This refreshing gelatin mold is delicious and always a big hit! For a patriotic buffet, I add a scoop of frozen whipped topping, then place a fancy-cut strawberry and a sprinkling of blueberries for festive, red-white-and-blue color. -Anne Marie Papineau, Hanover, Connecticut

2 packages (3 ounces each) strawberry gelatin
2 cups boiling cranberry juice
1-1/2 cups club soda, chilled
1 teaspoon lemon juice
1 cup each fresh blueberries, raspberries and sliced strawberries
Lettuce leaves
Additional mixed fresh berries, optional

Steps:

  • In a large bowl, dissolve gelatin in boiling cranberry juice. Let stand for 10 minutes. Stir in club soda and lemon juice; refrigerate for 45 minutes or until partially set. , Fold in berries. Pour into a 6-cup ring mold coated with cooking spray. Refrigerate for 4 hours or until set. Unmold onto a lettuce-lined platter; fill center with additional berries if desired.

Steps:

  • Heat wine in a microwave-safe container for 1 minute, or until hot.
  • Mix sugar and gelatin into the wine and stir with a whisk until dissolved.
  • Pour mixture into molds. Add fruit if desired.
  • Refrigerate for 1 hour.
  • Enjoy!

2 cups white grape juice, chilled
60 ml rose syrup
2 tablespoons fresh lemon juice
2 drops red food coloring
1 lb mixed berry, frozen
2 (1/4 ounce) envelopes unflavored gelatin

Steps:

  • Mix one cup of white grape juice with rose syrup, lemon juice and food coloring.
  • Heat until hot.
  • Sprinkle gelatin over remaining juice and let sit for 2 minutes.
  • Pour hot liquid over gelatin and stir until completely dissolved.
  • Stir in the berries.
  • Spray a fluted mold with non stick cooking spray and fill with berry liquid.
  • Cover and refrigerate until set.
  • Unmold on serving tray and garnish with fresh mint.

With all the flavours of Turkish delight, these fragrant Middle Eastern-style puddings make a light finish to an entertaining menu

135g pack raspberry jelly
500ml double cream
1 tsp rosewater
12 raspberries , halved
drizzle of clear honey
small handful mint leaves
1 tbsp pistachio , chopped

Steps:

  • Boil a kettle. Break the jelly cubes into a jug, pour over 100ml boiling water and stir to dissolve. Gently warm the cream in a small pan, then remove from the heat and pour in the jelly mixture. Stir in the rose water, then tip the mixture back into your jug. Divide the jelly between 6 small glasses and chill for 2 hrs or until set. Can be made 1 day ahead.
  • Remove the jellies from the fridge about 20 mins before serving. Divide the raspberries between them, then add a drizzle of honey, a few mint leaves and a sprinkling of pistachios to each.

4 cups fresh or premade fruit juice (aside from mango, papaya, and pineapple, any kind -- pulpy or not -- will work)
2 envelopes (1/4 ounce each) unflavored gelatin

Steps:

  • Place 1 cup juice in a glass bowl. Sprinkle with gelatin. Meanwhile, bring remaining 3 cups juice to a boil. Pour boiling juice over gelatin-juice mixture, and stir until gelatin dissolves completely. Pour into 5-ounce juice glasses, which make great single servings. Refrigerate until firm, about 4 hours.

  • Wash strawberries, pat dry, hull and halve (if they are large). Remove any stems from blueberries; rinse berries and pat dry. Rinse blackberries and pat dry. (Do not rinse raspberries.) Put berries in a large bowl. Toss gently and transfer to an 8-by-4- inch (2-quart) loaf pan.
  • Pour 1/2 cup juice in a small bowl. Sprinkle gelatin on top and let stand and soften for 5 minutes. Meanwhile, pour 1 1/2 cups juice into a large, heat-proof bowl. Microwave for 2 minutes at full power, until hot. Microwave softened gelatin at full power for 30 seconds to dissolve it. Stir gelatin into hot juice. Stir in remaining 2 cups room-temperature juice.
  • Gradually pour 3 cups juice-gelatin mixture over berries. Chill uncovered for 30 minutes to set. Drizzle remaining juice into mold (cover all berries) and chill for at least 2 1/2 hours, until firm.
  • To unmold, place pan in hot water for 10 seconds. Remove from water; invert an oblong platter over pan and flip. Gelatin should loosen. If it doesn't, return pan to hot water. Blot any liquid with a paper towel.
