SIMPLE LAVASH CRACKERS



Simple Lavash Crackers image

Lavash crackers are simple sheet pan crackers made with just a few ingredients and are very easy to roll out and make.

1 cup all-purpose flour*
2 cups whole wheat flour
3/4 teaspoon salt
1 cup warm water
1/3 cup extra-virgin olive oil, plus extra for brushing
1 large egg, beaten
2 tablespoons sesame seeds
2 teaspoons sea salt or kosher salt
1 teaspoon coarsely ground black pepper

Steps:

  • Using a stand mixer with a dough hook attached, add the flours and salt to the bowl. Mix on low to combine. Slowly add the water and the olive oil while the mixer is running and knead until a smooth dough forms, 7 to 9 minutes. Turn the dough onto a lightly floured surface and knead by hand to form a smooth ball. Cut the ball into 4 even pieces, brush each ball with olive oil, and cover with plastic wrap. Let the dough rest for 1 hour.
  • Adjust the oven racks to the upper-middle position and the lower-middle position and heat the oven to 425 degrees. Lightly coat two large (about 18 by 13 inches) rimless baking sheets (or invert one) with cooking spray.
  • Working with two pieces of dough (keep the other two covered), shape one piece of dough into a rectangle and then put it on the baking sheet. Use a rolling pin and your hands to roll and stretch the dough evenly to the edge of the baking sheet. Use a fork to poke holes in the dough ever 2 inches. Brush the dough with a beaten egg and then sprinkle each piece of dough with 1 1/2 teaspoons sesame seeds, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Gently press the seasonings into the dough with your hands to help them adhere. Repeat with second piece of dough on a second baking sheet.
  • Bake crackers until deeply golden brown, 15 to 18 minutes, switching and rotating the sheets halfway though baking. Transfer the crackers to wire rack to let cool. Let the baking sheets cool completely and repeat with remaining dough. Break cooled lavash into large crackers and serve. Crackers can be stored at room temperature for up to 2 weeks.

Everything Lavash Crackers image

The popular bagel seasoning of poppy seed, sesame seed, onion, and garlic flakes turns super crispy crackers into a knockout addition to your cheese board and are so easy to make. We love the rustic look of large shards, but you can also cut the rolled dough into rectangles before baking. Keep the dough rises to just 10 minutes each, otherwise the texture of the crackers may be chewy rather than crisp.

1 1/4 cups lukewarm water (100°F to 110°F)
1 (1/4-oz.) pkg. active dry yeast
17 ounces bread flour (4 1/2 cups)
1/4 cup olive oil
2 tablespoons honey
1 1/2 teaspoons kosher salt, divided
Cooking spray
2 tablespoons toasted sesame seeds
4 teaspoons poppy seeds
4 teaspoons dried minced onion
4 teaspoons dried minced garlic
1 large egg white, whisked

Steps:

  • Preheat oven to 325°F.
  • Place 1 1/4 cups water and yeast in the bowl of stand mixer fitted with dough hook; let stand 10 minutes or until foamy. Add flour, oil, honey, and 1 teaspoon salt to yeast mixture; beat at medium-low speed 10 minutes or until a supple dough forms. Place dough in a bowl coated with cooking spray; cover with plastic wrap.
  • Let dough rise in a warm place (80°F to 85°F), free from drafts, 10 minutes or until 1/4 larger in size. Divide into 3 equal portions. Cover with plastic wrap; let rise 10 more minutes or until 1/4 larger in size.
  • Combine remaining 1/2 teaspoon salt, sesame seeds, poppy seeds, onion, and garlic. Flip a baking sheet over so that the bottom is facing up; coat with cooking spray. Roll 1 dough portion to an 18- x 12-inch rectangle on a lightly floured work surface (keep remaining dough portions covered to prevent drying). Place dough on prepared pan. Brush with egg white; sprinkle with 2 tablespoons sesame seed mixture, pressing to adhere.
  • Bake at 325°F for 25 minutes or until crisp. Cool on pan 15 minutes; place on a wire rack, and cool completely. Repeat with remaining dough, egg white, and seed mixture. Once completely cool, break crackers into medium pieces.

