Red Pepper Chicken Alfredo Bake ~ Pasta Smothered in Light Roasted Red Pepper Sauce, Chicken & Cheese!

2 whole red peppers
2 Tbsp olive oil
1 lb boneless skinless chicken breasts
2 garlic cloves minced
1 small onion (diced)
1 c. chicken broth
1/3 c. flour
1/4 tsp pepper
1/2 tsp salt
1/4 c. greek yogurt
1 c. milk
1 lb medium shell pasta
2 c. Sargento® Chef Blends™ Shredded 6 Cheese Italian (divided)
Green Onion (for topping)

Steps:

  • Preheat oven to 500 degrees. Place red peppers on baking sheet and bake 20-30 minutes or until peppers are charred. Remove from heat and cover with tin foil. Let rest 10 minutes. Uncover peppers, pepper off skin, remove seeds and dice.
  • Meanwhile prepare pasta according to package directions.
  • Saute chicken, onion, garlic and olive oil in a oven proof skillet 7-9 minutes or until chicken is cooked through.
  • In a sauce pan whisk together broth and flour over medium heat. Slowly whisk milk in and then add yogurt continuing to whisk. Once mixture is smooth mix in salt, pepper and 1 c. cheese. Stir until melted. Add diced red peppers and puree with immersion blender or food processor. I left a few chunks of red pepper but you can make it completely smooth if you'd like.
  • In skillet mix together chicken, sauce and noodles. Sprinkle remaining cheese over the top. Broil on high 3-5 minutes or until cheese is golden brown.

4 boneless skinless chicken breasts, 6 ounces each
salt
1/2 cup all-purpose flour
3 tablespoons vegetable oil, divided
2 garlic cloves, minced
1 (7 ounce) jar roasted red peppers, cut into strips
3/4 cup fat-free low-sodium chicken broth
2 tablespoons red wine vinegar
1 1/2 teaspoons sugar
1 tablespoon butter
2 tablespoons chopped fresh parsley

Steps:

  • Place each breast between 2 sheets of parchment paper or plastic wrap and pound to an even 1/2-inch thickness. Sprinkle with salt. Coat with flour, shaking off excess.
  • Warm 2 tablespoons of oil in a large skillet over medium-high heat. Cook chicken until golden brown on both sides and cooked through, about 4 minutes per side. Transfer to a platter and cover loosely.
  • Heat remaining 1 tablespoon oil in skillet. Saute garlic until fragrant, about 30 seconds. Add peppers and saute 1 minute more.
  • Add broth, vinegar and sugar; bring to a boil, scaping up browned bits from the bottom of the skillet. Reduce heat and simmer until slightly thickened, about 4 minutes.
  • Remove from heat; stir in butter and parsley until butter melts.
  • Pour sauce over chicken and serve immediately.

4 6 oz. boneless chicken breast halves
1 c low-fat mayonnaise
1/2 c chopped roasted red peppers
1/2 c chopped artichoke hearts
1/2 c shredded parmesan cheese
1 tsp lemon zest
1 Tbsp lemon juice
1/2 tsp kosher salt
1 tsp coarsely ground black pepper

Steps:

  • 1. Preheat oven to 375 degrees. Place breasts in a greased baking dish. In a bowl, mix the remaining ingredients. Divide topping equally among the 4 breasts. Bake for 25-30 minutes or until done. Move the baking dish to the top rack of the oven and broil for 2-5 minutes or until starting to brown and bubble. Serves 4.
  • 2. Baking in a convection oven allows for browning without need to brown under broiler.

1 (14-oz.) can ready-to-serve chicken broth
1 (9-oz.) pkg. refrigerated grilled chicken strips
1 (7 or 7.25-oz.) jar roasted red bell peppers, chopped
1/4 cup halved pitted kalamata olives
1/3 cup purchased Italian salad dressing
1 oz. (1/4 cup) shredded fresh Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Cook rice in large saucepan as directed on package using chicken broth instead of water and salt.
  • Add chicken, roasted peppers, olives and salad dressing; mix well. Cover; cook over low heat for 5 to 10 minutes or until thoroughly heated, stirring occasionally. Pour mixture into ungreased 2 1/2-quart casserole. Sprinkle with Parmesan cheese.
  • Broil 4 to 6 inches from heat for 1 to 2 minutes or until cheese is melted. Sprinkle with parsley.
