This is a wonderful BBQ chicken sandwich with homemade sauce. A perfect party food. You can use leftovers to make pizza.

Steps:
- Place chicken in a large pot with enough water to cover. Bring to a boil, and cook until chicken comes off the bone easily, about 3 hours. Make sauce while the chicken cooks.
- In a saucepan over medium heat, mix together the ketchup, mustard, brown sugar, garlic, honey, steak sauce, lemon juice, and liquid smoke. Season with salt and pepper. Bring to a gentle boil, and simmer for about 10 minutes. Set aside to allow flavors to mingle.
- When the chicken is done, remove all meat from the bones, and chop or shred into small pieces. Place in a pan with the sauce, and cook for about 15 minutes to let the flavor of the sauce soak into the chicken. Spoon barbequed chicken onto buns, and top with coleslaw if you like.

- Mix flour, sour cream and water until blended. Add more water, 1 Tbsp. at a time, if necessary until mixture forms soft dough.
- Divide dough into 4 balls; roll out each ball into 6-inch oval on lightly floured surface.
- Melt 1 Tbsp. butter in large nonstick skillet on medium heat. Add 2 flatbreads; cook 2 min. on each side or until golden brown on both sides. Remove from skillet; cover to keep warm. Repeat with remaining butter and flatbreads.
- Add chicken to skillet; cook 6 to 7 min. on each side or until done (165°F).
- Transfer chicken to cutting board; cut into thin strips. Return to skillet. Stir in barbecue sauce; cook 2 to 3 min. or until heated through, stirring frequently.
- Top flatbreads with lettuce, cheese, chicken mixture and tomatoes.

- In a large saucepan, saute the onion, celery and garlic in butter until tender. Stir in the salsa, ketchup, brown sugar, vinegar, Worcestershire sauce, chili powder, salt and pepper. , Stir in chicken. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Serve about 1/3 cup chicken mixture on each bun. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. - For the pulled pork and Carolina sauce: Preheat the oven to 325 degrees F.
- Sprinkle the Boston butt with the Cajun spice, 1 tablespoon salt and 1 teaspoon pepper and put in a deep roasting pan. Add the diced vegetables and bay leaves, and then cover with chicken stock. Wrap with plastic wrap and tightly cover with foil. Roast until tender, 2 to 2 1/2 hours.
- Remove the pork from the stock and let cool. Remove the fat from the stock and measure out 1 cup of the stock and cooked vegetable mixture. Let cool slightly, and then put in a blender. Add the mustard, hot sauce, white balsamic, brown sugar, cumin, paprika and some salt and pepper and puree until smooth. Taste the sauce and add more salt and pepper if needed.
- Shred the pork with two forks and measure out 2 cups for the sandwiches. Put the pork in a pan and toss with 1/2 cup of the sauce. (Reserve the remaining pulled pork and sauce for another use.) Warm the mixture over medium heat, stirring and tossing, until hot. Lower the heat and keep warm.
- For the chicken: Sprinkle the chicken with the salt and pepper. In a large pan over high heat, add the oil. Add the chicken and cook until browned on both sides, 4 to 5 minutes per side.
- To assemble the sandwiches: Stack the bottom brioche buns with the chicken, sauced pork and coleslaw, and then finish with the top buns.

- Heat a grill over medium-high heat and clean and lightly oil the hot grates.
- Season the chicken breasts with salt and pepper and place on the grill. Grill the breast for 5 minutes, then flip, brush with some of the barbecue sauce, and continue to grill until cooked through, 5-7 minutes more.
- Transfer the chicken to a plate and set aside to cool slightly.

- Heat stock in shallow pan to a low simmer.
- Add chicken to stock.
- Poach chicken for 5 minutes each side.
- Remove chicken to plate to cool. Reserve stock for sauce.
- In a large bowl mix together all sauce ingredients, EXCEPT the flour.
- Add mixed ingredients to simmering stock, reserved from poaching the chicken.
- Let liquid reduce for 5 minutes.

- Place chicken into the bottom of a slow cooker and cover with water. Cook on High until it is no longer pink in the center and falls apart when pulled, about 4 hours.
- Puree onion and garlic in the bowl of a food processor until finely minced.
- Remove chicken from the slow cooker and shred meat with 2 forks. Discard cooking water.
- Return chicken to the slow cooker. Add pureed onion-garlic mixture, barbeque sauce, vinegar, salt, and pepper. Mix well and cook on High until heated through, about 10 minutes.
