Steps:
- Toss the strawberries, sugar and vanilla together in a glass baking dish.
- Roast in the oven at 350 degrees F stirring occasionally until the jam reduces and the juice almost completely boils off.
- Watch it closely toward the end of the cooking time because the sugars will be very concentrated and will more easily burn.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Quarter large strawberries and halve smaller ones. Place strawberries in a 9-inch pie plate. Sprinkle sugar on top and toss several times.
- Roast in the preheated oven, stirring once, until strawberries are soft and juices are thick and bubbly, 15 to 20 minutes. Cool completely.
