Time 40m

Yield 4 servings

Number Of Ingredients 13

4 (6 to 8-ounce) salmon fillets
Salt and freshly ground black pepper
2 tablespoons vegetable oil
3 cups sliced red bliss potatoes
2 cups diced plum tomatoes
3/4 cup sliced carrots*
3/4 cup sliced celery*
3/4 cup sliced fennel*

1 tablespoon tomato paste
1 quart shrimp or lobster stock
Variety of fresh herbs, for seasoning

Steps:

  • Add potatoes and all the vegetables, saffron, and tomato paste to the pan and saute until vegetables are translucent. Add the stock and stir well to combine. Add a small handful of fresh herbs, and then place the salmon fillets back in the pan on top of the vegetables.
  • Cover and place the pan in the oven for 15 minutes, or until the potatoes are tender and the fish is cooked to your desired degree of doneness.

ROASTED SALMON STEAKS WITH PINOT NOIR

Roasted Salmon Steaks With Pinot Noir image

Categories     dinner, main course

Time 30m

Yield 4 servings

Number Of Ingredients 7

1/2 cup sugar
2 cups pinot noir
1 sprig rosemary, plus 1 teaspoon chopped rosemary
4 salmon steaks, each about 1/2 pound
Salt and freshly ground black pepper
1 tablespoon balsamic vinegar
1 tablespoon butter

Steps:

  • Preheat oven to 450 degrees. Place sugar in heavy-bottomed saucepan, preferably nonstick and with rounded sides, and turn heat to medium. Cook without stirring (just shake the pan occasionally to redistribute sugar) until sugar liquefies and begins to turn brown, about 10 minutes. Turn off heat, and carefully add wine. Turn heat to high, and cook, stirring, until caramel dissolves again. Add rosemary sprig, and cook over high heat, stirring occasionally, until mixture is syrupy and reduced to just over 1/2 cup, 10 to 15 minutes.
  • As liquid reduces, heat a nonstick skillet over high heat until it begins to smoke. Season salmon on both sides with salt and pepper, then place in pan and immediately transfer to oven. Cook 3 minutes, then turn salmon and cook another 3 minutes. Remove salmon when medium-rare or thereabouts (or cook another minute or two if you like it more done), and keep warm.
  • When sauce is reduced, stir in balsamic vinegar and butter and turn heat to medium-low. Cook until butter melts. Season with salt and pepper, and remove rosemary sprig. Taste and adjust seasoning, then serve over salmon, garnished with chopped rosemary.

PLANKED SALMON WITH PINOT NOIR-BERRY SAUCE

PLANKED SALMON WITH PINOT NOIR-BERRY SAUCE image

Categories     Fish     Backyard BBQ

Yield 4 servings

Number Of Ingredients 12

1 cup Pinot Noir
1 small shallot, minced
2 1/4 cups blackberries, roughly chopped
2 Tbs. veal demi-glace
8 Tbs. (1 stick) unsalted butter, cut into 16
cubes
1/4 tsp. salt, plus more, to taste
2 tsp. sugar
4 salmon fillets, each 8 oz., skin intact
1/4 cup olive oil
Freshly ground pepper, to taste
Chopped fresh flat-leaf parsley for garnish

Steps:

  • Soak a cedar plank in water for 2 to 4 hours. In a small pot over medium heat, combine the wine, shallot and 1 1/2 cups of the blackberries. Simmer, stirring occasionally, until most of the liquid has evaporated, 15 to 20 minutes. Press the berry mixture through a fine-mesh sieve into a bowl and return the liquid to the pot. Set over low heat and whisk in the demi-glace, then slowly add the butter, whisking continuously until incorporated into the sauce. Stir in the 1/4 tsp. salt, the sugar and the remaining 3/4 cup blackberries. Cook, stirring occasionally, until the berries soften, 5 to 7 minutes. Pour the sauce into a small bowl and set over but not touching simmering water in a saucepan; keep the sauce warm. Prepare a medium fire in a grill. Have a spray bottle of water ready to extinguish flare-ups. Brush the salmon on both sides with the olive oil and season with salt and pepper. Place the plank on the grill and close the lid. Heat until the plank begins to smoke and crackle. Place the salmon, skin side down, on the plank. Close the lid and grill until the salmon is cooked through, 10 to 12 minutes. Transfer the plank with the salmon to a heatproof platter, or carefully transfer the salmon directly to a warmed platter. Spoon the berry sauce over the salmon and garnish with parsley.

  • Wipe the mushrooms clean with a damp paper towel. Trim off the very base of the mushroom stems, then remove and coarsely chop the stems. Set aside. Thinly slice the caps and keep separate.
  • Choose a deep ovenproof skillet just large enough to hold the salmon fillets without crowding. Add half the bacon and cook over medium heat, stirring occasionally, until the bacon has rendered much of its fat and is just beginning to brown, about 8 minutes. Pour in half the wine and the thyme. Bring to a rapid simmer and cook until the wine has reduced by about half, about 10 minutes. Add the remaining wine and return to a simmer for 5 minutes.
  • Meanwhile, prepare the bacon and mushroom garnish. Place the remaining bacon in another skillet over medium heat and fry until crisp. Transfer to a small bowl and set aside. Pour off most of the fat from the pan, and add 1 tablespoon of the butter. Add the sliced mushroom caps and sauté over medium-high heat. Season with salt and pepper and stir frequently, until all the liquid evaporates and the mushrooms are tender and nicely browned. Transfer the mushrooms to another bowl. No need to clean this skillet yet, you can use it later to finish the sauce.
