1 pint (2 cups) ripe strawberries, hulled
2 1/2 tablespoons sugar syrup
1 teaspoon Grand Marnier liqueur
6 orange zest strips, for garnish
1 (750-ml) bottle Prosecco, chilled

Steps:

  • Place the strawberries in the bowl of a food processor fitted with the steel blade and puree until completely smooth. Pour the liquid through a fine-mesh sieve and press to make a seedless puree. Discard the seeds. Add the sugar syrup and Grand Marnier to the puree and refrigerate until very cold.
  • When ready to serve, rub the rim of each Champagne glass with the orange zest. Pour the cold Prosecco into Champagne glasses until they're each three-quarters full. Carefully stir 2 tablespoons of the puree into each glass and serve very cold.

1 bottle rosé
ice, to serve, optional
1 lime, sliced into wedge
pink himalayan salt, to serve

Steps:

  • In a pitcher or large bowl, add tequila, lime juice, simple syrup, and rosé. Stir to combine.
  • Pour the Himalayan salt into a shallow dish. Wet the rim of the servings glasses, and dip each into the salt.
  • Add ice to each serving glass (optional), then top with the rosé margarita (rosarita).
  • Serve with a lime wedge.
  • Enjoy!

50ml reposado tequila
10ml Campari
25ml red vermouth
handful of ice
pared lemon or grapefruit zest, to garnish

Steps:

  • Put the tequila, Campari, vermouth, ice and citrus peel in a tumbler glass.
  • Stir with a cocktail spoon until the outside of the glass feels cold and the ice is well incorporated into the drink. Taste to check the dilution before serving (see tip, below).

2 Tbsp. Diamond Crystal or 1 Tbsp. plus ½ tsp. Morton kosher salt
Lime wedge (for serving)
4 oz. tequila reposado and/or mezcal
1½ oz. fresh lime juice (about 2 limes)
1 oz. Amaro Montenegro
¾ oz. agave nectar
Special Equipment
A 1-pint glass jar

Steps:

  • Pour salt onto a small plate. Rub half of rim of 2 wine glasses or tumblers with lime wedge. Gently dip rims in salt, turning slowly to coat.
  • Combine tequila, lime juice, amaro, and agave in jar. Secure lid and shake to combine. Freeze until ice-cold but not solid, at least 1 hour and up to 3 hours.
  • Transfer cocktail to a blender and add 1½ cups ice. Purée on high speed until thick and smooth. (On a hot day you may need to blend in a few more ice cubes to thicken, but keep in mind that the more you add, the more diluted the drink will be.)
  • Divide cocktail between prepared glasses.
