1 (3 ounce) box cranberry gelatin
2 (3 ounce) boxes raspberry gelatin powder
3 cups boiling water
1 1/2 cups cold water
1 lb fresh cranberries (ground or finely chopped)
2 apples, cored and diced
2 oranges, peeled and sections cut into small pieces
1 (14 ounce) can crushed pineapple, drained
1 1/2 cups granulated sugar
1 cup pecans, chopped

Steps:

  • Combine gelatin mixes and boiling water in a medium bowl. Stir until all granules are dissolved.
  • Stir in cold water and set aside.
  • In a large mixing bowl, combine all remaining ingredients stirring to distribute evenly.
  • Stir gelatin mixture into the fruit mixture.
  • Pour salad into a large serving container or gelatin molds. (As written, this recipe will fill 3 Tupperware gelatin molds).
  • Chill at least 6 hours to overnight.
  • Can be made up to 3 days in advance.

2 cups sugar
1 scant cup water
1 quart fresh cranberries
15 large marshmallows, cut up
1 large package of lemon jello
1 cup cold water
1 cup nuts, chopped
1 cup apple, chopped
1 cup celery, chopped

Steps:

  • Boil the first three ingredients together for 5 minutes. Add the marshmallows and the jello. Stir until the marshmallows have dissolved. Let it cool. When it is cool, add the cup of cold water, nuts, apples and celery. Pour into a 9" square dish and refrigerate until solid and ready to serve. (I usually make this in a clear, square glass dish because it looks pretty from the sides. I serve it cut into small squares because it seems nicer to me than a big glop from a spoon.)

1 package (10 ounces) frozen sweetened raspberries
1-1/2 cups sour cream
1 package (3 ounces) cherry gelatin
1 can (20 ounces) crushed pineapple, drained
1 can (14 ounces) whole-berry cranberry sauce
Mayonnaise and mint sprigs, optional

Steps:

  • Dissolve raspberry gelatin in 1 cup boiling water. Add raspberries and stir until berries are thawed and separated. Pour into a 13-in. x 9-in. dish; chill until set. , Carefully spread with sour cream; chill. Dissolve cherry gelatin in remaining boiling water. Add pineapple and cranberry sauce; mix well. Allow to thicken slightly. , Carefully spoon over sour cream mixture; chill. If desired, garnish with mayonnaise and mint.

1 (3 ounce) package raspberry flavored Jell-O® mix
2 cups boiling water
1 (10 ounce) package frozen raspberries
1 pint sour cream
1 (3 ounce) package cherry flavored Jell-O®
1 (8 ounce) can crushed pineapple, drained
1 (16 ounce) can whole cranberry sauce

Steps:

  • Dissolve raspberry gelatin in 1 cup hot water. Add frozen raspberries, and stir until well mixed. Pour into a glass bowl. Refrigerate until almost firm, about 30 to 60 minutes..
  • Spread sour cream over firm gelatin. Refrigerate.
  • Dissolve cherry gelatin in 1 cup hot water. Stir in crushed pineapple and cranberry sauce. Chill until partially set, about 20 to 40 minutes.
  • Spoon cherry gelatin mixture over sour cream layer. Chill until firm, another hour or two.

1 cup orange juice
1 cup diced peeled apple
1 cup chopped celery

This is another Jello salad but one that I must make for Thanksgiving and Christmas or anytime that we have roast turkey. I going to provide the recipe as I found it. But as we are diabetic, I make the cranberry sauce from scratch so that I can control the sugar and I use sugar free jello as well. I only posting so that I do not lose the recipe, I got the recipe from the internet some years ago so I can not tell you what site the recipe came from for sure. I also did not copy the serving sizes and how much the recipe makes so I have guessed from my own experience. If I am off greatly, I am sorry.

3 ounces raspberry Jell-O gelatin
2 cups boiling water
10 ounces frozen raspberries
1 pint sour cream
3 ounces cherry Jell-O
8 ounces canned crushed pineapple (drained)
16 ounces canned whole cranberry sauce

Steps:

  • 1) Dissolve raspberry jello in one cup of boiling water. Add the frozen raspberries, stir until well mixed. Pour into a large glass bowl. Refrigerate until almost firm about 30 minutes but maybe as long as 60 minutes. ( I have never had to wait 60 minutes but this is what the recipe states.).
  • 2) Spread sour cream over firm Jello.
  • 3) In another bowl, dissolve cherry Jello in one cup boiling water. Stir in crushed pineapple ( drained) and cranberry sauce. Chill 20 to 40 minutes until only partially set, Spoon cherry mixture over the sour cream layer in the first bowl and chill for another hour or two.
