I prefer stew meat instead of ground beef, but either could be used. Frozen mixed vegetables can reduce preparation time. I usually make extra mashed potatoes for a meal the day before and save them for this.

1 lb stew meat
to taste oil, For Browniing Meat
1 clove garlic
1 1/2 cups beef broth
1/2 teaspoon Lou Price's Cajun Seasoning
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper, coarsely ground
4 cups vegetables
1 cup onion, chopped
1/2 cup water
1 tablespoon brown gravy mix
2 lbs mashed potatoes
1 tablespoon chives, chopped
4 ounces mozzarella cheese

Steps:

  • Brown meat over medium high heat. Add garlic and saute 30 seconds (if vegetables to be used cook quickly, add onion with garlic and saute until tender). Add broth and spices to meat and simmer covered for 30 min.
  • Chop veggies.
  • Add onions and veggies (peas, carrots, green beans, celery, corn, your choice), simmer until tender.
  • You may have to add vegetables at different times so that they are all done at the same time depending on the vegetables chosen.
  • Mix 1/2 cup water and gravy mix in bowl.
  • Add to mixture and simmer 5 min.
  • Mix chives and taters.
  • Place meat mixture in bottom of 2 1/2 quart casserole dish.
  • Top with taters.
  • Sprinkle with cheese and bake at 375: for 10 min.
  • Note: This can be cooked in one dish if you use a cast iron chicken fryer or Dutch oven.
  • Also tastes good with elk meat.

Extra-virgin olive oil, as needed
2 pounds boneless lamb shoulder or leg, cut into 1/2-inch dice
Kosher salt
1/2 cup all-purpose flour
3 carrots, peeled and cut into 1/4-inch dice
3 ribs celery, cut into 1/4-inch dice
2 large leeks, white part only, cut into 1/2-inch dice
2 cloves garlic, smashed and finely chopped
1/4 cup tomato paste
1 cup stout beer, such as Guinness
3 to 4 cups chicken stock
2 bay leaves
1 bundle fresh thyme
2 pounds Yukon gold potatoes, cut into 1-inch dice
3/4 to 1 cup heavy cream
2 to 3 tablespoons cold butter
1 cup frozen peas

Steps:

  • Coat a wide pan with olive oil and bring to a medium-high heat. Sprinkle the lamb with salt and toss with the flour.
  • Add the lamb to the pan and brown well on all sides. Remove the lamb from the pan and reserve. Ditch the oil in the pan and add a splash new olive oil. Add the carrots, celery and leeks to the same pan. Season the mixture with salt and cook, stirring frequently until the vegetables are soft and very aromatic, 8 to 10 minutes. Add the garlic and cook 2 to 3 minutes more. Add the tomato paste and cook until the tomato paste starts to brown, 2 to 3 minutes.
  • Add the beer and cook until it reduces by half. Return the lamb to the pan. Add enough stock to just cover the surface of the lamb. Taste and season with salt if needed. Toss in the bay leaves and thyme bundle. Bring the stock to a boil and reduce to a simmer. Partially cover and simmer until the lamb is tender, about 1 hour. When the stock level reduces, replace with more to keep the meat submerged.
  • Place the potatoes in a medium saucepan and cover by 1 inch with tap water. Season the water with salt and bring the water to a boil. Boil the potatoes until they are fork tender, about 15 minutes. Drain the water from the potatoes and pass them while they are still hot through a food mill. In a small saucepan over medium-high heat, bring the cream to a boil. Beat the cold butter and hot cream into the pureed potatoes. Taste and season with salt if needed. The potatoes should be creamy and very flavorful.
  • Remove the lid from the lamb and add the peas. Simmer for 15 minutes more to allow the stock level to reduce. Taste and adjust the seasoning if needed. When done, the lamb mixture should be thick and stew-like. Remove the bay leaves and thyme bundle and discard.
  • Preheat the broiler.
  • Transfer the lamb to a wide, flat flameproof baking dish. Spread the mashed potatoes over the lamb mixture in an even layer. Place the baking dish under the preheated broiler. Broil until the potatoes are golden brown and crispy.

