ROBO'S SAVORY JALAPENO MOZZARELLA CHEESE COOKIES

Robo's Savory Jalapeno Mozzarella Cheese Cookies image

A very quick and super-tasty alternative to your everyday bread. Use pretzel dough instead of pizza dough for harder cookies and breadstick dough for chewier cookies with a softer middle. Serve warm.

Ingredients

1 (10 ounce) can refrigerated pizza dough, separated into 8 portions
1 large jalapeno pepper, seeded and minced, or to taste
3 ounces shredded mozzarella cheese, or as needed
coarse kosher salt

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Flatten dough portions into rounds. Separate minced jalapeno pepper into 8 portions; press each dough round into 1 portion jalapeno pepper so that peppers are imbedded in one side of the dough. Place dough, pepper-side up, on a baking sheet.
Sprinkle mozzarella cheese over the top of each dough round and top with salt.
Bake in the preheated oven until cooked through and cheese is melted, 12 to 15 minutes.

This delightful appetizer can also be made using mango chutney instead of the jalapeno jelly. Any pepper jelly will work with this recipe. Serve with water crackers.

1 lb cream cheese
5/8 lb sharp cheddar cheese, grated
4 garlic cloves
2 eggs
16 ounces jalapeno jelly

Steps:

Mix first four ingredients together with half of the jelly in a food processor or with an electric beater.
Pour mixture into greased 6- inch springform pan.
Bake at 350 degrees for 35 minutes.
Cool completely and remove from pan.
Heat remaining jelly and pour over top of cheesecake.

1 lb mozzarella cheese, shredded
1 1/2 cups mayonnaise (do not use salad dressing!)
1 cup parmesan cheese, divided
1 tablespoon fresh minced garlic (or to taste)
1/2 cup chopped black olives
1/4 cup finely chopped onion (or use 1 small onion)
Tabasco sauce (add in for more heat) (optional)
2 small fresh jalapeno peppers, divided seeded and finely chopped
1 teaspoon garlic salt

Steps:

Set oven to 350°F.
Grease an 8 x 8-inch baking dish.
In a bowl mix together shredded mozzarella cheese mayonnaise, fresh garlic, olives, onion, 1 jalapeño pepper and Tabasco (if using).
Spread the mixture into prepared baking dish.
Sprinkle the top evenly with garlic salt, then remaining jalapeño pepper.
Bake for about 20-22 minutes or until the edges are golden brown.
Serve hot or warm with tortilla chips.
