Here's a healthy and satisfying make-ahead meal that kids will love: salami and cream cheese sandwiches.

Ingredients

1 teaspoon grainy mustard
2 slices rye bread
2 ounces salami (about 6 slices), thinly sliced
1/2 small bunch arugula, trimmed and washed
1 tablespoon cream cheese

Steps:

Spread mustard on one slice of bread; top with salami and arugula. Spread cream cheese on the other slice of bread; close sandwich. Serve, or refrigerate, wrapped tightly in wax paper or plastic, up to overnight. Cut in half.

Finger sandwiches are coming out of grandma's closet and joining the happy hour crowd. These little guys are way fabulous and they'll make anybody smile. Your guests who are expecting a plain old cucumber sandwich will be blown away by the gutsy flavors hiding behind a sweet and innocent fa?e. I make these with thin-sliced bread so the sandwiches are light and not too filling ? look for bread labeled "Very Thin." Pepperidge Farm makes a good one in both white and wheat.

Ingredients

1/4 cup finely chopped manzanilla olives (about 12 to 15 olives)
1/2 cup cream cheese, at room temperature
10 slices very thin white bread (recommended: Pepperidge Farm)
1/4 pound thinly sliced Genoa salami

Steps:

Mash the olives into the cream cheese with a fork. Spread 5 slices of the bread with half the olive spread and top with salami. Spread the remaining 5 slices of bread with the remaining olive spread and top the sandwiches. Cut off the crusts, then cut the sandwiches into 4 pieces.

I always order this sandwich when I go to a deli in the 'burbs. Luckily, I don't go there too often because I doubt if it is diet friendly. ;)

Ingredients

2 slices rye bread
4 -6 slices kosher salami, thinly sliced
2 slices American cheese (cheddar may also be used)
1 teaspoon butter

Steps:

Fry salami until fat has rendered (I like mine a little burnt around the edges). Note: it's a good idea to make a cut in the salami slices so that they'll lay flatter after they're cooked.
Drain salami on paper towels.
Spread butter on one side of each slice of bread.
Place one slice of cheese on unbuttered side of bread.
Top with fried salami slices.
Top salami with remaining slice of cheese.
Place unbutter side of remaining slice of bread on top of the cheese.
Heat frying pan to low/medium heat.
Place sandwich in pan and cook until golden brown.
Flip sandwich and repeat with the other side.

12 mini buns
sliced salami
mozarella
tomato
cream cheese
butter, melted
parmesan cheese
parsley

Steps:

Slice mini buns horizontally. Top with sliced salami, mozzarella cheese and chopped tomatoes.
Spread cream cheese on the other half of the bun and layer.
Drizzle melted butter on the buns. Sprinkle parmesan cheese and top with parsley. Bake at 300°F (150°C) for 10-15 minutes.