1 cup plain/all purpose flour (150g)
¼ tsp fine salt (plus extra for sprinkling)
3 tbsp olive oil (divided)
¼ cup water (plus more if needed)
1 tsp za'atar spice blend (see notes)
¼ tsp ground cumin

Steps:

  • Preheat oven to 190c (375F) and set aside 2 baking trays (see notes).
  • Combine za'atar (1 tsp) and ground cumin (¼ tsp) in a small bowl and set aside.
  • In a medium size bowl, combine plain (all purpose) flour (1cup/150g) and salt (¼ tsp), making a well in the centre.
  • Add olive oil (2 tbsp) and water (¼ cup) to the well, and mix gradually until you have a shaggy dough (if it looks a little dry add more water 1 tsp at a time). Still in the bowl, use your hands to bring this shaggy dough into a rough ball then turn the dough ball out onto a lightly floured surface.
  • Knead the dough slightly to make it more uniform, about 10-15 strokes is all it should need.
  • Divide this ball of dough into three even-ish portions.
  • Working with one portion at a time, roll out the dough as thinly and evenly as you can - about 1-2 mm (1/18") thick. See images in the post above.
  • Using a sharp pizza cutter, cut dough into your desired shapes (long strips, squares etc) then place the crackers on a baking tray. You don't want them to overlap, but they also won't spread as they cook.
  • Using a pastry brush, brush the remaining olive oil (1 tbsp) evenly over the surface of the crackers, then sprinkle them evenly with combined za'atar and cumin.
  • Finally sprinkle with fine salt to taste and bake for 6-10 minutes, or until golden brown. Allow to cool completely on baking tray.

This is identical to the cracker bread sold at delis in large grocery stores that costs six dollars for three big rounds. You can make it for pennies! I fell it love with it as an appetizer with Harvarti cheese melted on it but with the price of the cheese and lavash we didn't have it much.

1 cup lukewarm water
¼ cup whole wheat flour
1 (.25 ounce) envelope active dry yeast
1 teaspoon salt
3 cups all-purpose flour

Steps:

  • In a large bowl, stir together the water, whole wheat flour, and yeast until moistened. Mix in the salt and 1 cup of all-purpose flour. Gradually mix in the rest of the flour using a mixer with a dough hook attachment or wooden spoon.
  • When the dough comes together, knead in your mixer or on a floured surface for 8 to 10 minutes to make an elastic ball. Add more flour or water if needed to keep dough from getting sticky or too stiff. Pour a little bit of oil in the bowl and turn the dough to coat. Cover and let rise in a warm place until doubled in size, about 1 hour.
  • Punch down the dough and divide into 30 pieces about the size of small walnuts. Rolling the dough into a long log helps to divide it evenly. Roll each piece into a ball and cover with a damp kitchen towel for 30 minutes to rest.
  • Preheat the oven to 500 degrees F (260 degrees C). Place a baking sheet on the center rack of the oven so it can preheat at the same time. Do not grease.
  • Roll each ball into a circle about 8 inches across. The dough should be paper thin, almost translucent. If they are too thick, they will bubble up like pita breads.
  • Pull out the oven shelf and place as many crackers on your baking sheet as you can fit, 2 or 3. Close the oven and bake for about 3 minutes. The crackers should be lightly browned on the top with small bubbles. You may have to adjust your thickness for the next batch.

This recipe can easily be multiplied to make a crowd-pleasing punch for your next shower, party, brunch, etc. The brands listed are those that Ruby Tuesday lists on their drink menu (how nice of them to tell us what is in their drink so that we can come home and make it ourselves!)

Here's a simple formula for making snappy Armenian-style crackers, perfect for breadbaskets, company, and kids. Lavash, though usually called Armenian flatbread, also has Iranian roots and is now eaten throughout the Middle East and around the world. It is similar to the many other Middle Eastern and North African flatbreads known by different names, such as mankoush or mannaeesh (Lebanese), barbari (Iranian), khoubiz or khobz (Arabian), aiysh (Egyptian), kesret and mella (Tunisian), pide or pita (Turkish), and pideh (Armenian). The main difference between these breads is either how thick or thin the dough is rolled out, or the type of oven in which they are baked (or on which they are baked, as many of these breads are cooked on stones or red-hot pans with a convex surface). Some of the breads form a pocket like a pita bread, and some, like the injera of Ethiopia and Eritrea, are thicker and serve as sponges to soak up spicy sauces. The key to crisp lavash, which is becoming one of the most popular of these flatbread variations, is to roll out the dough paper-thin. The sheet can be cut into crackers in advance or snapped into shards after baking. The shards make a nice presentation when arranged in baskets.