2 lbs eye of round roast
1 tablespoon vegetable oil
3 garlic cloves, minced
1 teaspoon dried thyme
salt and pepper
1 1/2 cups water
1/4 cup all-purpose flour
3 cups beef stock
1 tablespoon vegetable oil
1 large onion, chopped
1 teaspoon dried thyme
1 1/2 cups reserved gravy
7 cups cubed peeled potatoes (about 2 lb/1 kg)
1 large carrot, peeled
1 cup buttermilk or 1 cup milk
4 teaspoons butter
salt and pepper
1 cup frozen peas

Steps:

  • Place roast on rack in roasting pan. Combine oil, garlic, thyme, salt and pepper; spread all over top and sides of roast. Pour 1-1/2 cups (375 mL) water into pan.
  • Roast in 500°F (260°C) oven for 30 minutes. Reduce heat to 275°F (140°C); roast until thermometer inserted in centre registers 150°F (65°C) for medium-rare, about 1-1/4 hours, or until desired doneness. Transfer to cutting board. Tent with foil; let stand for 15 minutes before carving half of the roast into slices.
  • Meanwhile, skim fat from pan juices; using flat whisk, whisk flour into juices. Place pan over medium-high heat; cook, whisking, for 1 minute. Pour in stock; bring to boil, whisking and scraping up any brown bits. Reduce heat and simmer until thickened, 2 minutes. Strain; serve all but 1-1/2 cups (375 mL) with sliced beef.
  • SHEPHERD'S PIE: Cut remaining roast into large cubes; coarsely chop in food processor and set aside.
  • In large nonstick skillet, heat oil over medium-high heat; cook onion and thyme until softened and golden, about 5 minutes. Add reserved gravy. Stir in chopped beef; simmer for 2 minutes.
  • In saucepan of boiling salted water, cover and cook potatoes and carrot until tender, about 8 minutes. Remove carrot; dice and set aside. Drain potatoes and return to dry saucepan; mash together with buttermilk, butter, salt and pepper until smooth.
  • Scrape beef mixture into 8-inch (2 L) square glass baking dish. Cover with carrots and peas; spread mashed potatoes over top. (Make-ahead: Cover and refrigerate for up to 24 hours; add 20 minutes to baking time.) Bake in 400°F (200°C) oven until filling is bubbly and potatoes are golden, about 40 minutes. 4 servings.

1 tablespoon kosher salt
¼ cup milk
3 tablespoons salted butter, divided
1 cup shredded white Cheddar cheese
¼ cup sour cream
1 large egg yolk
2 teaspoons kosher salt, divided
1 teaspoon ground black pepper, divided
1 tablespoon olive oil
1 cup diced onion
1 cup diced carrot
1 pound ground lamb
1 pound ground beef sirloin
3 tablespoons all-purpose flour
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
1 cup beef stock
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 cup frozen green peas
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Place potatoes in large saucepan and add enough water to cover by 2 inches. Stir in 1 tablespoon salt and place pot over medium-high heat; bring to a boil. Cook until potatoes are fork tender, about 10 minutes. Turn off the heat and drain.
  • Return potatoes to the hot pan and set over the same burner. Add milk and 2 tablespoons butter; allow butter to melt from the residual heat. Mash potatoes with a potato masher until smooth. Stir in Cheddar cheese, sour cream, egg yolk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside while you prepare the filling.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
  • Heat olive oil and remaining 1 tablespoon butter in a large skillet over medium-high heat. Add onion and carrot and cook, stirring constantly, until onion begins to turn translucent, about 5 minutes.
  • Add lamb and beef and cook, crumbling with a spoon and stirring often until browned, about 5 minutes. Sprinkle meat mixture with flour, remaining salt and pepper, rosemary, and thyme. Cook, stirring constantly, for 2 minutes.
  • Add beef stock, tomato paste, and Worcestershire; cook, scraping any flavorful bits from the bottom of the skillet. Bring mixture to a simmer.
