1 15 oz can salmon
2 c small curd cottage cheese
2 eggs, well beaten
1/2 c minced onion
1/4 c chopped fresh parsley
1/2 t dill weed
8-10 large manicotti shells, cooked
3 T butter
3 T flour
1/4 t salt
Milk
2 c shredded Monterey Jack cheese, divided
1/4 c grated Parmesan

Steps:

  • Drain and flake salmon, reserve liquid. In a bowl, combine salmon, cottage cheese, eggs, onion, parsley, and dill weed. Gently stuff manicotti with salmon mixture. Set aside. In a saucepan, melt butter, stir in flour and salt. Add milk to reserved salmon liquid to equal 1 ½ cups. Stir into flour mixture. Cook over medium heat until thickened. Stir in 1 c Monterey Jack cheese. Pour ½ of the sauce into a 3 qt baking dish. Arrange filled shells over sauce. Top with remaining sauce. Sprinkle with remaining Jack cheese and Parmesan. Bake at 375 for 15 minutes. Uncover and bake 10 minutes longer until cheese is bubbly and lightly browned.

1 pint part-skim ricotta cheese
8 ounces shredded mozzarella cheese
¾ cup grated Parmesan cheese
2 eggs
1 teaspoon dried parsley
salt to taste
ground black pepper to taste
1 (16 ounce) jar spaghetti sauce
5 ½ ounces manicotti pasta

Steps:

  • Cook manicotti in boiling water until done. Drain, and rinse with cold water.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine ricotta, mozzarella, and 1/2 cup Parmesan, eggs, parsley, and salt and pepper. Mix well.
  • Pour 1/2 cup sauce into an 11x17 inch baking dish. Fill each manicotti shell with 3 tablespoons cheese mixture, and arrange over sauce . Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese.
  • Bake 45 minutes, or until bubbly.

I have used this basic principle and adapted it to make stuffed shells and lasagna. If making lasagna, I buy a second, smaller jar of spaghetti sauce. I always feel like I need a bit more. Merry Manicotti!

1 pint ricotta cheese
2 eggs
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 ½ tablespoons white sugar
⅛ teaspoon salt
¼ teaspoon ground black pepper
12 manicotti shells
1 (32 ounce) jar spaghetti sauce

Steps:

  • In a medium bowl, mix together ricotta cheese and eggs until blended. Stir in spinach, mozzarella cheese, 1/4 cup of the Parmesan cheese, sugar, salt and pepper. Stuff mixture into uncooked pasta shells.
  • Spread 1/2 cup spaghetti sauce in the bottom of a medium baking dish. Arrange stuffed pasta shells in a single layer over the sauce. Pour the remainder of the sauce over the shells, cover dish, and chill in the refrigerator for 8 hours, or overnight.
  • Preheat oven to 400 degrees F (200 degrees C). Bake covered for 40 minutes. Sprinkle with remaining Parmesan cheese, and bake for another 15 minutes.

8 manicotti
2 cups cooked flaked salmon
1 cup grated cheddar cheese
1 cup grated mozzarella cheese
1 teaspoon lemon juice
6 tablespoons sour cream
1/2 onion, finely chopped
10 ounces tomato sauce (can use spaghetti sauce if desired)

Steps:

  • Heat oven to 350 degrees.
  • Cook manicotti shells according to package directions.
  • Mix together remaining ingredients except tomato sauce.
  • Stuff shells with mixture.
  • Pour about 3/4 of the tomato sauce over the bottom of a large baking pan and place shells on top.
  • Spread the remaining sauce over the top of the shells to keep moist.
  • Bake about 20 minutes or until sauce is bubbly and cheese is melted.
  • You can sprinkle more cheese on the top while baking.

Steps:

  • Preheat oven to 350.
  • Spray 13x9 inch baking dish with nonstick cooking spray.
  • Cook pasta according to package directions.
  • Drain; rinse with cool water.
  • Let pasta dry on paper towels.
  • For filling, in medium bowl, stir together 3 C mozarella with the ricotta and fresh basil.
  • Using a teaspoon, carefully stuff pasta shells with prepared cheese mixture.
  • Spoon 2 C spaghetti sauce into prepared baking dish.
  • Arrange stuffed pasta over sauce.
  • Pour remaining sauce over top of pasta.

2011-01-30 Stuff with salmon filling. Spread one-fourth of sauce in 9 by 13-inch baking dish. Arrange filled manicotti side by side in sauce, then cover with remaining sauce. Top each filled manicotti with a slice of teleme. If made ahead, cover and refrigerate until next day. Bake, covered, in a 350° oven until hot and bubbly (about 30 minutes).
