Roasted Turmeric Spiced Turkey Breast is a succulent bone in turkey breast cooked with turmeric, cardamom, spices and a very fun twist for a holiday gathering.

4-6 pounds Turkey bone in breast
1/4 cup clarified organic butter (or ghee or butter if no dairy issues)
2 tsp turmeric (dried ground)
1 tsp paprika (dried ground)
1 tsp garlic powder (dried ground)
salt and pepper (to taste)
1 tsp cardamom (dried ground)
3 cups seasonal vegetables (chopped (we used Brussel sprouts, potatoes and onions cut into bite sized pieces))
1/2 cup chicken broth

Steps:

  • Preheat oven to 325 degree F or 162 degrees C.
  • Spray a roasting pan with cooking spray
  • Pour your ghee or clarified butter (you can make your own clarified butter by just heating your butter slowly on the stove until clear, strain any solids) Place your bone in turkey breast in the roasting pan. Rub your turkey on all sides with your clarified butter (ghee) and then sprinkle with turmeric, paprika, garlic powder, salt and pepper to taste, cardamom if using dried. (if using whole cardamom pods just lightly crush and add to the roasting pan.
  • Add seasonal vegetables and pour chicken broth around the sides of the bone in turkey breast. Season the vegetables with salt and pepper to taste. Cover your turmeric spiced turkey breast with aluminum foil and secure around edges.
  • Bake for ½ hour. Remove aluminum foil from your turkey and baste turkey. Place turkey back into the oven and baste every 15 minutes until the turkey is golden brown, the internal temperature is 165 degree F and the juices run clear. Remove the turkey from the oven to rest and keep warm for 10 minutes. (cooking time will be around 1 1/2 to 2 1/4 hours for a 4-6 pound bone in turkey breast)

¼ cup butter, softened
1 clove garlic, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
½ teaspoon salt-free garlic and herb seasoning blend (such as Mrs. Dash®)
salt and ground black pepper to taste
1 (3 pound) turkey breast with skin
1 teaspoon minced shallot
1 tablespoon butter
1 splash dry white wine
1 cup chicken stock
3 tablespoons all-purpose flour
2 tablespoons half-and-half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix 1/4 cup butter, garlic, paprika, Italian seasoning, garlic and herb seasoning, salt, and black pepper in a bowl. Place turkey breast with skin side up into a roasting pan. Loosen skin with your fingers; brush half the butter mixture over the turkey breast and underneath the skin. Reserve remaining butter mixture. Tent turkey breast loosely with aluminum foil.
  • Roast in the preheated oven for 1 hour; baste turkey breast with remaining butter mixture. Return to oven and roast until the juices run clear and an instant-read meat thermometer inserted into the thickest part of the breast, not touching bone, reads 165 degrees F (65 degrees C), about 30 more minutes. Let turkey breast rest 10 to 15 minutes before serving.
  • While turkey is resting, transfer pan drippings to a skillet. Skim off excess grease, leaving about 1 tablespoon in skillet. Place skillet over low heat; cook and stir shallot in turkey grease until opaque, about 5 minutes. Melt 1 tablespoon butter in skillet with shallot and whisk in white wine, scraping any browned bits of food from skillet. Whisk in chicken stock and flour until smooth. Bring to a simmer, whisking constantly, until thickened. For a creamier, lighter gravy, whisk in half-and-half.

6 garlic cloves, smashed and peeled
2 tablespoons olive oil
1 small boneless, skinless turkey breast half (about 2 pounds)
1/4 teaspoon ground cinnamon
3/4 teaspoon ground cumin
Coarse salt and ground pepper
1/2 cup plain low-fat yogurt
2 tablespoons fresh lime juice

Steps:

  • Preheat oven to 475 degrees. On a large rimmed baking sheet, toss carrots, garlic, and 1 tablespoon oil; push to sides. Place turkey in center; rub with 1 tablespoon oil, and sprinkle with cinnamon and 1/2 teaspoon cumin. Season with salt and pepper.
  • Roast until an instant-read thermometer inserted in thickest part of turkey registers 165 degrees, 30 to 35 minutes, tossing carrots halfway through. Let turkey rest 10 minutes; thinly slice crosswise.

