- Heat olive oil in skillet to medium-high heat. The oil should be sizzling hot.
- Clean the mushrooms and trim if needed. Put in the hot pan cap side down and don't touch them.
- After 2-3 minutes flip the mushrooms over and cook for another 2-3 minutes. Season with salt and pepper to taste.

- Preheat the oven to 450 degrees Fahrenheit.
- Clean the mushrooms and pat them dry. Slice the mushrooms in half. In a large bowl, toss them with the olive oil, garlic powder, and kosher salt. Line a baking sheet with parchment paper and spread the mushrooms in a single layer on top.
- Bake 10 to 12 minutes until the mushrooms are tender. Serve topped with fresh herbs.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Wipe mushrooms clean with a damp paper towel and place in a bowl. Add vinegar, oil, garlic powder, salt, and pepper; stir to combine. Let sit while oven preheats.
- Place mushrooms in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes. Remove baking sheet from oven and garnish with chives.

ROASTED MUSHROOMS FOR A CROWD
We love the sauteed mushrooms from a popular restaurant chain (salty, peppery goodness). This recipe is not exactly the same, but very good and makes enough to serve a crowd. If you're looking for something good to go with steak at your next cook out, this may be it! Even better made ahead and reheated.

- Preheat oven to 400 degrees F.
- Place cleaned mushrooms in a large roaster and set aside.
- In a skillet melt the butter with the oil.
- Add minced shallots and saute until translucent.
- Add garlic, pepper, and dried thyme. Saute until fragrant and garlic is softened.
- Add wine. Bring to a boil, and allow to bubble until some of the alcohol cooks off and the wine reduces a bit.
- Mix beef bouillon powder, soy sauce and hot water. Add to skillet, stirring well.
- Allow to simmer for a minute or two to blend flavours.
- Pour mixture over the mushrooms in the roaster. Cover with the roaster lid.
- Roast in 400 degree F oven for 20 minutes, then stir. Place back in oven uncovered and roast an additional 20 minutes.
- Taste the liquid. Moisture from the mushrooms has diluted it some. Season with salt and pepper to taste.
- If you like you can strain out the mushrooms and reduce the cooking liquid by about half, then pour over the mushrooms in a serving container.

ROASTED GARLIC MUSHROOMS

- Preheat the oven to 400 degrees F.
- Add the mushrooms, melted butter, olive oil, salt, pepper, sliced garlic, rosemary sprigs and thyme sprigs to a 9-by-13-inch baking dish. Toss the ingredients together until evenly combined.
- Bake until the mushrooms are softened and slightly browned, 30 to 35 minutes. Remove the pan from the oven and discard the rosemary and thyme sprigs.
- Serve immediately or keep at room temperature until ready to serve.
MEAL PREP ROASTED MUSHROOMS

- Preheat oven to 500 degrees. Spread mushrooms on a rimmed baking sheet. Sprinkle with pancetta, bay leaves, garlic, red-pepper flakes, and rosemary. Drizzle with oil, and season with salt and pepper. Roast, rotating sheet halfway through, until golden brown around edges, about 20 minutes.
- Spoon off excess fat. Add wine and stir. Roast until wine has almost evaporated, about 5 minutes more.

ROASTED MUSHROOMS WITH GARLIC

- Heat oven to 400 degrees. In a shallow roasting pan, mix together mushrooms, 1/3 cup of the olive oil, whole garlic cloves and thyme. Season with salt and pepper to taste. Roast, stirring occasionally, until mushrooms are golden brown and just starting to crisp, about 30 minutes. Remove from the oven, and discard thyme and garlic. Arrange the mushrooms in a shallow bowl, 6 to 8 inches in diameter.
- In a small sauté pan, heat the remaining 1/3 cup olive oil until shimmering. Add grated garlic and red pepper flakes. Sauté until golden brown, and immediately add vinegar, tomato, 1 tablespoon of the parsley, and a pinch of salt. Remove from heat and immediately pour over the mushrooms.
- Garnish with the remaining 1 tablespoon chopped parsley, pimentón, and chopped cashews. Serve immediately, while bubbly and hot. If desired, serve with grilled crusty bread.
