Rye-Whiskey Switchels image

The sweet-and-sour soft drink known as switchel, made with fresh ginger and a dash of cider vinegar, was a popular thirst-quencher among harvest field workers in 19th-century New England. We're spinning our homemade switchel in a resolutely grown-up direction by adding in rye whiskey.

Yield Makes 16 cocktails

Number Of Ingredients 4

1/2 cup apple-cider vinegar, preferably unfiltered
1/3 cup sorghum syrup (available at natural-food stores)
1 tablespoon finely grated peeled fresh ginger (from a 2-inch piece)
24 ounces rye whiskey

Steps:

  • Stir together vinegar, sorghum syrup, ginger, and 2 cups water in a nonreactive container. Cover and refrigerate at least 4 hours and up to 1 day. Strain; return to container and refrigerate, covered, up to 1 week.
  • For each drink, fill a cocktail shaker with ice. Pour in 1 1/2 ounces each vinegar mixture and whiskey. Shake well. Strain into a chilled coupe glass; serve.

One of the most venerable of whiskey-based cocktails, the old-fashioned has a history that stretches back farther than the martini's. For decades it has suffered under the reputation of something your grandmother drank - overly sweet, fruit-laden and spritzed-up. But grandma wouldn't recognize what's happened to it lately.

1 teaspoon Demerara sugar
2 ounces rye whiskey
1 or 2 dashes Angostura bitters
1 or 2 dashes orange bitters
1 strip lemon peel

Steps:

  • Spoon sugar into a shaker and add about a teaspoon of very hot water for a simple syrup. Stir until dissolved, adding a little more water if needed.
  • Add whiskey and bitters, and stir again. Add several ice cubes and stir well to chill. Strain into an old-fashioned glass, add 2 or 3 big ice cubes, twist lemon peel over the top and drop it in.

  • Fill a cocktail shaker with ice cubes. Pour in the whiskey, vermouth and bitters. Shake until frosty, about 15 seconds then strain into a Manhattan glass and garnish with a maraschino cherry.

This mix of baked brie topped with brown sugar, pecans, and rye whiskey is too good for words. You could use any other type of whiskey, such as bourbon. Serve with crackers.

1 (8 ounce) round Brie cheese
¼ cup brown sugar
¼ cup chopped pecans
1 tablespoon rye whiskey

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Cut slits about 1/4-inch deep in a crossing pattern across the top and along the sides of the Brie wheel. Place the brie in a baking dish.
  • Bake the Brie in the preheated oven until softened, about 5 minutes.
  • While the Brie bakes, stir the brown sugar, pecans, and whiskey in a small bowl; pour onto the top of the Brie and return to the oven another 10 minutes. Serve immediately.
