly sprinkle over with freshed ground black pepper, if desired. Roast about 6 minutes, until the prosciutto is lightly browned and the pear has softened.
  • Meanwhile, combine the blue cheese, cream and thyme in a small saucepan over medium heat. Cook about 3 minutes, stirring constantly, until the cheese melts. Season with pepper to taste. Arrange the roasted wrapped pears on a plate around a small bowl containing the blue cheese cream. Serve immediately.

1 Bosc pear, slightly under ripe
8 spoonfuls of creamy gorgonzola cheese
4 slices prosciutto, sliced the long way so you have 8 long strips
Olive oil
3 ounces arugula or spinach
Balsamic reduction

Steps:

  • Heat the oven to 400 degrees. Slice the pear in half from stem to stern and then in quarters. Cut out the core from each quarter pear. Slice each quarter into two slices, so you have a total of 8 pear slices.
  • Put a spoonful of gorgonzola in the middle of each pear slice and wrap the prosciutto strip around the middle securing the cheese onto the pear. Continue until you have 8 wrapped pear slices. Season with kosher salt and fresh ground pepper.
  • Lightly oil a baking sheet and put all 8 wrapped slices on the baking sheet. Drizzle lightly with olive oil. Bake for 10 - 12 minutes until pears begin to brown and caramelize and the prosciutto begins to crisp.
  • Spread arugula or spinach over a serving platter and top with roasted pears. Finish with a light sprinkling of olive oil and balsamic reduction and a sprinkling of kosher salt and fresh ground pepper.

24 small fresh sage leaves
4 ounces thinly sliced prosciutto*(See Cook's Notes), cut into thirds lengthwise

Steps:

  • Place a rack in upper third of the oven and heat to 450 degrees F. Place 1 sage leaf on a pear slice and secure by wrapping 1 piece prosciutto like a "belt" around the pear. Repeat to make 24 pieces.
  • Evenly space pears on a baking sheet and place in oven to cook until prosciutto is crisp and pears are slightly softened, about 15 minutes. Serve immediately. Pears can be assembled up to 2 hours ahead. Store covered in the refrigerator until ready to cook.
  • Pears can also be served uncooked, if desired.

4 ripe Bosc or Anjou pears
2 tablespoons unsalted butter
6 tablespoons sugar
1 vanilla bean, split lengthwise
1/3 cup brandy
1/2 pound pecorino cheese

Steps:

  • Preheat the oven to 350 degrees. Halve and peel the pears, and carefully remove the seeds and core.
  • Melt the butter in a large cast-iron skillet over medium heat. Arrange the pears, cut side down, in the skillet so they just touch one another. Sprinkle the sugar, over the pears and butter. Cook, tilting the pan back and forth gently from time to time, until the sugar dissolves and melts into a golden caramel, about 4 minutes. Scrape the vanilla seeds into the pan, and add the pod. Reduce the heat, add the brandy, and cook a few minutes more. Be aware that the brandy may ignite, but the flames will die down quickly.
  • Carefully turn the pears over, and transfer to the oven. They should be deep golden brown. Roast until the pears are fork tender, about 10 minutes, depending on the ripeness and size of the pears. Serve with thick slices of pecorino and caramel sauce.

1 lemon
6 Bosc pears
1 1/2 cups sugar
1 tablespoon cider vinegar
1/2 cup water
1/4 cup heavy cream
Vanilla ice cream or frozen yogurt

Steps:

  • Fill a large bowl with water and squeeze a lemon into it. Peel each pear, leaving a small crown of skin around the stem. Carefully core each, keeping pear intact. As the pears are peeled, place in the water.
  • Preheat oven to 450 degrees.
  • In large nonreactive ovenproof skillet, combine sugar, vinegar and 1/2 cup of water. Cook, without stirring, over medium heat until mixture is lightly caramelized. Remove from heat.
  • While caramel is cooking, remove pears from water, draining them well. When caramel is done, roll pears in caramel, turning them with 2 wooden spoons. Do not touch caramel. Stand pears up in the pan, place pan in oven, and roast pears about 45 minutes, basting them frequently with caramel in the pan, until they are tender and golden brown. Keep the basting spoon in a dish of warm water to prevent it from getting sticky.
  • Using wooden spoons, carefully transfer pears to a rack placed over a sheet of foil, and allow them to drain. Return skillet to top of stove, whisk in the cream and bring to a simmer. Set aside until ready to serve.
  • Serve pears with warm sauce and vanilla ice cream or frozen yogurt on the side.

1 tablespoon olive oil

1 unbaked pizza crust
1 tablespoon cornmeal for dusting
6 ounces shredded Swiss cheese
5 thin slices prosciutto, cut into halves
1 (6 ounce) package fresh mozzarella, cut into small cubes
salt and ground black pepper to taste
½ tablespoon olive oil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place the garlic in a small square of aluminum foil. Drizzle 1/2 tablespoon of olive oil over the garlic. Wrap foil around garlic to seal.
  • Roast the garlic in the preheated oven until soft, about 20 minutes. Smash roasted cloves with a fork.
  • Place the pears in a bowl with 1 tablespoon olive oil; toss to coat. Arrange pear slices on a baking sheet.
  • Bake in hot oven until soft, 10 to 15 minutes.
  • Raise oven temperature to 400 degrees F (200 degrees C). Preheat a pizza stone or baking sheet in the oven.
  • Lightly dust a flat surface with flour. Roll the prepared pizza crust dough out onto the prepared surface. Dust a baking sheet with cornmeal. Lay the dough onto the prepared baking sheet. Spread the mashed garlic onto the dough; top with the Swiss cheese. Arrange the pears, prosciutto, and mozzarella cheese onto the pizza. Season with salt and pepper. Brush the edges of the crust with the 1/2 tablespoon olive oil.
  • Bake in preheated oven until the cheese is melted and crust is golden brown, 15 to 20 minutes.

1 baguette, cut into 30 slices (toasted)
2 medium bartlett pears, cored and chopped fairly fine
1/4 cup red onion, chopped fine
2/3 cup crumbled gorgonzola
1/3 cup butter (unsalted)
1/4 lb prosciutto (cut into 30 pieces)
1 tablespoon white balsamic vinegar
1 tablespoon olive oil
1 tablespoon fresh thyme, chopped fine

Steps:

  • Butter -- Mix the gorgonzola cheese and butter and set to the side, room temperature.
  • Pears -- Mix the pears, red onion, balsamic, olive oil and thyme and toss well in a small bowl. Let it hang out 15-20 minutes.
  • Baguettes -- Then as the pears marinate, in a 400 degree oven toast the baguette slices on each side until golden brown.
  • Put them all Together -- After the baguettes come out of the oven, spread with the blue cheese butter, top with a thin slice of the proscuitto and top with the pear and onion mixture.
