1/3 teaspoon saffron threads
1/4 cup whole milk
1 cup heavy cream
1 1/2 cups nonfat dry milk powder
1/2 cup part-skim ricotta cheese
2 tablespoons coarsely ground shelled raw pistachio nuts

Steps:

  • 1. In a small bowl, soak the saffron threads in the milk about 30 minutes. Then, in a large nonstick skillet or saucepan, mix the cream, dry milk, and ricotta cheese and cook, stirring, over medium heat until smooth, 3 to 5 minutes. Reduce the heat to low, mix in the saffron-infused milk and the saffron, and cook, stirring often, until the mixture (khoa) is almost dry and pulls away from the sides of the pan, 7 to 10 minutes.2. Remove from the heat. Let cool about 1 hour and shape the mixture into 1-inch patties. Then, with your thumb, press into the center of each patty to make a slight depression. CARAMELIZED MILK BALLS IN THICK SYRUP



Caramelized Milk Balls in Thick Syrup image

Number Of Ingredients 7

4 ounces (1/2 recipe) Paneer Cheese (or store-bought), crumbled, at room temperature
1 1/4 cups (1 recipe) Traditional Dark Brown Milk Rolls in Saffron Syrup, crumbled
4 cups sugar
2 to 3 cups melted vegetable shortening, for deep-frying
4 cups water
8 to 10 green cardamom pods, crushed lightly to break the skin
1/2 teaspoon ground green cardamom seeds

Steps:

  • 1. Prepare the paneer cheese in advance. Prepare the dough for milk rolls. Then, in a food processor, process the paneer cheese and the milk roll dough until the mixture gathers into a ball that does not stick to the sides of the bowl.2. Place about 2 tablespoons sugar in a small dish. Then, with lightly buttered clean hands, shape the dough into 15 smooth, crack-free balls. Roll each ball in the sugar.3. Heat the shortening in a large heavy wok over medium-high heat until it reaches 325°F on a frying thermometer or until a piece of dough dropped into the hot oil rises to the top after 30 to 40 seconds. Do not make the oil any hotter the kaala jaams need to be fried long and slow. (If you can, leave the thermometer in the wok and carefully monitor the temperature as you cook, it should remain between 275°F to 325°F. Turn off the heat if it goes any higher.) Add half the kaala jaams and fry, stirring and turning gently with a slotted spatula, until they are very dark brown, about 7 minutes. Remove to paper towels to drain.4. Place the remaining sugar, water, and cardamom pods in a large skillet or wok and bring to a boil over high heat. Reduce to medium-low and simmer, about 5 minutes. Add the fried balls to the syrup and continue to simmer until the kaala jaams soak up the syrup, swell and become soft, and the sugar syrup becomes very thick and almost evaporates, 20 to 25 minutes. Transfer to a serving dish, sprinkle the cardamom seeds on top and serve hot or at room temperature.VARIATION: There are many ways to serve kaala jaams: rolled in sweetened shredded coconut cut in half and dusted on the cut or the round sides with a sprinkling of dessert masala (this gives you twice as many pieces) or cut into halves or quarters and served in a pool of rabdi (Traditional Thickened Milk Pudding, see Desserts) garnished with some dessert masala.

3/4 cup semisweet chocolate chips

Steps:

  • PREPARE THE BASIC WHITE MILK FUDGE RECIPE:1. Heat the butter in a large, heavy wok or saucepan (not nonstick) over medium-high heat until melted. Add the ricotta cheese and cook, stirring often, over medium heat for the first 2 to 3 minutes, then over medium heat until all the liquid evaporates 20 to 25 minutes.2. Add the condensed milk and vanilla extract and continue to cook until all the liquid evaporates and the mixture thickens and pulls away from the sides of the pan, 10 to 12 minutes. During the last 5 minutes of cooking, mix in the nuts and other flavors of your choice.ADD FLAVORS:While it is still in the pan, mix in the white chocolate chips and cook, stirring, 1 to 2 minutes.3. Divide the burfee mixture into 2 parts. Leaving one half in the pan place the other half on an 11 x 8-inch tray with raised edges (or any other dish) and, with a spatula, smooth and flatten it into a 1/4-inchthick layer.4. Add the chocolate drips to the mixture in the wok and cook, stirring, over medium heat until the chocolate melts and the mixture is thick and smooth, about 2 minutes.5. Spread the chocolate mixture over the white burfee, making a smooth brown top layer. Garnish with the silver leaves. Cool well and cut into I-inch (or larger) squares. Or, make a long, thin roll with each color, lay them side by side, then roll them together to make one roll about: 1 1/2-inches in diameter. 2 to 3 tablespoons distilled white vinegar
1/2 pint heavy cream
3/4 cup sugar
3/4 cup instant nonfat dry milk powder

Steps:

  • 1. In a small skillet over medium heat, dry-roast half the, saffron, stirring and shaking the pan, until crisp and a few shades darker, about 1 minute. Grind in a mortar and pestle or with the back of a spoon.2. In a heavy saucepan, bring the milk to a boil over high heat. Remove from the heat and cool about 5 minutes. Then add the vinegar and stir lightly until the milk curdles. The curds should be very tiny (unlike the big curds of paneer cheese). Drain through a very fine-mesh strainer about 1 minute. Discard the whey, transfer the curds to a bowl, and mash them with a fork until fine. If the curds are large, process in the food processor until minced.3. In a large nonstick skillet over medium-high heat, boil together the cream and sugar until it bubbles vigorously, about 3 minutes. Mix in the curds and dry milk and bring to a boil over high heat. Reduce the heat to medium-low and simmer, stirring constantly, until the mixture thickens and pulls away from the sides of the pan, 7 to 10 minutes. Mix in the remaining saffron threads and the roasted saffron during the last 2 to 3 minutes of cooking.4. Let cool at room temperature about 1 hour. Shape the mixture into 30 to 40 (1-inch) balls. Then, with your thumb, press down in the center of each ball to flatten them and make a slight depression. Serve, preferably at room temperature.VARIATION: To make cardamom-flavored sandesh, do not add any saffron instead, fill each depression with a scant pinch of thinly sliced pistachios and ground green cardamom seeds.From "1,000 Indian Recipes."
