RED ROASTED POTATOES
Roasting red potatoes is one of my favorite way to prepare them. Some fragrant rosemary, fresh or dried, gives these potatoes a distinctive but subtle taste. This dish is simple to prepare, yet elegant in color and flavor. It's a wonderful addition to any menu. -Margie Wampler, Butler, Pennsylvania

With crackled skins and soft interiors, these roasted potatoes are a traditional side dish for dinner meat entrees but taste just as good served as a hot or cold salad at lunch. Fresh herbs like rosemary and thyme give the spuds a ton of flavor

SMASHED ROASTED RED POTATOES
This idea came from the "Take Home Chef " he did a similar recipe on his show and I changed it up. I prefer to use fresh herbs, but anything you like will work. It's the method of cooking that I really like you can change it up to suit your taste and have fun with. Top with cheeses or bacon or both it is very versatile and fun. I haven't put measurements, because I do everything by sight. Prep time includes boiling time.

ROASTED RED AND WHITE POTATOES
One kind of roasted potato is good, and two kinds are doubly delicious. This recipe is twice as good in another way, too: You get roasted potatoes for today and a start on German or Mexican Potato Salad (pages 80, 81) for later.
Yield serves 6, 1/2 cup per serving (plus 3 cups potatoes reserved)
Number Of Ingredients 7
Steps:
- Preheat the oven to 425°F. Lightly spray a rimmed baking sheet with olive oil spray.
- Cut the potatoes into 1-inch cubes. Pat dry. Put in a large bowl.
- Stir in the remaining ingredients except the onion. Spread in a single layer on the baking sheet.
- Roast for 20 minutes, stirring once halfway through.
- Meanwhile, cut the onion into 1-inch cubes.
- After the potatoes have cooked for 20 minutes, add the onion, stirring well. Roast for 20 minutes, or until the potatoes are lightly browned and tender when pierced with a fork, stirring once halfway through. If the onion seems to be browning too quickly, stir more frequently. Refrigerate half the potatoes (3 cups) in an airtight container for use in German or Mexican Potato Salad. Serve the remaining potatoes.
