Peanut Butter Cookie Cups are made in a miniature muffin tin and filled with a Reese's chocolate peanut butter cup stuffed inside a peanut butter cookie cup. The perfect & best treat for the chocolate + peanut butter lover.

1¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1/2 cup (1 stick) butter (softened)
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
2 tablespoons milk
36 unwrapped Reese's miniature peanut butter cups

Steps:

  • Heat oven to 375 degrees. Prepare a miniature muffin tin pan and spray with cooking spray. Set aside.
  • In a small mixing bowl, add the flour, baking soda, and salt. Stir with a whisk to break up any clumps. Set aside.
  • In a larger mixing bowl, cream together the butter, granulated sugar, brown sugar, and peanut butter. Beat for 1-2 minutes until lighter in color and fluffy looking.
  • Add vanilla, egg, and milk. Beat until combined. Stir in the dry ingredients and mix by hand, with a wooden spoon just until combined.
  • Roll the cookie dough into 1" dough balls and place one in each miniature muffin tin. Cook for 7-8 minutes. Cookie cups will look puffy and lighter in color, but should NOT be browned at all on the sides.
  • Immediately after taking cookie cups out of the oven, gently press an unwrapped miniature Reese's peanut butter cup into the center of each one. Let cool in the pan for 10-15 minutes and then transfer to a wire rack to cool completely.

2¾ cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup unsalted butter ((2 sticks) room temperature)
1¼ cups dark brown sugar
¾ cup granulated sugar
2 large eggs (room temperature)
2 teaspoons vanilla extract
8 Reese's peanut butter cups (snack size) (chopped, plus extra for topping (Note 1))
1 cup Reese's Pieces candy (plus extra for topping)

Steps:

  • In a mixing bowl, combine the flour, baking soda, baking powder, and salt. Whisk to combine. Set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, add the butter, granulated and dark brown sugars. Mix together until well combined and creamy, approx. 2 minutes. Add the eggs, one at a time, and the vanilla, mixing well after each addition.
  • Slowly add in the flour mixture, mixing until just combined. Scrap down the sides of the bowl if necessary.
  • Add the peanut butter cups and Reese's pieces to the dough. Fold together.
  • Using a 2-tablespoon cookie scoop, portion the dough onto a parchment-lined baking sheet. Chill for at least 20 minutes, or as much as 24 hours.
  • Preheat the oven to 375 degrees. Place the dough 2 inches apart on a parchment-lined baking sheet. Bake for 8-10 minutes until just set in the middle. Top with extra candy if desired.
  • Cool for 5 minutes on the baking sheet before transferring to a cooling rack. Cool completely before storing in an airtight container.

prepared cookie dough
50 bite size reese peanut butter cups (the kind in the foil wrapper)
1 bag semi-sweet chocolate chips, melted

Steps:

  • The reason I did not specify how much sugar cookie dough, is because this recipe makes a million cookies, no matter which sugar cookie recipe you use.
  • The amount of cookies you get really depends on how many peanut butter cups you buy.
  • Pre-heat oven to 350F degrees.
  • Press a small amount of dough on bottom and sides of a mini muffin pan.
  • Don't make it too thin or it will be difficult to pop them out.
  • Don't make them too thick or the cookie will not be a"bowl".
  • It is best to do a practice run with your first batch to see which thickness works best.
  • Try a few thicknesses in one pan.
  • After you have pressed dough onto the sides and bottom of mini muffin pan, bake at 350 for about 10 minutes.
  • While baking, start unwrapping peanut butter cups.
  • YOU NEED TO WORK FAST NOW!
  • QUICKLY put one peanut butter cup into each sugar cookie bowl.
  • After you are done, the chocolate will be slightly melted around the edges.
  • Run a knife, or a chopstick (something skinny) around the edge of each peanut butter cup to make the ridges disapear.
  • This makes them look much nicer.
  • Remove from pan using a butter knife to"pop" them out after they have cooled for about 5 minutes.
  • Place cookies on a paper bag.
  • When cooled, drizzle with melted semi-sweet chips.

What I chose to do with mine was have assorted varieties of the peanut Butter cup, because my daughter does not like dark chocolate, only the white Chocolate It is a quick dessert idea,. Reese's has a large bag at Wal Mart with the milk chocolate, white Chocolate, and Dark Chocolate in one package. The guest usually appreciate all three varieties as well. The recipe is easy, quick & simple.

HOMEMADE VERSION
1 3/4 cup(s) all purpose flour
1/2 teaspoon(s) salt
1 teaspoon(s) baking soda
1 stick(s) butter (1/2 cup)
1/2 cup(s) granulated sugar
1/2 cup(s) peanut butter

  • HOMEMADE SCRATCH VERSION: Preheat oven to 375 degrees F. Mix flour salt & baking soda in a medium bowl, stir to mix and set aside.Add butter, sugar, peanut butter& brown sugar in a separate bowl and cream together till light and fluffy. Then add in beaten egg, and beat well till mixed.Next add vanilla and milk, and beat again till mixed.
  • Add flour mixture, mix well, until soft and smooth texture. Pinch off enough dough to form into a small ball about the sizr of a tablespoon, & place in ungreased paper lined mini muffin cup. THERE IS NO NEED TO SPRAY PAPER CUPS, THERE IS ENOUGH BUTTER IN COOKIE DOUGH.
  • NOTE: I prefer to use the variety pac of Reeses Peanut Butter cups with the dark chocolate, milk chocolate & white chocolate. Then arrange the 3 varieties in a decorative pattern on platter where you can noticiably distinguish the different varieties. I find the large Variety pac at Wal Mart.
