LAMB BURGERS WITH TZATZIKI SAUCE
Steps:
- Pre-heat grill to high heat.
- In a medium bowl, mix together ground lamb with the next six ingredients (dill through chili flakes.) Use hands to incorporate every ingredient evenly into the lamb.
- Divide meat mixture into four and form into equal sized patties. Using your thumb, gently press down in the center of each patty to avoid it bubbling up while cooking. Grill for 4 minutes per side for medium rare burgers, longer for medium or medium well.
- Grill for 4 minutes per side for medium rare burgers, longer for medium or medium well. Remove from heat and let rest 10 minutes.
- While the meat is resting, quickly whisk together the Greek Tzatziki Sauce according to these instructions.
- To serve, place optional garnishes on bun, along with grilled lamb burger, and drizzle with tzatziki sauce.

LAMB BURGER WITH TZATZIKI
Steps:
- In a large bowl, combine all the patty ingredients and mix well. Divide the mixture into 4 balls and form into patties with wet hands.
- Place on a baking tray or cutting board and place in the fridge for 15-20 minutes.
- Make the tzatziki according to recipe instructions and set aside.
- Cook the burgers in a hot pan or on a grill until well-browned on both sides and cooked through, approximately 4-5 minutes per side.
- Remove form the heat and allow to rest for 5 minutes.
- To assemble the burgers, toast the buns then top with lettuce, tomato, lamb burger, tzatziki and red onion. Add the top of the buns then serve.

LAMB BURGERS WITH FETA TZATZIKI SPREAD

- Coat a large saute pan with olive oil, toss in the diced onions and season with salt and crushed red pepper. Bring the pan to medium-high heat and cook the onions for 3 to 4 minutes. Add the garlic and cook for 2 to 4 more minutes. Turn the heat off and let cool.
- In a large bowl, combine the lamb, the cooled onion mixture, the oregano, dill, mint, lemon zest and 1/2 to 3/4 cup water. Sprinkle with salt and combine well. Make a little "tester patty." Cook it and taste for seasoning.
- Preheat the grill.
- Form the lamb mixture into 4 equal patties and sprinkle with salt. Grill the burgers to your desired doneness, 4 to 5 minutes per side for medium-rare. Remove the burgers from the grill and let rest for 3 to 4 minutes.
- Cut the pitas in half. Schmear each half generously with the Feta Tzatziki Spread. Top one half with a burger, then tomatoes, sliced onions and spinach. Place the other pita half on top.
- Combine the yogurt, feta, vinegar, garlic, mint, dill and cucumbers. Season with salt. Let sit for at least 1 hour at room temperature before serving.
LAMBURGERS WITH TZATZIKI SAUCE

- Tzatziki Sauce: Mix together yogurt, cucumber (make sure that this is well drained, or your sauce will be watery), 1 clove chopped garlic, lemon juice. Add salt and pepper to taste. Place in the refrigerator. This should ideally sit for a few hours.
- Place ground lamb in large bowl and mix in oregano, parsley, 1 tsp salt, 1 tsp pepper, and 2 cloves chopped garlic until evenly distributed.
- Pour in feta and chopped green olives and mix gently.
- Form patties, trying to tuck as much of the cheese and green olives inside.
- Grill for 4-5 minutes per side for medium rare. If using a stove top, cook on medium high heat.
- Lightly toast buns.
- Serve burgers with tzatziki sauce, lettuce, and sliced tomatoes.

- Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
- Combine the lamb, coriander and 3 tablespoons of the mint in a large bowl. Form the mixture into 4 patties. Season with salt and pepper. Place the patties on the hot (direct heat) side of the grill, directly over the coals. Grill until nicely browned, 3 to 5 minutes per side. Move the patties to the cool (indirect heat) side of the grill.
- Drizzle the onion slices with oil and season with salt and pepper. Place on the hot (direct heat) side of the grill and cook until softened and charred, 3 to 4 minutes, moving the slice over to the cool (indirect heat) side to finish cooking if needed.
- For the tzatziki, combine the yogurt, cucumber, dill, lemon zest and garlic and remaining 1 tablespoon mint in a medium bowl. Season with salt and pepper.
- To serve, spoon some tzatziki onto a roll, top with a burger and a slice of grilled onion and close the roll.

- Tip the bulghar into a pan, cover with water and boil for 10 mins. Drain really well in a sieve, pressing out any excess water.
- To make the tzatziki, squeeze and discard the juice from the cucumber, then mix into the yogurt with the chopped mint and a little salt.

- Preheat the outdoor grill or indoor grill pan.
- In a bowl combine lamb, 1 teaspoon salt, pepper, and curry powder. Form into 8 3-inch by 2-inch oblong patties. Set aside to come to room temperature.
