For Meatballs
1 1/2 lb lean ground beef
1/2 cup breadcrumbs, I used Panko
1 egg
1/4 cup ketchup
1/4 cup coarse grain mustard
1 tbsp Worcestershire sauce
1 tsp seasoning salt
1/2 tsp pepper
1 tsp onion powder
2 tbsp olive oil (for frying)
For Gravy
2 tbsp butter
1 large onion, chopped
1 tbsp Worcestershire sauce
1 cup beef broth or chicken broth
2 tbsp cornstarch
1/2 tsp seasoning salt
1 tbsp ketchup
parsley for garnish
For Mashed Potatoes
5 large potatoes, peeled and chopped into 1 inch cubes
4 tbsp (1/2 stick) unsalted butter
1/4 to 1/2 cup skim milk
1/4 cup light cream cheese
salt and pepper to taste

Steps:

  • Add all the meatball ingredients (excluding the olive oil) to a large bowl and mix well, use your hands. Shape into 1 inch meatballs. You should get about 40 meatballs. Add the olive oil to a large skillet and heat over medium to high heat. Add meatballs and cook. If you're using a large skillet all meatballs should fit in one batch otherwise, you might have to fry them in a couple batches. Cook the meatballs on all sides, add more oil if needed. Remove meatballs from skillet and set aside. To the same skillet add butter and melt. Add onion and cook until onion is soft and translucent. In a bowl add the cornstarch and beef broth and whisk. Add broth and remaining gravy ingredients to skillet, and cook for about 3 to 5 minutes, sauce should thicken. If the sauce is too thick add a bit more beef broth. Taste for seasoning and adjust as necessary. When the gravy is done add the meatballs back to the skillet and toss them around so they're covered in the gravy. Garnish with parsley. For Mashed Potatoes Peel the potatoes and cut them in 1 inch cubes. Boil them on medium heat until potatoes are tender, for about 20 minutes. Drain potatoes and in a medium bowl, add the potatoes, milk, butter, cream cheese and salt and pepper. Using a potato masher mash the potatoes until desired consistency. You may also use a hand mixer if you wish. Add additional milk as necessary. Serve meatballs over mashed potatoes. notes To prevent your meatballs from crumbling and falling apart, do not overcrowd your meatballs while cooking them. Leave about ½ inch of space in between. This spin on Salisbury steak is anything but old-fashioned. With help from the slow cooker, we transformed this comfort food with scratch-made meatballs and a savory onion gravy that perfectly pairs with mashed potatoes.

1/2 teaspoon salt
2 cups thinly sliced onions
8 oz mushrooms, thinly sliced (about 3 cups)
1 cup Progresso™ beef flavored broth (from 32-oz carton)
1 lb lean (at least 80%) ground beef
1/2 cup Progresso™ plain panko crispy bread crumbs
1/3 cup milk
1 egg, slightly beaten
1 tablespoon Montreal steak grill seasoning
1 tablespoon soy sauce
2 tablespoons cornstarch
2 tablespoons cold water
1 pouch (4.7 oz) Betty Crocker™ creamy butter mashed potatoes, made as directed on pouch
2 tablespoons chopped fresh Italian (flat-leaf) parsley leaves

Steps:

  • Spray 5- or 6-quart oval slow cooker with cooking spray. Mix melted butter, tomato paste and salt in slow cooker. Add onions and mushrooms; toss to coat. Stir in broth.
  • In large bowl, mix beef, bread crumbs, milk, egg, grill seasoning and soy sauce. Shape into about 24 (1 1/2-inch) meatballs. Place meatballs in slow cooker on top of vegetable mixture.
  • Cover; cook on Low heat setting 3 to 4 hours or until meatballs are thoroughly cooked (165°F); stir. In small bowl, beat cornstarch and cold water. Quickly stir into slow cooker; cover. Increase to High heat setting; cook 5 to 10 minutes or until thickened. Serve over mashed potatoes. Sprinkle with parsley.

  • In a bowl combine your ground beef with all of the meat ingredients, and form into balls. Mine were slightly larger than a golf ball. Pour a couple of Tablespoons of oil in a skillet, and add meatballs, brown over medium heat, rotating them often so they don’t burn. Once they are browned evenly, remove them from the pan and set them aside.
  • Remove any excess grease from pan. (Don’t wash) Add about 2 Tablespoons of butter, and stir in your sliced onions. Cook for about 5-10 minutes over medium-high heat, onions will become golden brown, tender and fragrant. Add mushrooms. Cook for a couple more minutes. Reduce your heat to medium and add in beef stock, Worcestershire sauce and ketchup. Stir and simmer for about 10 minutes. Add to this your Kitchen Bouquet and corn starch mixture. Stir to combine, gravy will begin to thicken. Salt and pepper, to taste. Return the meatballs to the gravy, turn heat to low and cover the skillet. Cook meatballs in gravy for 20-30 minutes. This will make them tender, take care while stirring to not break them apart.
