PASTA WITH SMOKED SALMON AND DILL

Pasta with Smoked Salmon and Dill image

A rich and creamy pasta sauce infused with smoked salmon and dill. Serves 3-4 as a main dish or 4-6 as a first course.

Provided by Cynthia

Categories     Entree

Time 25m

Number Of Ingredients 8

12 oz fresh fettuccine (of course, you can use dried, but fresh isn't really that much more expensive)
4 oz of smoked salmon (diced)
2 shallots (minced)
2 tablespoons butter
3 tablespoons dry white wine (I always keep a bottle of good quality Vermouth on hand to use in a pinch)
2 cups heavy cream
Fresh dill (chopped)
Salt to taste

Steps:

  • While the pasta is cooking, saute the shallots in butter over a medium heat, until soft and translucent.
  • Add the Vermouth to the pan and cook a minute or two.
  • Stir in the cream and cook for a few minutes, until it's reduced a bit and a little thicker. Add the smoked salmon.
  • Toss over hot pasta. Add dill and season to taste with salt.
  • Serves 4 as a main dish or 6-8 as an appetizer. It's very rich!

FETTUCCINE WITH SALMON DILL CREAM SAUCE

Fettuccine with Salmon Dill Cream Sauce image

Fettuccine with Salmon Dill Cream Sauce made with smoked salmon, fresh dill, lemon and heavy cream is an insanely delicious and easy to make pasta dinner.

Provided by Krissy Allori

Categories     Main Course

Time 20m

Number Of Ingredients 7

1/2 large sweet onion (like Vidalia or Walla-Walla, diced)
1 tablespoon butter
1 large bunch of dill (de-stemmed and chopped)
8 ounces cold smoked salmon
1 cup heavy cream
1-2 tablespoons lemon juice
8 ounces linguini

Steps:

  • Cook the pasta in plenty of water until it is done. Consider not adding salt to the water this time, since the salmon sauce may be on the salty side.
  • To make the salmon dill cream sauce, sauté the onion in butter over medium high heat until golden brown. Reduce heat a bit and add the dill, salmon and cream. Gently heat until the cream is infused and stir until the salmon flakes. Add the lemon juice and stir.
  • Gently toss the pasta in the warm sauce and voila! Ready to serve.

Time 40m

Number Of Ingredients 11

1 pound dried fettuccine
3/4 pound wild Alaskan salmon (pin bones removed)
salt and pepper
3 teaspoons dried dill (divided)
1 tablespoon plus 1 teaspoon olive oil
2 tablespoons unsalted butter
2 cloves garlic (minced)
1/4 cup white wine
1/2 cup heavy cream
2 ounces cream cheese (softened)
1/2 cup reserved pasta water

Steps:

  • Preheat oven to 400 degrees.
  • Bring a large pot of water to boil and cook pasta according to package directions. Before draining, reserve 1/2 cup of pasta water. Drain pasta.

Add in 1/4 cup of reserved pasta water. If pasta sauce still seems too thick add in remaining water.
  • Add flaked salmon to the pan and stir to coat. Add pasta to the pan and toss to coat. Serve immediately.

SMOKED SALMON FETTUCCINE WITH HEALTHY DILL ALFREDO SAUCE

Smoked Salmon Fettuccine With Healthy Dill Alfredo Sauce image

"Healthy alfredo sauce" is probably an oxymoron, but this is the way I always make a creamy sauce for pasta. It's obviously not an authentic alfredo, but we like it. I created this dish to use up some smoked salmon, and we totally enjoyed it. While I think you can adjust most of the ingredients here to your taste, I wouldn't mess with the smoked salmon or the capers, since they really are the dominant flavors.

Categories     One Dish Meal

Time 25m

Yield 2 serving(s)

Number Of Ingredients 18

1/2 cup low fat cottage cheese

1 teaspoon olive oil
6 ounces smoked salmon, cut into bite-size pieces
1/2 cup cherry tomatoes, quartered
1 tablespoon capers, chopped
1 tablespoon fresh parsley, snipped

lemon pepper, to taste
fresh ground black pepper, to taste
shredded parmesan cheese, to taste

Steps:

  • Boil and prepare fettuccine as directed on package instructions; drain and set aside.
