We top homemade focaccia with chicken, olives and cheese for an incredible appetizer pizza. The recipe feeds a crowd, so it's great for parties.-Taste of Home Test Kitchen

1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
4 tablespoons olive oil, divided
1 teaspoon sugar
1 teaspoon Italian seasoning
1/2 teaspoon salt
3 to 3-1/2 cups all-purpose flour
4 teaspoons cornmeal
2 garlic cloves, minced
2 teaspoons dried basil
2 cups cubed cooked chicken breast
2 plum tomatoes, thinly sliced
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup shredded part-skim mozzarella cheese
2 tablespoons grated Parmesan cheese
Ranch salad dressing, optional

Steps:

  • In a large bowl, dissolve yeast in warm water. Add 2 tablespoons oil, sugar, Italian seasoning, salt and 2-1/2 cups flour. Beat on medium speed for 3 minutes or until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 40 minutes., Sprinkle cornmeal over two greased 12-in. pizza pans. Punch dough down; turn onto a lightly floured surface. Divide in half; roll each portion into a 13-in. circle. Transfer to prepared pans; build up edges slightly. Cover and let rise until doubled, about 40 minutes., Brush crusts with remaining oil; sprinkle with garlic and basil. Top with chicken, tomatoes, olives and cheeses. Bake at 400° for 22-26 minutes or until crusts are golden brown. Serve with ranch dressing if desired.

2 1/2 cups all-purpose flour, plus more for dusting
1 1/4 teaspoons instant yeast
1 teaspoon salt
Extra-virgin olive oil
1 cup water
1/2 cup marinara sauce
About 12 small (or 6 large, halved) meatballs, uncooked
8 ounces fresh mozzarella, sliced
1/4 cup grated Parmesan

Steps:

  • For the dough: In the bowl of a stand mixer, whisk together the flour, yeast and salt. Make a small well in the center and then add 2 tablespoons oil and the water. Using the paddle attachment, mix on low until combined. Remove the dough to a flour-dusted work surface and knead for a few minutes until shiny and smooth.
  • Place the dough in a lightly oiled bowl, cover with plastic wrap and set aside in a warm, draft-free place until doubled in volume, about 1 hour. Remove the dough from the bowl and gently punch it down. Coat a 10-inch cake pan with 3 tablespoons oil. Place the dough in the pan and poke it all over with your fingers. Cover again with plastic wrap and set aside in warm place until puffy, about 45 minutes.
  • For the pizza: Preheat the oven to 425 degrees F. Spread the focaccia with the marinara sauce, then scatter with the meatballs. Tear the mozzarella slices and scatter them over the meatballs. Sprinkle with the Parmesan. Cover the pan with foil and bake for 15 minutes. Remove the foil and bake an additional 5 minutes, until the cheese is golden brown and bubbling and the crust is golden.

9 inches round loaf focaccia bread
1/2 cup oil based caesar salad dressing
4 ounces roasted red peppers, from jar
3 ounces goat cheese, crumbled
1/4 cup pine nuts
1 rotisserie chicken
3 cups baby greens
1/2 pint grape tomatoes, halved

Steps:

  • Preheat oven to 400 degrees.
  • Cut focaccia loaf in half horizontally; place cut sides up on a baking sheet.
  • Combine caesar dressing and roasted red peppers in a food processor; process until smooth.
  • Drizzle 1/2 cup red pepper dressing evenly over cut sides of bread. Sprinkle with goat cheese and nuts. Bake for 6 to 8 minutes or until lightly brown.
  • Remove meat from chicken and coarsely chop. Sprinkle chicken over bottom half of bread. Top with salad greens, tomatoes and remaining dressing; cover with top half of bread.
  • Cut into 6 wedges and serve immediately.
