The procedure for this fish head soup is simple enough, and gives you a chance to enjoy tender salmon in a soup flavored with dill and cream.

2 salmon heads, or one salmon frame (head, tails, and scraps)
1 large onion, thinly sliced
3 tablespoons butter
8 ounces potatoes, scrubbed and cut into 2 inch cubes
1 large bunch fresh dill
2 bay leaves
1 teaspoon kosher salt, or to taste
1/2 cup cream, or to taste

To garnish:
About 1/3 cup chopped fresh dill

Steps:

  • Over medium heat, melt butter in a sauté pan. Add onions and sauté until softened but not browned, about 7 minutes. Add salmon parts, potatoes, bay leaves, salt, and all but a few stalks of the dill. Add enough water to just cover the fish. Bring water to a steady simmer and cook until fish and potatoes are tender, about 20 minutes.

My dear old Auntie Gloria taught me this recipe. This comforting soup is good on a cold rainy day. May you enjoy it as much as we do.

2 salmon heads, halved
3 tablespoons olive oil, divided
2 pieces tofu, cubed
1 piece fresh ginger, julienned (thumbsize)
4 cups water
1 -2 chicken bouillon cube
1/2 cup button mushroom, drained
1/2 red bell pepper, julienned
2 tablespoons knorr seasoning, to taste

Steps:

  • Fry tofu till browned an a little oil, set aside.
  • Saute ginger in a little oil till fragrant, add the red bell pepper .
  • Stir fry till fragrant then add in salmon head.
  • When cooked, pour in water and the chicken cubes.
  • Let simmer and put in the cooked tofu and button mushrooms.
  • Flavor with knorr seasoning.
  • Correct to taste if desired.
  • Serve with rice.

  • Wash the salmon heads well to remove any blood or gills. Gills will ruin the broth by making it bitter and cloudy. Cover the heads with water in a large pot or Dutch oven. Add the onion, kombu and ginger and bring to a bare simmer. Do not let this boil. Simmer gently for 20 to 30 minutes.
  • Strain the broth and save the heads. Pick out all the meat from the heads, especially the cheek meat. Reserve in a bowl.
  • Return the broth to a clean pot and add the mirin. Heat but do not let boil. Add the soy sauce. If the broth still needs salt, add salt -- not more soy sauce, as that will make the broth too dark.
  • Bring another pot of salted water to a boil: This is for the noodles. Cook the noodles according to the directions on the package.
