HOW TO COOK RYE BERRIES
Rye isn't just for baking! Cooked like pasta in a pot of boiling salted water, the whole berries strike the perfect balance between chewy and tender, not to mention boast an impressive roster of nutrients. The earthy, pungent flavor works beautifully in our Swiss-Chard Frittata.

Steps:
- Bring a pot of water to a boil; season generously with salt. Add rye berries; reduce heat to a low, steady simmer. Cover and cook, stirring occasionally, until chewy and tender, 50 to 60 minutes. Drain. Use immediately, or spread on a rimmed baking sheet to let cool.
RYE HAPPIES
This is an old recipe found on the back of a package of rye flour. They make a delicious bar cookie!

Steps:
- Mix first five ingredients together. Mix last four ingredients together and stir all into dry ingredients, mixing until just combined.
- Spread batter into well-greased 8x8 pan.
- Bake at 350F for 30 to 35 minutes.
- When cool enough to handle, but still warm, cut into bars. Sprinkle with powdered sugar, if desired.

QUICK RYE-YOGHURT-FRUIT BREAD
Found this on the back-side of a packet of rye flour. Tried it and liked it. It is very nice with a cup of tea, plain or with a little butter.

Steps:
- Preheat oven to 400°F.
- Grease and flour a 9x5x2 inch loaf pan.
- Chop dried fruit and mix with luke-warm water, set aside.
- Sift and mix rye flour, all purpose flour, salt, baking soda and sugar.
- Add oats and mix.
- Add yoghurt and fruit (with the water).
- Mix all together
- Put the dough in the prepared pan and bake at 400F for 25 minutes.
- Lower the temperature to 300F and bake another 25 minutes.

- Spoon sugar into a shaker and add about a teaspoon of very hot water for a simple syrup. Stir until dissolved, adding a little more water if needed.
- Add whiskey and bitters, and stir again. Add several ice cubes and stir well to chill. Strain into an old-fashioned glass, add 2 or 3 big ice cubes, twist lemon peel over the top and drop it in.

RYE CHOCOLATE CHIP COOKIES
Rye flour and chopped dark chocolate add a new flavor dimension to the tried-and-true chocolate chip cookie recipe.

- Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Whisk rye flour, baking powder, salt, baking soda, cinnamon, and nutmeg together in a bowl until well combined.
- Cream butter, brown sugar, and white sugar together in a large bowl with an electric mixer until light and fluffy. Add egg, molasses, and vanilla extract; beat until thoroughly combined. Mix in 1/2 of the dry ingredients until just combined. Mix in remaining dry ingredients until just combined. Fold in chopped chocolate. Dough will be somewhat thick.
- Scoop out 1 1/2 tablespoon-sized pieces of dough and roll into balls. Place 2 inches apart on the prepared baking sheets.
- Bake in the preheated oven until edges of cookies are golden brown, 10 to 12 minutes. Sprinkle cookies with flaky sea salt as soon as they come out of the oven. Allow cookies to cool on the baking sheet for 7 to 10 minutes before removing to a wire rack to cool completely.
