This is a great recipe for any meat marinade. Also a wonderful stir fry sauce. Marinate your choice of meat or vegetables for 4 to 24 hours; grill to your liking. Can be refrigerated for 2 weeks. The better quality soy sauce you use, the better your final product will be. Sauce can always be thinned with water if desired.

½ cup light soy sauce
¼ cup sake
¼ cup minced fresh pineapple
¼ cup honey
¼ cup white sugar
2 cloves garlic, minced
1 tablespoon grated fresh ginger
¼ teaspoon fish sauce

Steps:

  • Combine soy sauce, sake, pineapple, honey, white sugar, garlic, ginger, and fish sauce in a saucepan over medium heat; cook and stir until just boiling, about 7 minutes. Remove from heat, cool, and store in refrigerator.

My husband used to believe he hated pineapple because as a kid growing up in New England he ate only canned pineapple. It wasn't until he was an adult and moved west that he discovered the glory of the Hawaiian fruit. Nowadays, fresh pineapple can often be found year-round at reasonable prices in mainstream grocery stores. Nothing compares with the taste of fresh pineapple. To peel a pineapple, chop off both ends and stand it upright. Cut the peel off with vertical strokes, then quarter the fruit from end to end. Remove the core from each quarter and discard. Lay the quarter flat and slice into wedges. You can find sushi rice in Asian markets.

Number Of Ingredients 13

2 teaspoons sesame oil
1 cup sushi rice
1 cup plus 1 tablespoon broth (chicken or vegetable) or water
1/2 to 3/4 pound fish (halibut, monkfish, orange roughy, or any other ocean fish)
2 tablespoons soy sauce
3 tablespoons sake
1/2 teaspoon sugar
1/2 teaspoon sambal oelek or garlic-chili paste
2 scallions, white and green parts, sliced into thin rings
2 cups diced fresh pineapple
1/2 red bell pepper, cored, seeded, and diced
1/2 orange bell pepper, cored, seeded, and diced
2 cups frozen green peas

Steps:

  • Preheat the oven to 450°F.
  • Wipe the inside and lid of a cast-iron Dutch oven with sesame oil.
  • Rinse the rice in a strainer under cold water until the water runs clear. Tip the rice into the pot, add the liquid, and stir to make an even layer. Add the fish.
  • In a small bowl, combine the soy sauce, sake, sugar, and sambal oelek. Stir until the sugar dissolves. Spread over the fish.
  • Sprinkle with scallions and cover with the pineapple.
  • Follow with the bell peppers and then the peas.
  • Cover and bake for 45 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately.

I used to work in an upscale gourmet foods store, and this recipe was a huge success with the clientele. I've scaled it down to a normal sized recipe, but you may choose to tweek some of the flavors before cooking. Taste the marinade before you put the fish in!

1 lb sea bass, cleaned & cut into 6-8 oz. portions
3/4 cup soy sauce
1/2 cup teriyaki sauce
4 ounces brown sugar (a little more than 1/2 c., packed)
vegetable oil, as needed
1/2 of a fresh pineapple, cleaned & cut into 1/4-inch dice
1/2 red bell pepper, 1/4-inch dice
1/2 green bell pepper, 1/4-inch dice
3 tablespoons red onions, 1/4-inch dice
1/2 fresh jalapeno, seeded & minced
1/2 cup fresh cilantro, rough chop
1/4 cup fresh basil, chiffanade cut
olive oil, to coat
salt & pepper, to taste

Steps:

  • For the fish, mix soy, teriyaki & brown sugar thoroughly. Place portions of sea bass in mixture and make sure fish is either completely covered, or turn frequently. Marinate up to 2 hours; no less than a half hour.
  • For the salsa, prep all ingredients and toss together until fully mixed. Set aside while fish is being cooked.
  • After marinating fish, in a large saute pan, heat about 1/8" oil over high heat. (Make sure oil coats the entire bottom--this gets a bit sticky without the proper coating.).
  • Once oil "pops," cook sea bass until soy is well caramelized on fish, turning a dark brown and releasing from the pan, then flip over and continue until fish is done, flaking easily when pierced with a fork.
  • (I will not tell you how long, because it really, REALLY depends on the thickness of the fish pieces. Just watch it carefully!).
  • Hold fish on a cooling rack in a warm (170 -200 degree) oven until ready to serve, best when done immediately.
  • Serve with salsa and a few avocado wedges if you want to get fancy.

1/3 cup brown sugar
1/4 cup soy sauce
1/4 cup water
1 minced garlic clove
1/4 teaspoon ground ginger
6 salmon steaks, 1-inch thick (6 ounces each)
steamed rice
minced parsley

Steps:

  • Heat oven to 400°F In large saucepan over medium heat, bring pineapple, sugar, soy sauce, water, garlic and ginger to a boil, stirring constantly. Reduce heat; simmer 5 minutes. Rinse salmon steaks and pat dry. In baking dish, spread a thin layer of pineapple mixture; arrange salmon on top in one layer. Spread remaining pineapple mixture on top of salmon.
  • Bake 5 to 7 minutes; turn fish over and spoon some of the pineapple mixture on top. Bake 5 to 7 minutes longer or until fish is opaque but still moist. Serve over steamed rice; sprinkle with parsley.

1 can (8 ounces) unsweetened sliced pineapple
1-1/2 teaspoons cornstarch
1/4 teaspoon ground ginger
2 tablespoons honey
2 tablespoons reduced-sodium soy sauce
1 tablespoon lemon juice
4 fresh or orange roughy fillets (6 ounces each)

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small saucepan, combine cornstarch and ginger; stir in pineapple juice until blended. Add honey and soy sauce. bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in lemon juice. Pour half into a small serving bowl. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fillets, uncovered, over medium heat for 4-5 minutes on each side or until fish flakes easily with a fork, basting occasionally with glaze. , Meanwhile, grill pineapple slices for 2-3 minutes on each side or until heated through, basting frequently with glaze. Serve fish with pineapple and reserved glaze.
