Drizzle this honey over fresh ricotta spread on toast or stir it into a mug of mild tea. It can also be used as a glaze for poultry or pork when whisked with fresh lemon juice.

Ingredients

1 cup light-flavored honey, such as clover
5 rosemary sprigs (3 inches each)

Steps:

Bring honey and rosemary to a simmer in a small saucepan. Cook for 5 minutes. Remove from heat, and let steep until cool, about 45 minutes. Remove rosemary, or leave in for a stronger flavor.

Tie 3 rosemary sprigs together with kitchen twine and use as a brush to slather this fragrant honey over everything from biscuits to chicken.

4 rosemary sprigs
1/2 cup honey
1 tablespoon unsalted butter
1 pinch each of salt and pepper

Steps:

Bring honey, butter, 1 rosemary sprig, and a pinch each of salt and pepper to a simmer in a small saucepan over medium-low heat. Remove from heat and let steep for 30 minutes before serving.
Tie remaining rosemary sprigs together. Dip the rosemary brush into the honey and use to drizzle over chicken.
