SKINNY CRISPY ROCK SHRIMP
This recipe is a skinnier version of Nobu's famous fried rock shrimp appetizer that's typically fried and doused in a creamy spicy mayo-based sauce. My version is baked and uses Greek yogurt, sriracha and sesame oil to create a healthier, yet still drool-worthy copycat!

- Preheat oven to 400 degrees.
- If making tempura batter, whisk all ingredients together well.
- For tempura shrimp: In a bowl, place dethawed rock shrimp and toss with paprika, salt and pepper. Then place shrimp into tempura batter and toss. In another bowl, place panko bread crumbs. With tongs, take a few battered rock shrimp and place into the crumbs to coat. On a sheet pan sprayed well with cooking spray, arrange shrimp into one even layer.For pre-coated shrimp: In a bowl, spray frozen shrimp well with cooking spray. Toss coated rock shrimp with paprika, salt and pepper. On a sheet pan sprayed well with cooking spray, arrange shrimp into one even layer.
- Meanwhile, in a large bowl mix together ingredients for the creamy spicy sauce, whisking in the sesame oil. Set aside.
- After 10 minutes in the oven, remove sheet pan and using tongs, flip over each shrimp. Bake for another 10 minutes.
- After another 10 minutes in the oven, remove shrimp from pan and gently place into the large bowl with the creamy sauce. Toss carefully to coat. Top with green onions and serve immediately!

- Preheat the oven to 400 degrees F. Select a casserole dish, large enough to hold the shrimp in a single layer and at least 2 inches deep (5 cm). Add rock salt to form a 1 inch bed (2.5 cm) in the pan. Set the pan in the oven and heat for 30 minutes. Mince garlic, add to mixing bowl with a good drizzle of olive oil for the marinade. Make an incision down the back of the shrimp, de-vein or remove the intestine, and add shrimp to bowl. Mix it all up. Let rest at least ten minutes. After 30 minutes, pull your roasting dish out of oven and set the shrimp on top and return to oven to roast for 2 minutes. Turn the shrimp over and set aside to let the residual heat finish the cooking on the second side. Serve warm.
ROCK SALT SHRIMP - LOW FAT VERSION
Steps:
- Soak the shrimp in warm, lightly salted water for 5 minutes. Rinse in cold water, drain and pat dry with paper towels. Lightly coat the shrimp with the cornstarch. In a small bowl, mix the salt with the freshly ground pepper and set aside. Heat 2 tablespoons in a preheated wok on medium high to high heat. When the oil is hot, add the shrimp and stir-fry until they turn pink. Remove from the wok. Clean out the wok. Heat 1 tablespoon oil in the wok. When the oil is hot, add the minced garlic, chili pepper and the salt and pepper mixture. Stir-fry until fragrant (10 - 15 seconds) and then add the shrimp back into the wok. Stir-fry to coat the shrimp in the salt and pepper mixture. Stir in the green onion or serve as a garnish with the shrimp. Each serving contains: Calories 236, 7 g Carbohydrates, 23 g Protein, 12 g Fat, 173 mg Cholesterol, 1 g Fibre, 641 mg Sodium, 286 mg Potassium. A good source of calcium and vitamin A.
ROCK SALT SHRIMP
Steps:
- Preheat an oven to 400 degrees F.
- Select a 2-inch deep casserole dish that is large enough to hold the shrimp in a single layer. Add the rock salt to form a 1-inch bed in the dish. Slide the casserole dish into the oven and heat for 30 minutes.
- Add the minced garlic and olive oil to a mixing bowl to prepare the marinade.
- Make an incision down the back of each of the shrimp. Devein or remove the intestine from each piece and add the shrimp to the marinade. Toss together to coat, and let the ingredients rest for at least 10 minutes.
- Once heated, pull your casserole dish from the oven and arrange the shrimp on the bottom in 1 layer. Return the dish to the oven, and roast for 2 minutes. Turn each shrimp over, and set them aside to let the residual heat from the pan finish cooking their second sides. Serve warm.
POPCORN ROCK SHRIMP WITH SPICY HONEY

- Chuck Hughes' golden popcorn rock shrimp served with spicy honey are the perfect game day appetizer.
- For the spicy honey: In a saucepan, on medium heat, bring the honey, garlic, peppercorn, chili flakes, smoked paprika, and salt to a boil and let simmer for 2 minutes. Let cool, strain and transfer to a squeezable bottle. Keep aside.
- For the popcorn shrimp: Preheat the deep-fat fryer to 360 degrees F.
- In a bowl, mix together the cornstarch, flour, salt and pepper. Place the eggs in a bowl add the shrimp and coat. Remove the shrimp, letting the excess egg drip back into the bowl, then add the shrimp to the cornstarch mixture. Gently add to the fryer, turning until golden. Drain on paper towels and season with salt and pepper.
- Serve immediately after frying and drizzle with the spicy honey and garnish with lemon wedges.
LOW-FAT SHRIMP AND VEGGIE STIR-FRY
This is a wonderful, light stir-fry, perfect for low-carb diets. For those who aren't restricting carbs, this is wonderful atop brown rice or Asian rice noodles (and its still low-fat!!). You can alter the veggies according to taste, or what you have on hand.

- In bowl, blend water, soy sauce, wine, cornstarch, and ginger until smooth.
- Set aside.
- Heat oil in large wok or skillet over medium-high heat.
- Stir fry garlic until softened, about 2 min.
- Add shrimp and stir fry until pink, about 4 min.
- Add broccoli, bell peppers, snow peas, corn, water chestnuts, and scallions.
- Stir fry one minute, mixing well.
- Stir sauce mixture to combine, pour over veggies.
