CHEF JOHN'S HONEY-GLAZED HAM
A great holiday ham glaze needs to have three things: wonderful flavor, gorgeous, shiny appearance, and a crispy, crackling crust you can hear across the room. I'm happy to report this easy-to-make glaze has all those things in abundance.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Pour water, star anise, and cloves into the bottom of a roasting pan. Place a roasting rack into the pan over the water, anise, and cloves; place ham on rack. Cut 1/4-inch deep slashes 1/2-inch apart lengthwise and crosswise across the top of the entire ham.
- Bake ham in the preheated oven for 20 minutes. Whisk brown sugar, honey, mustard, vinegar, black pepper, Worcestershire sauce, and cayenne pepper together in a bowl until glaze has a thick, smooth consistency.
- Brush glaze all over ham. Continue baking ham, brushing glaze on every 20 minutes, until glaze is deep golden and ham is heated through, about 2 hours 10 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).
- Use a kitchen torch to heat the glaze on the ham until it is crispy and caramelized, 2 to 5 minutes.

HONEY GLAZED HAM
This ham tastes very much like the famous honey baked ham but costs much less, and there's no need to fight the crowds at holiday time. You can even buy the ham presliced to make it easier and more like the original. It is very good. (I do this while preparing the rest of the meal in the kitchen so that I don't forget to baste!)

- Preheat oven to 325 degrees F (165 degrees C).
- Score ham, and stud with the whole cloves. Place ham in foil lined pan.
- In the top half of a double boiler, heat the corn syrup, honey and butter. Keep glaze warm while baking ham.
- Brush glaze over ham, and bake for 1 hour and 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.

HONEY MUSTARD GLAZED HAM RECIPE BY TASTY
Here's what you need: onion, garlic, apple cider vinegar, stone ground mustard, orange juice, whole cloves, picnic ham, honey, dijon mustard, worcestershire sauce, brown sugar

Steps:
- Preheat oven to 400°F (200°C).
- Add the chopped onion, garlic cloves, apple cider vinegar, mustard, orange juice, and cloves to a large roasting pan, stirring to combine.
- Place the ham on the roasting rack over the liquid.
- Trim off tough outer skin, then score the remaining fat in a crosshatch pattern. Cover the entire roasting rack with aluminum foil and bake for 1 hour.
- Remove the ham from the oven, and remove the foil. Baste the ham with the liquid, then remove the rack from the roasting pan and set aside.
- Remove all the whole cloves from the remaining liquid in the pan. Pour the remaining liquid into a pot, along with the honey, Dijon mustard, Worcestershire sauce, and brown sugar. Whisk to combine.
- Bring the mixture to a boil over medium high heat, then simmer until thick and reduced, about 10 minutes.
- Brush the glaze on to the ham then transfer back to the roasting rack.
- Bake the ham for 30-45 minutes, or until the glaze is caramelized and the ham reaches 145°F (65°C).
- Slice the ham, and serve.

Including shots of a glistening ham with a crackly coating. Your rotisserie can help you to achieve the same crispy coating, and for a lot less than that ham from the store. Basting with a combination of honey and raw sugar during the last 30 minutes of cooking time will give you that delicious, crunchy glaze

Steps:
- Load the ham onto the spit rod assembly and roast until an instant-read thermometer inserted into the thickest part of the ham registers 160 degrees, about 13 minutes per pound.
- While the ham is cooking, combine the glaze ingredients in a small bowl and stir until smooth.
- About 30 minutes before the ham is done, stop the machine and brush the ham with the honey glaze.
- Then sprinkle the sugar crystals evenly over the glaze.
- Restart the machine and continue roasting.
- Remove the ham from the spit rod, being careful not to knock off any of the crust.
- Cover loosely with aluminum foil and allow it to rest for 10 minutes before carving.

- One hour before cooking, remove the ham from its wrapper and pat dry with paper towels. Cut the rind of the ham in a 1 inch diamond pattern, cutting about 1/4 inch deep. Skewer the ham on the rotisserie spit, securing it with the spit forks. Let the ham rest at room temperature until it is time to grill.
- Simmer the glaze ingredients over medium heat, stirring often, until the butter melts. Remove the glaze from the heat and set it aside until it is time to glaze the ham. Reheat the glaze right before using.
- Set the grill up for indirect medium-low heat (300°F) with the drip pan in the middle of the grill. For my Weber kettle I light a half-full chimney starter of charcoal, about 50 coals. When the coals are covered with gray ash, I pour the charcoal in two equal piles on the sides of the grill, and put the drip pan in the middle, between the piles.
- Put the spit on the grill, start the motor spinning, and make sure the drip pan is centered beneath the ham. Close the lid and cook the ham until it reaches 135°F in its thickest part, about 3 hours for a 10 pound ham. (It should take about 18 minutes per pound of ham, but thickness matters more than weight, so check the temperature every hour.) During the last half hour of cooking, brush the ham with the reheated glaze every ten minutes. If you are cooking with charcoal, add 14 fresh coals every hour, splitting them between the two piles of lit charcoal.
