RICE CROQUETTES WITH LEFTOVER RICE
Steps:
- To prepare the rice croquettes using leftover rice, mix all the above ingredients (except oil) in a bowl. The mixture should not be too soft, or else the patties wont retain their shape. If needed squeeze out excess water from grated veggies and then add to the mixture.
- Bind into a smooth ball.
- Divide into 8 pieces and shape each into oval / rounds. Refrigerate for 30 minutes.
- Pour 1 tbsp oil in a non stick pan and once oil is hot, place the shaped croquettes and fry on a medium flame for 6-8 minutes per side until both sides are crisp and golden brown.
- Serve with chutney / tomato ketchup.
RYZOKEFTEDES (FRIED RICE PATTIES)
Ryzokeftedes is an original concoction of mine. I made them when I had some leftover cooked rice from the previous day, so I added some grated halloumi and feta, some of my spice mixture, as well as some aromatic Greek herbs.

Steps:
- Mix all the ingredients and form into balls.
- Beat the egg.
- Dip the rice balls into the egg mixture and then roll in breadcrumbs untilcompletely coated.
- Set aside on a plate and repeat with remaining balls. At this point Ryzokeftedesmay be refrigerated until ready to fry.
- Heat the olive oil and fry on both sides until golden brown.

- Mix rice, onion, Cheddar cheese, egg, garlic, salt, red pepper flakes, black pepper, parsley, and onion powder by hand in a bowl.

RICE PATTIES - HOW TO MAKE RICE FRITTERS
Turn left over rice into a delicious side dish with this easy recipe for cheesy fried rice patties.

Steps:
- Dice the onion finely and chop the fresh herbs.
- Combine the left over rice, egg, fresh herbs, onion and cornstarch. Mix well.
- Using a muffin scoop, scoop out the mixture and press first and then release on a cutting board to make patties. Flatten slightly with your fingers.
- In a frying pan with curved side, heat oil for shallow frying.
- When the oil is hot, add the patties, pressing down slightly to form a flat fritter. Don't crowd the pan.
- Fry one side until golden brown for about 5 minutes and flip.
- Drain fritters on paper towels to absorb excess oil.
- Serve with salsa, guacamole, hummus or anything else that has a spicy fresh flavor.

Steps:
- Combine all the ingredients except for oil and mix well.
- In a pan, heat oil for shallow frying.
- When the oil is hot, add a tablespoon of batter, pressing down slightly to form a flat fritter.
- Fry one side until golden and flip. If there are too many holes in the fritter, add more cornstarch to the batter.
- Drain fritters on paper towels to absorb excess oil.
- Serve with salsa, tzatziki or anything else that has a zesty fresh flavor!

- Cook rice according to package directions; cool slightly. Press a fourth of the rice into a 1/2-cup measuring cup that has been moistened lightly with water; invert onto a large sheet of plastic wrap. Fold plastic around rice; shape rice into a 1/2-in.-thick patty. Repeat 3 times., In a large nonstick skillet, heat 1 tablespoon canola oil over medium-high heat.
