- Preheat oven to 425 degrees F and mix together seasonings.
- In a large bowl, mix together chopped veggies with olive oil and seasoning mixture, tossing well to evenly coat.
- Transfer veggies onto two non-stick baking sheets or roasting pans and roast in the oven for 30 minutes, tossing vegetables once halfway through. Sweet potatoes should be fork tender and broccoli nice and crisp. Serve immediately and enjoy!

- Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Place broccoli florets, mushrooms, butternut squash, zucchini, squash, bell pepper and onion in a single layer onto the prepared baking sheet. Add olive oil, balsamic vinegar, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine. Place into oven and bake for 12-15 minutes, or until tender.* Serve immediately.
ROASTED SWEET POTATOES AND ASPARAGUS

- 1. Preheat the oven to 400 degrees F. Line a baking sheet with heavy-duty foil.
- 2. Put the sweet potatoes on the foil, drizzle with half of the oil and sprinkle with half of the celery salt and red pepper flakes. Turn with a spatula to coat. Roast until the potatoes are tender and beginning to shrivel, about 20 minutes.
- 3. While the potatoes are roasting, toss the asparagus with the remaining oil, celery salt and red pepper flakes in a medium bowl. Using a spatula, add the asparagus pieces to the sweet potato pan and toss to combine. Cook until the asparagus softens and the tips begin to brown, another 10 minutes. Sprinkle the Parmesan over the vegetables and cook until the cheese just melts and coats the vegetables, another 5 minutes. Spread the vegetables on a serving platter and sprinkle with the chopped parsley. Serve warm.

- Prep oven: Preheat the oven to 400 degrees (200 C).
- Prep vegetables: Wash asparagus and sweet potatoes. Cut the ends off of the asparagus, then cut into small 1 inch pieces for roasting. Slice the ends off sweet potatoes, then cut into small 1/2 inch cubes (you do not need to peel them before roasting).
- Roast vegetables: Place the sweet potatoes and asparagus on a sheet pan and combine with a drizzle of olive oil. Toss the vegetables to completely cover with oil and sprinkle with sliced garlic, salt, and pepper. Roast in the oven for about 35 minutes, flipping the vegetables halfway through cooking to brown on all sides.
- Serve vegetables: Remove pan from oven, arrange vegetables on a plate, and serve as a side dish or let cool and use as a salad topping.
