The Rossini is a classic Italian cocktail similar to the Bellini. Here you add strawberry puree to Prosecco for a delicious and fun drink that's great for any ocassion!

Number Of Ingredients 4

2 cups strawberries (washed and stems removed)
2 tablespoons sugar
750 ml bottle Prosecco (chilled )
strawberries for garnish (optional)

Steps:

  • Place the 2 cups strawberries and sugar in a blender or food processor. Blend on high until the strawberries are liquified. Pour the puree into a fine mesh sieve with a bowl underneath. Use a spatula to help push the strawberries through the sieve. Discard the strawberry seeds in the sieve and refrigerate the remaining puree until ready to use.
  • When ready to make the Rossinis, pour about two tablespoons of the strawberry puree into a champagne flute. Fill up the the remaining glass with Prosecco, stir, and garnish with a strawberry.

Number Of Ingredients 5

1/4 cup sugar
2 tablespoons water
3 cups hulled strawberries
2 tablespoons fresh lemon juice
1 (750 ml) bottle sparkling wine, such as prosecco or 1 (750 ml) bottle other sparkling wine, chilled

Steps:

  • Combine sugar and water in a small saucepan, stirring until sugar dissolves. Bring mixture to a boil over medium high heat. Remove from heat.
  • Place sugar mixture, strawberries, and lemon juice in a blender, process until smooth. Strain pureed mixture through a sieve into a bowl, reserving liquid. Discard solids.
  • Place 3 tablespoons strawberry mixture into each of 8 champagne flutes. Pour 1/3 cup wine into each flute.

  • Cut the tops off the strawberries and chop in half. Add the strawberries to a food processor with the caster sugar and lime juice.
  • Blitz until completely smooth then pass the puréed strawberries through a fine sieve to remove the seeds.
  • Add around 1 1/2 tbsp of strawberry puree to the bottom of a champagne flute and top (carefully) with prosecco. Make sure to add the prosecco a little at a time, the acidity from the fruit with make the prosecco froth much more than normal.