1/4 cup whole-grain mustard (recommended: Maille)
2 garlic cloves, minced
2 teaspoons ground cumin
1 tablespoon dried oregano
1 teaspoon allspice
2 teaspoons chili powder
1 tablespoon brown sugar
1 teaspoon extra-virgin olive oil
1 (4 1/2 to 5-pound) turkey breast, on the bone, rinsed and patted dry with paper towels
10 cipollini onions
3 medium carrots, peeled, and cut into 2-inch pieces
2 cups low-sodium chicken stock
2 tablespoons all-purpose flour
Salt and freshly ground black pepper, for seasoning

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, mix together the mustard, garlic, cumin, oregano, allspice, chili powder, brown sugar and oil. Place the turkey breast in a 9 by13-inch roasting pan. Spread the mustard mixture over the top and sides of the turkey to form a crust. Add the onions, carrots, and chicken stock to the pan. Roast for 45 minutes. Cover the pan loosely with foil and continue to bake for another 45 minutes or until an instant-read thermometer inserted into the thickest part of the breast registers 175 degrees F. Allow the turkey to rest for 20 minutes before serving.
  • Remove the vegetables and arrange on a serving platter. Remove the turkey and place on a cutting board. Pour about 1/2 cup of the pan juices into a small saucepan. Whisk in the flour until smooth. Whisk in the remaining pan juices. Bring the mixture to a simmer over medium-high heat. Cook, stirring occasionally, for 5 minutes until the mixture thickens. Season the pan juices with salt and pepper and pour into a serving pitcher.
  • To serve, slice the turkey into 1/4-inch slices. Arrange the turkey slices on the serving platter with the roasted vegetables and serve with the pan juices.

It makes a delicious addition to a Thanksgiving spread and is ideal for a smaller crowd at the table. Golden prunes are slightly sour and are commonly paired with poultry and lamb in Persian cuisine. Here they lend a welcome brightness to the sweet-tart sauce. They are typically served with the pits intact so be sure to let your guests know before they dig in.

1 whole bone-in turkey breast (about 5 pounds)
Juice of 1 lemon
2 tablespoons olive oil
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1 1/2 teaspoons ground cumin
1 1/2 teaspoons paprika
1 1/2 teaspoons ground turmeric
Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil, plus more as needed
4 cloves garlic, sliced
2 large onions, sliced
2 large tomatoes, chopped
3 tablespoons tomato paste
1 cinnamon stick
2 cardamom pods
1 cup Persian golden prunes (unpitted)
2/3 cup barberries
Cooked basmati rice, for serving, optional

Steps:

  • Pat dry the turkey breast. Gently separate the skin from the meat using your fingers. Set the turkey breast aside.
  • Combine the lemon juice, olive oil, coriander, ground cinnamon and 1 teaspoon each of the cumin, paprika and turmeric in a small bowl. Season with 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Spoon this mixture all over the turkey breast, then spread under the skin with your fingers (you may want to wear gloves).
  • Heat 1 tablespoon of the vegetable oil in a large cast-iron skillet over medium heat until hot but not smoking. Place the turkey breast skin-side down in the skillet and increase the heat to medium-high. Sear the turkey breast without disturbing until the skin is almost crispy and golden brown, 5 to 7 minutes. Using a pair of tongs, flip the turkey breast and sear the other side until golden brown, about 5 minutes. Remove the turkey breast to a plate and set it aside.
  • Reduce the heat to medium. If the skillet seems dry, add about 1 tablespoon more vegetable oil. Add the garlic and onion and saute, stirring occasionally, until starting to soften, about 10 minutes. Add the tomatoes, remaining 1/2 teaspoon each cumin, paprika and turmeric and 1/2 teaspoon salt. Stir to combine. Add the tomato paste and cook, stirring, until fragrant and darkened slightly, 2 to 3 minutes more. Add 2 cups water, the cinnamon stick and cardamom pods to the sauce, then reduce the heat to medium-low and bring the sauce to a low simmer.
  • Meanwhile, preheat the oven to 425 degrees F. Heat 1 tablespoon of the vegetable oil in a small pan over medium-low heat and saute the prunes until they're shiny and glazed on all sides, 5 to 8 minutes. Remove the prunes to a bowl and heat the remaining 1 tablespoon vegetable oil to the same small pan. Turn the heat to medium-low, add the barberries and saute until they're shiny and glazed, about 4 minutes.
  • Add the prunes, barberries and 1/4 cup of water to the tomato sauce in the large skillet and stir to combine, making sure the prunes are fully submerged in the sauce. Return the turkey to the skillet and roast in the oven until an instant-read thermometer inserted into the thickest part of the thigh (avoiding the bone) reads 165 degrees F, 1 hour 15 minutes to 1 hour 30 minutes. Let the turkey sit for 10 minutes to allow the juices to redistribute before slicing and serving with the sauce, over rice if desired.

1/4 cup canola oil
2 teaspoons chopped fresh rosemary
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme

Steps:

  • Preheat the oven to 350 degrees F.
  • Remove the legs, thighs, and wings from the turkey (reserve for Round Two Recipe).
  • In a bowl, stir together the oil, rosemary, sage, thyme, garlic powder, chile powder, red pepper flakes, and salt and pepper.