Number Of Ingredients 7

1 1/2 cups (6.75 ounces) unbleached bread flour
1/2 teaspoon (.13 ounce) salt
1/2 teaspoon (.055 ounce) instant yeast
1 tablespoon (.75 ounce) honey
1 tablespoon (.5 ounce) vegetable oil
1/3 to 1/2 cup (3 to 4 ounces) water, at room temperature
Poppy seeds, sesame seeds, paprika, cumin seeds, caraway seeds, or kosher salt for topping

Steps:

  • In a mixing bowl, stir together the flour, salt, yeast, honey, oil, and just enough water to bring everything together into a ball. You may not need the full 1/2 cup water, but be prepared to use it all if needed.
  • Sprinkle some flour on the counter and transfer the dough to the counter. Knead for about 10 minutes, or until the ingredients are evenly distributed. The dough should pass the windowpane test (page 58)and register 77° to 81°F. The dough should be firmer than French bread dough, but not quite as firm as bagel dough (what I call a medium-firm dough), satiny to the touch, not tacky, and supple enough to stretch when pulled. Lightly oil a bowl and transfer the dough to the bowl, rolling it around to coat it with oil. Cover the bowl with plastic wrap.
  • Ferment at room temperature for 90 minutes, or until the dough doubles in size. (You can also instead retard the dough overnight in the refrigerator immediately after kneading.)
  • Mist the counter lightly with spray oil and transfer the dough to the counter. Press the dough into a square with your hand and dust the top of the dough lightly with flour. Roll it out with a rolling pin into a paper-thin sheet about 15 inches by 12 inches. You may have to stop from time to time so that the gluten can relax. At these times, lift the dough from the counter and wave it a little, and then lay it back down. Cover it with a towel or plastic wrap while it relaxes. When it is the desired thinness, let the dough relax for 5 minutes. Line a sheet pan with baking parchment. Carefully lift the sheet of dough and lay it on the parchment. If it overlaps the edge of the pan, snip off the excess with scissors.
  • Preheat the oven to 350°F with the oven rack on the middle shelf. Mist the top of the dough with water and sprinkle a covering of seeds or spices on the dough (such as alternating rows of poppy seeds, sesame seeds, paprika, cumin seeds, caraway seeds, kosher or pretzel salt, etc.). Be careful with spices; a little goes a long way. If you want precut crackers, use a pizza cutter (rolling blade) and cut diamonds or rectangles in the dough. You do not need to separate the pieces, as they will snap apart after baking. If you want to make shards, bake the sheet of dough without cutting it first.
  • Bake for 15 to 20 minutes, or until the crackers begin to brown evenly across the top (the time will depend on how thinly and evenly you rolled the dough).
  • When the crackers are baked, remove the pan from the oven and let them cool in the pan for about 10 minutes. You can then snap them apart or snap off shards and serve.
  • Enriched, stiff dough; flat; direct method; commercial yeast
  • 10 to 15 minutes mixing; 2 hours fermentation, shaping, and panning; 15 to 20 minutes baking
  • This dough, almost as stiff as bagel dough, is easier to knead by hand than in a machine.
  • You can make a softer variation, used for making roll-up pinwheel sandwiches, by rolling the dough a little thicker than described and slightly underbaking the uncut sheet, so that the cracker is stiff but not crackly crisp. When ready to make the roll-up, mist the cracker with water and it will magically soften within 3 to 5 minutes and be as workable as a flour tortilla.
  • This same dough makes a nice pita bread: Simply roll out 6-ounce pieces of the finished dough into 8-inch-diameter circles (slightly less than 1/4 inch thick), and bake them in a 500°F oven on a baking stone or on a sheet pan. Bake just until they inflate and form a pocket. Count to 10, then remove the breads from the oven with a peel or a spatula before they brown and crisp. When they cool (and slowly deflate), they can be cut in half and used for pocket sandwiches.

1 ½ teaspoons kosher salt
1 teaspoon white sugar
½ cup freshly grated Parmigiano-Reggiano cheese
3 tablespoons extra-virgin olive oil
½ cup cold water
1 tablespoon minced fresh rosemary

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with a silicon mat or parchment paper.
  • Place flour, salt, sugar, and grated cheese in a mixing bowl. Stir together until well mixed. Add rosemary; drizzle with olive oil and add water. Mix with a fork until mixture comes together in a fairly sticky dough and pulls away from the sides of the bowl, 3 to 5 minutes.
  • Transfer dough onto floured surface and add flour as you knead the dough. Knead until it no longer sticks to work surface, 4 to 5 minutes. Divide dough in half.
  • Dust work surface with flour. Roll out dough to 1/8-inch thickness or less. Brush or mist surface of dough very lightly with water. Sprinkle with coarse sea salt. Prick the entire surface of dough with the tines of a fork to prevent crackers from puffing too much when baking.
  • Cut each rolled out half into about 30 pieces with a pizza wheel. You can cut them out in squares, rectangles, or triangles--your choice. Transfer onto prepared baking sheet with a bench scraper or your floured fingers (dough will be very sticky).
  • Bake in preheated oven until perfectly browned and crunchy, 10 to 15 minutes, depending on the thickness.
