Blackberry Spinach Salad image

This is an excellent brunch salad that's very easy to throw together. This tastes great without a dressing, but some people like a bacon dressing or a nice balsamic vinegar.

3 cups baby spinach, rinsed and dried
1 pint fresh blackberries
6 ounces crumbled feta cheese
1 pint cherry tomatoes, halved
1 green onion, sliced
¼ cup finely chopped walnuts
½ cup edible flowers

Steps:

  • In a large bowl, toss together baby spinach, blackberries, feta cheese, cherry tomatoes, green onion, and walnuts. Garnish with edible flowers.

4 cups fresh spinach
1/2 cup fresh bread, cut into small cubes
1/4 cup blackberries or 1/4 cup blueberries
1/2 lb goat cheese
1/4 cup raisins
3 tablespoons wheat, kernels roasted
2 small spring onions
1/4 cup olive oil
3 tablespoons balsamic vinegar
2 tablespoons honey
salt and pepper

Steps:

  • Rinse the salad greens and spinach, and toss them together.
  • Slice the spring onions thinly and mix with the salad greens and spinach, then arrange it all on a platter.
  • Place the bread, berries, cheese, raisins and the roasted wheat kernels on the salad.
  • Mix the vinaigrette ingredients and season with salt and pepper.
  • Pour over the salad before serving.

I love the freshness of the berries, with the creaminess of the cheese, and crunch from the almonds! This is my perfect salad - and it is a fabulous base for some pan seared salmon, grilled shrimp, or chicken if you'd prefer to make it a heartier entrée salad!

6 cups baby spinach
1 cup halved fresh strawberries
½ cup fresh raspberries
½ cup fresh blueberries
⅓ cup crumbled goat cheese
¼ cup sliced almonds
2 tablespoons raspberry vinaigrette dressing, or more to taste

Steps:

  • Divide spinach amongst 2 plates. Top each plate with half of the strawberries, blueberries, and raspberries. Sprinkle with goat cheese and sliced almonds, adjusting quantities if needed to your tastes and preferences.
  • Drizzle salad with raspberry vinaigrette to serve.
