This is a sweet tasting salad that is perfect for spring and summer outings.

¼ cup apple cider vinegar
¼ cup sugar
¼ cup vegetable oil
¼ teaspoon paprika
1 dash Worcestershire sauce
1 tablespoon butter
½ cup slivered almonds
1 quart strawberries
2 romaine hearts, chopped into bite size pieces

Steps:

  • In a bowl, mix the vinegar, sugar, oil, paprika, and Worcestershire sauce. Cover, and refrigerate at least 6 hours.
  • Melt butter in a skillet over medium heat. Stir in the almonds, and cook until golden brown. Remove from heat, and cool.
  • In a bowl, toss the strawberries, romaine, and almonds. Mix with the dressing just before serving.

2 cups cubed tart apples
2 cups thinly sliced celery
2 cups halved seedless grapes
1 cup miniature marshmallows
1/3 cup cold evaporated milk
1/2 teaspoon sugar
1/4 teaspoon vanilla extract
3 tablespoons mayonnaise
3 tablespoons peanut butter
1/2 cup mixed nuts, optional

Steps:

  • In a large bowl, combine apples, celery, grapes and marshmallows. In a chilled bowl, beat milk until frothy. Add sugar and vanilla. beat in mayonnaise and peanut butter. , Pour over apple mixture; stir until coated. Cover and refrigerate. Just before serving, stir in nuts if desired.

The first time my husband tried this he hogged the whole bowl. Now I usually double the recipe if we're having guests.

1 cabbage
1/3 cup pine nuts
1/3 cup slivered almonds
2 tablespoons sesame seeds
1/2 cup olive oil
1/2 cup soy sauce
2 teaspoons sugar

Steps:

  • Cut the cabbage into thin strips.
  • Fry the pine nuts, almond slivers and sesame seeds in a small amount of olive oil until toasted (careful not to burn).
  • You can vary the amounts of nuts to your own tastes.
  • Mix cabbage and nuts together in a large bowl.
  • Mix olive oil, soy sauce and sugar in a small bowl.
  • Microwave for 1 minute to heat.
  • Stir to dissolve sugar.
  • Pour the sauce over the cabbage and nuts and toss well.
  • Let the salad marinate in the refrigerator for a few hours before serving.

1 medium carrot, shredded
8 pecan halves, chopped
CURRY CITRUS DRESSING:
2 tablespoons orange juice
2 teaspoons canola oil
1 teaspoon balsamic vinegar
1/4 teaspoon curry powder
Dash salt
Dash pepper

Steps:

  • In a bowl, combine the salad greens, carrot and pecans. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Drizzle over salad and toss to coat.

I actually came across a version of this recipe in a vegan cookbook. It's one of those recipes that shocks you how good it is.

1/2 cup mixed nuts (I usually combine equal portions almonds and cashews)
1/2 cup whole wheat bread crumbs
1 teaspoon olive oil
2 teaspoons tomato paste
1 green onion
1 tablespoon parsley
mixed salad green

Steps:

  • First, grind the nuts.
  • In a bowl mix the nuts and breadcrumbs, and add the oil and tomato paste.
  • Mince the onion and parsley and add them to the bowl.
  • Mix well, then knead with your hands, and form into walnut-sized balls.
  • Refrigerate, then serve on top of a mixed salad.

  • Place the rice noodles in a large bowl and cover with freshly boiled water from the kettle. Leave for 3 minutes to cook through, then drain, rinse in cold water until the noodles are cold (this helps to prevent the noodles sticking together too much whilst), and leave to drain.
  • Make the spicy sauce next by whisking all of the sauce ingredients together using a small whisk or fork. Whisk just until the peanut butter is blended into the sauce. Put to one side.
  • Back to the salad: Use a potato peeler to peel the cucumber into long,thin strips. Work your way around the cucumber, discarding the core.
