2 cups pomegranate juice
1 cup orange juice
1 teaspoon dried rosemary
3 garlic cloves, smashed
Coarse salt and ground pepper
2 teaspoons red-wine vinegar
4 bone-in chicken breast halves (12 to 14 ounces each)

Steps:

  • Preheat oven to 425 degrees, with rack in top third. Line a rimmed baking sheet with aluminum foil; set aside.
  • Make glaze: In a large skillet, combine juices, rosemary, garlic, and a pinch each of salt and pepper. Boil over high heat until reduced to 1/2 cup, about 15 minutes, stirring and scraping down sides of skillet with a wooden spoon or heatproof spatula. Strain through a fine-mesh sieve into a liquid-measuring cup; stir in vinegar. Reserve cup glaze for serving.
  • Meanwhile, season chicken with salt and pepper. Place, skin side up, on prepared baking sheet; bake 15 minutes, then brush chicken with glaze. Continue baking, brushing with glaze every 5 minutes, until chicken is cooked through, 15 to 20 minutes (an instant-read thermometer inserted in the thickest part, avoiding bone, should register 165 degrees). Let rest 5 minutes; drizzle with reserved glaze. Serve.

1 tablespoon light brown sugar
2 tablespoons water
1 teaspoon cornstarch
1 tablespoon grainy mustard
1 tablespoon unsalted butter
4 (4-oz.) boneless, skinless chicken thighs
1 teaspoon kosher salt, divided
1 teaspoon black pepper, divided
2 tablespoons olive oil, divided
3 cups cooked quinoa
1/4 cup unsalted roasted pistachios
1/4 cup pomegranate arils
1 tablespoon chopped fresh mint
Fresh mint leaves

Steps:

  • Bring pomegranate juice and sugar to a boil in a small saucepan over high, and cook, whisking occasionally, until reduced by half, about 16 minutes. Whisk together 2 tablespoons water and cornstarch in a small bowl; add to pomegranate mixture. Boil, whisking constantly, until thickened, about 1 minute. Remove from heat; whisk in mustard and butter until smooth.
  • Meanwhile, heat a grill pan over medium-high. Season chicken with 3/4 teaspoon salt and 3/4 teaspoon pepper. Brush 1 tablespoon oil on pan. Cook chicken until browned, about 6 minutes. Turn and cook until a thermometer inserted in thickest portion registers 165°F, about 6 minutes, turning if necessary to prevent burning. Remove from pan; cover to keep warm.
  • Place quinoa, pistachios, pomegranate arils, chopped mint, remaining 1 tablespoon oil, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper in a large bowl; stir until combined. Divide quinoa mixture and chicken among 4 plates. Spoon 2 tablespoons pomegranate sauce over each serving; garnish with mint leaves.

10 garlic cloves, forced through a garlic press or minced
1 Tbsp grated peeled ginger
2 tsp paprika
1 1/2 tsp ground coriander
3/4 tsp ground cumin
Rounded 1/4 tsp cayenne
1 1/2 Tbsp olive oil or vegetable oil
2 cups bottled unsweetened pomegranate juice
1 cup apricot jam (12 oz.), forced through a sieve if chunky
2 Tbsp molasses (not robust or blackstrap)
2 whole chickens (about 3 1/2 lb each), cut into 10 serving pieces (see cook's note below)

Steps:

  • Cook garlic, ginger, spices, and 1 tsp. kosher salt in oil in a small saucepan over medium heat, stirring, until fragrant, about 1 minute. Add pomegranate juice and boil until reduced to 1 cup, 12 to 19 minutes. Remove from heat, and then add jam and molasses and stir until jam has melted. Cool (it will thicken slightly). Transfer 3/4 cup sauce to a bowl and reserve for serving.
  • Prepare grill for indirect heat cooking over medium hot charcoal (medium heat for gas).
  • Pat chicken dry and season all over with 4 tsp. kosher salt. Oil grill rack, then grill chicken (in batches if necessary) skin side down first, directly over coals (covered only if using gas grill), turning once, until browned, 4 to 5 minutes. Move to area with no coals underneath (or over turned off burner for gas) and brush with some of sauce. Continue to grill, partially covered for charcoal (covered for gas), turning and brushing with sauce occasionally, until cooked through and well-glazed, 7 to 8 minutes for breasts, 15 to 20 minutes for dark meat.

Of all the condiments in my overstuffed pantry, pomegranate molasses ranks among the most intense. A staple in countries across the Middle East, it is made from pomegranate juice simmered until nearly as thick and dark as espresso, but with even more punch. Both pickle-sour and syrupy sweet, it's as pungent as chile paste but with the vivid bristle of tart red fruit instead of capsicum heat. In Middle Eastern cuisines, pomegranate molasses is usually tossed into salads, stirred into stews and sprinkled on vegetables and fish. In my kitchen, I especially adore it as a way to perk up mild meats like chicken. A small drizzle after you're done grilling the meat can add just the right note of sweet-tart complexity to make everything shine.

