- In a large bowl, beat egg.
- Stir in 1/3 cup of soup, bread crumbs, salt and pepper.
- Crumble beef over mixture; mix gently.
- Shape into six oval patties.
- In a skillet, brown patties over medium heat for 3-4 minutes on each side.
- Remove and set aside; drain.
- Add the water, ketchup, Worcestershire sauce, mustard and remaining soup to skillet; bring to a boil.
- Return patties to skillet.
- Reduce heat; cover and simmer for 15 minutes or until meat is no longer pink. Remove patties.
- Combine flour and cold water until smooth. Stir into pan.
- Bring to a boil; cook and stir for 2 minutes or until thickened.
- Serve patties and gravy over noodles.
- Garnish with parsley if desired.
HOMEMADE SALISBURY STEAK WITH ONION GRAVY

- If you want caramelized onions in your gravy, start by thin slicing a small onion. Cook with 1 teaspoon oil over medium-high heat until nicely brown. About 7-8 minutes. You can cook the optional mushrooms instead or in addition with the onions. Set aside in a bowl.
- In a large mixing bowl, combine 1 pound of ground beef with 1/3 cup breadcrumbs, 2 teaspoons ketchup, 1 teaspoon mustard and Worcestershire sauce, and 1/2 teaspoon garlic powder. If not doing the onions, then add 1/2 teaspoon onion powder.
- Divide the hamburger mixture into 3-4 equal portions. A quarter-size indent in the middle of one side to prevent puffing up of the patties and make cooking evener.
- Place steak patties in a large frying pan with a teaspoon of oil over medium-high heat. Flip about every 5-6 minutes until an internal temperature of 165°. About 15-20 minutes depending on the thickness, the pan, and your burners.
- Whisk 4 tablespoons flour with 1 cup beef broth. Remove the Salisbury steak to a plate and lightly tent. Pour out most of the liquid, leaving about 3-4 tablespoons of liquid. Allow the pan to cool some. Add 1 cup beef broth and bring to a light boil over medium heat.
- Slowly add the flour-broth mixture while continuing to whisk. Add 1 teaspoon ketchup and 1/2 teaspoon Worcestershire sauce. Add salt and pepper to taste.
- Whisk until nicely thickened, a few minutes. If using the caramelized onions or mushrooms, add them to the gravy and mix well.
- Add steak back into the mixture, simmer for a few minutes until everything is hot.

- Heat a medium saute pan over medium heat. Add 2 tablespoons oil and 1 cup onion. Reduce heat to medium-low, and cook, stirring occasionally, until onions are golden brown and caramelized, about 35 minutes. Set aside.
- Soak bread in milk, flipping once. Finely chop. In a large bowl, combine the remaining 1/3 cup onions, the sirloin, garlic cloves, bread, egg, parsley, 2 teaspoons Worcestershire sauce, 2 teaspoons salt, and 1/4 teaspoon pepper. Mix with your hands to combine. Divide meat mixture into 6 oblong patties (about 5 inches long and 3/4 inch thick). Dust with cornstarch.
- Heat a large skillet over medium-high heat. Add remaining oil, and reduce heat to medium. Cook patties, 3 at a time, for 6 minutes, without moving them. Flip, and cook until cooked through, about 9 minutes. Set aside on a plate. Repeat with remaining patties.
- Make the gravy: Add cooked onions and 1 teaspoon cornstarch to same skillet, and stir for 1 minute. Raise heat to medium-high. Pour in broth and a dash of Worcestershire sauce, and whisk until broth is clear and slightly thickened, about 3 minutes. Remove pan from heat, and return patties and juices to skillet, spooning sauce on top.

SALISBURY STEAK WITH BROWN GRAVY

- Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onion and saute until soft, about 6 minutes. Put 1/2 of the onion in a large bowl and the remainder in another bowl. In the large bowl add the beef, bread crumbs, grill seasoning, Worcestershire sauce and the egg. Mix to combine everything well and form the mixture into 5 oval patties. Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Cook the patties until they are well browned, about 4 to 5 minutes per side. Remove the steaks and pour off all but 2 tablespoons the fat. (The patties will not be cooked through and will finish cooking in the gravy.)
- Put the pan back on the heat, add the mushrooms, and cook for 5 minutes. Add the remaining onions, sprinkle in the flour, and cook for 2 minutes. Add the beef broth and bring it to a boil. Return the patties to the pan, reduce the heat to a simmer and cook until the sauce has thickened and the steaks are cooked through, about 10 minutes. - Place a drizzle of EVOO in a skillet over medium heat and melt the butter into the oil. Add the onions, season with salt and pepper, a little ground thyme and add the bay. Caramelize the onions until very soft and sweet and light golden in color, 20 to 25 minutes.
- Meanwhile, soak the bread in milk or half-n-half. Place the meat in a bowl and add the egg. Squeeze out the bread and crumble into crumbs as you add to the bowl. Add the Worcestershire and grated onion to the beef. Sprinkle with salt and pepper and combine. Form into 4 (1-inch thick) oval loaves. Heat a drizzle of EVOO in a large skillet over medium-high heat. Add the loaves and cook until cooked through, about 15 minutes, turning occasionally. Transfer the meat to a plate.
- Sprinkle the flour over the caramelized onions, stir 1 minute. Deglaze the pan you cooked the meat in with the wine and pour into the onions. Add the beef stock and thicken a moment. Serve the gravy over the Salisbury steaks. Garnish with a little watercress, if desired.

- Directions: 1) To make gravy: Heat butter in a large sauté pan. Add onions and cook over medium-high heat, until onions start to brown, stirring occasionally. When onions are slightly softened and turning a deep honey brown, add 1/4 cup broth. Reduce heat, cover and continue cooking, adding more broth as needed to prevent caramelized bits at the bottom of the pan from burning. It should take at least 25 to 30 minutes to properly caramelize onions. Stir in flour and cook for about 2 minutes. Add wine and reduce by half. Stir in remaining beef broth.Simmer for 10 minutes. - Pat each steak dry, with a paper towel and season with coarse salt & pepper. Heat a skillet on medium-high with about 2 teaspoons of olive (or vegetable) oil, until shimmering and hot. Sear the steaks until golden brown-- about 2-3 minutes. Turn over and cook the same way. Remove from the skillet, onto a plate and cover with foil. I like to keep my steaks in a warm oven. There should be a lot of brown fond (crust) on the bottom of the pan; that's where all the flavor for the sauce comes from. Add a little more olive oil, then add the onion. Cook until soft and slightly golden-- 3-5 minutes. Add the flour, and stir to cook for about 2 minutes. Add the beef stock, stirring all the while, and then the Worcestershire sauce. Bring to a simmer until nicely thickened. If the sauce is too thick, add a dash more beef stock. Return the steaks, and their natural juices, to the pan and heat for about 1 more minutes. Serve over mashed potatoes (or rice or egg noodles).