Kosher salt
1 teaspoon sweet paprika
1/2 teaspoon ground allspice
Black pepper

7 large garlic cloves, finely chopped

Steps:

  • In a small bowl, combine cumin, 1 1/2 teaspoons kosher salt, paprika, allspice, 1/2 teaspoon black pepper and cayenne. Place chicken in a large bowl and toss with spice mixture, 2 tablespoons extra virgin olive oil, thyme, and 6 of the chopped garlic cloves. Let rest for 30 minutes to an hour at room temperature or as long as overnight in the refrigerator. Bring to room temperature before grilling.
  • Prepare the grill for indirect heat. For a gas grill, set one side to high. For a charcoal grill, mound coals on one side, leaving the other side empty. Brush off garlic and herbs and put chicken pieces on the unlighted or empty portion of the grill. Close cover and cook until chicken is cooked through, about 10 minutes a side. Transfer to a plate and brush generously with 2 tablespoons pomegranate molasses.
  • Mash remaining garlic with a pinch of salt until it forms a paste. Toss the tomatoes with garlic paste, remaining 2 tablespoons extra virgin olive oil, 2 teaspoons pomegranate molasses and basil leaves. Season with additional salt, to taste. Serve alongside chicken.

1/4 cup lemon juice
1/4 cup crisco canola oil
2 garlic cloves, minced

  • GLAZE: Combine first 6 ingredients. Reserve.

  • CHICKEN: Heat oil on medium-high in a large deep skillet. Brown chicken, about 2 minutes per side. Remove from skillet. Reserve.
  • Add carrots and sliced onion to skillet. Cook on medium heat 5 minutes, stirring often. Add reserved glaze mixture. Bring to a boil, lower heat to medium-low and simmer for 5 minutes. Add back browned chicken. Cook for an additional 5 minutes, turning occasionally to coat with glaze.
  • Remove chicken and place on clean dish. Add reserved cornstarch mixture into skillet; stir to combine well.
  • Bring glaze to boil and allow to thicken. Add pomegranate seeds and place chicken back in skillet and turn to coat with glaze. Serve on rice.

1-½ tightly-packed teaspoons fresh thyme leaves
2 large cloves garlic
1/4 medium onion
1 tablespoon good tasting extra-virgin olive oil
2-¼ to 2-½ pounds boneless chicken thighs, or boneless chicken breasts
Salt and fresh ground black pepper
Cooking and Sauce:
3 tablespoons good tasting extra-virgin olive oil
2 large bay leaves
1 thick slice bacon, finely chopped (or more to taste)
¼ cup dry white wine
1-¼ cups unsweetened pomegranate juice (make sure the juice isn't sweetened)
2 generous pinches dark brown sugar
2 tablespoons pine nuts, or coarse chopped whole almonds, toasted
1 tightly-packed tablespoon Italian parsley leaves, finely chopped

Steps:

  • 1. If possible, flavor the chicken a day ahead. Mince together in a food processor the thyme, garlic, and onion with the 1T of oil. Rub seasoning over chicken, dusting lightly with salt and pepper. Stack pieces one atop the other, cover, and refrigerate until 30 minutes before cooking. Or just toss the chicken with the seasoning and set aside while you prep the rest of the ingredients. 2. About 20 minutes before serving, line up all the other ingredients. Heat 3 T oil in a 12-inch straight-sided sauté pan over medium high. Spread the chicken pieces out in the pan with all their seasonings and the bay leaves. Keep them from touching. Brown on both sides, 3 to 4 minutes per side. 3. Turn heat to medium low, sprinkle the meat with the bacon, and cook 10 minutes, turning once or twice, or until pieces are just firm when pressed. Check with an instant reading thermometer inserted in the center of a piece for a reading of 165° to 170°F. Transfer the chicken to a serving platter and keep warm. 4. Make the pan sauce by setting the pan back over medium high heat. Stir in wine, simmering to almost nothing while scraping up brown glaze from the bottom of the pan. Add 1 cup of the pomegranate juice and the sugar. Reduce by two-thirds, stirring often. Lower heat to medium- low, return the chicken to the pan, coating pieces with the sauce, and sprinkling with the last ¼ cup of pomegranate juice. 5. Cover and heat through for just 2 minutes. Serve immediately, arranged on a hot platter, napped with the sauce, and sprinkled with the nuts and parsley. THOUGHTS FROM LYNNE Don't add the wine and the pomegranate juice to the pan at once, get it hot and then use that as the sauce. Why not? Because by boiling down the wine, you get rid of most of its alcohol while building deep flavor layers. The same thing happens with boiling down the pomegranate juice... or vinegars, broth, fruit juices, etc. Boil down to almost nothing--you can always dilute if need be
